BLACK BEAN TURKEY CHILI

This busy-day chili is packed with flavor. We make it ahead and freeze some to eat later. -Marisela Segovia, Miami, Florida

1 pound lean ground turkey
1 large green pepper, chopped
1 medium onion, chopped
2 tablespoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 to 1/4 teaspoon cayenne pepper
1 can (15 ounces) no-salt-added tomato sauce
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups frozen corn (about 8 ounces), thawed
1 large tomato, chopped
1/2 cup water
Shredded cheddar cheese, optional

Steps:

  • In a 6-qt. stockpot, cook and crumble turkey with green pepper and onion over medium-high heat until no longer pink, 5-7 minutes. Stir in seasonings; cook 1 minute., Stir in tomato sauce, beans, corn, tomato and water; bring to a boil. Reduce heat; simmer, uncovered, to allow flavors to blend, about 10 minutes, stirring occasionally. If desired, serve with cheese. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

2 teaspoons vegetable oil
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
⅛ teaspoon cayenne
2 cups shredded cooked turkey
1 (14.5 ounce) can COLLEGE INN® Light & Fat Free Beef Broth
1 (15 ounce) can low-sodium black beans, undrained
⅓ cup DEL MONTE® Ketchup
⅓ cup raisins
⅓ cup chopped dried apricots

Steps:

  • Cook onion and garlic in oil in hot skillet until onion is tender.
  • Stir in chili powder, oregano, cumin and cayenne; cook 1 minute.
  • Add turkey; stir in broth, beans, ketchup, raisins and apricots.
  • Bring to boil; reduce heat and simmer, uncovered, 20 minutes.
  • Serve garnished with sour cream, chopped avocado and cilantro, if desired.

A chef made this at a cooking class in the upstairs room at the supermarket in town. When I looked over the recipe, I thought "I'm not going to like this". When I watched the prep & the end result, I thought "I'm not going to like this". She served it over a combination of white & brown rice with a side salad. Was I ever wrong. I liked it very much & I will be making it for my DH very soon!

Number Of Ingredients 12

1 lb ground turkey
1 onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 1/2 tablespoons chili powder
1/2 teaspoon salt
1 (4 ounce) can diced green chilies
2 (28 ounce) cans tomatoes, crushed
2 (16 ounce) cans black beans, drained & rinsed
1 tablespoon lime juice
1/2 cup green onion, sliced
cheddar cheese, grated

Steps:

  • Heat oil in a dutch oven over medium high heat; add turkey, onion& garlic and cook, stirring to break up the lumps, for about 5- 7 minutes or until turkey is no longer pink.
  • Add seasonings, stir& cook for another 2 minutes.
  • Drain off any excess fat.
  • Add chilies, tomatoes & beans and combine thoroughly.
  • Heat to boiling, stirring often.
  • Reduce heat to low & simmer, stirring occasionally, for 30 minutes.
  • Stir in lime juice & remove from heat.
  • Serve topped with green onions & cheddar cheese.
