EASY PASTA SALAD
To bring this tangy, vegetable-packed pasta salad together in a snap, we used jarred roasted red peppers and store-bought Italian dressing. The dish takes mere minutes to make, but the longer it sits in the refrigerator, the better it tastes!

- Bring a large pot of salted water to a boil. Cook the pasta according to package directions for al dente.
- Add the cucumbers, broccoli, tomatoes, red peppers, Parmesan, pasta, 1/2 teaspoon salt and a few grinds of black pepper to a large bowl. Pour the Italian dressing over the top and toss until well combined. Cover and refrigerate until the pasta is cold, about 2 hours and up to overnight.

Steps:
- In tightly covered container, shake all vinaigrette ingredients.
- Cook and drain tortellini as directed on package. Rinse with cold water; drain.
- In large glass or plastic bowl, mix carrot, broccoli, onions and vinaigrette. Add tortellini; toss until evenly coated. Cover and refrigerate at least 1 hour to blend flavors but no longer than 24 hours.

- Preheat the oven to 200C and line a tray with parchment paper. Distribute your broccoli florets on the tray and drizzle with a little olive oil. Once at temperature roast for 25-30 minutes. Keep a watch for any signs of burning towards the end of cook time!
- Make the tahini dressing by combining tahini, warm water, apple cider vinegar (if using), sage (or herb of choice) and garlic powder in a bowl. Stir well until it forms a creamy sauce. Adjust with more water if you prefer a thinner consistency, or more tahini if you like a thick sauce.
- Drain the pasta and return to the pan. Pour in the tahini sauce, and add the broccoli. Stir well until combined. Transfer to your bowl, and sprinkle with salt and pepper, if using, and pumpkin seeds. Enjoy!

- In a large pot of salted boiling water, prepare the pasta according to the instructions on the package, cooking until al dente. Drain and rinse with cold water.
- Prepare a large pot of salted boiling water and a large bowl of ice water. Place the broccoli in the boiling water and blanch for 2 minutes, until tender but still bright green. Remove and immediately immerse in the ice water to stop the cooking process. Keep in the ice water long enough to cool completely, about 15 seconds. Drain and and place on paper towels to dry.
- In a food processor or blender add the tahini, olive oil, water, maple syrup, garlic, salt and pepper. Process until smooth and creamy. Alternatively you can whisk the ingredients together in a small bowl.
- In a large bowl, combine the pasta, broccoli, zucchini, tomatoes, spring onions and basil. Pour the dressing on top of the pasta and veggies and toss. Season to taste with more salt and pepper as desired. Chill for 15 minutes in the refrigerator before serving. The veggies will soften as it chills.
