PORTABELLA MUSHROOM CAPS WITH BROCCOLI AND CHEESE

Steps:
- Heat oven to 375°F. Place foil on cookie sheet; set aside.
- Cook tray of broccoli as directed on package. Remove stems from mushroom caps. On cookie sheet, place mushroom caps. In small bowl, mix roasted red peppers, bread crumbs, onion and broccoli. Spoon over mushrooms, mounding slightly. Top with Parmesan cheese.
- Bake 20 to 25 minutes or until mushrooms are tender.

BROCCOLI RABE WITH PORTOBELLO MUSHROOM
I have had complaints (Okay...my wife) about the way I used to cook broccoli rabe in oil because I use a lot of garlic and it was too heavy and oily. Check out this version - Lightly steamed broccoli rabe combined with portobello heads - niiiiiice. This recipe yields wonderful broccoli rabe in oil, combined with delicious portobellos, but since the broccoli is cooked separately it is not so heavy with oil. Really nice. Still use plenty of garlic though!!!!

Steps:
- Heat the olive oil in a large skillet over medium heat. Stir in the garlic and onion, and cook until the onion has softened, and the garlic begins to brown, about 10 minutes. Stir in the thyme and portobello mushrooms, then turn the heat to low. Season to taste with salt and pepper, and cook until the mushrooms have reduced but are not browning, 30 to 35 minutes.
- Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli rabe, recover, and steam until tender, about 6 minutes. Once the broccoli rabe has cooked, toss it with the mushroom mixture, and sprinkle with Parmesan cheese to serve.

BROCCOLI RABE AND SHIITAKES
Steps:
- Cook 2 bunches chopped broccoli rabe in boiling salted water until tender, 5 minutes; drain. Heat 2 tablespoons olive oil with 2 sliced garlic cloves and a pinch of red pepper flakes in a skillet over medium-high heat. Add 1/2 pound sliced shiitake mushroom caps and cook until golden, 2 minutes. Add 2 more tablespoons oil and the broccoli rabe; cook, stirring, 5 minutes. Season with salt.
SAUTéED MUSHROOMS AND BROCCOLI RABE
Steps:
- Gather the ingredients.
- Heat a large skillet over medium-high heat and add the oil.
- Add the mushrooms and garlic, season with salt and pepper, and sauté for about 10 minutes until the liquid has evaporated and the mushrooms have nicely browned.
- Add the broccoli rabe and red pepper flakes, and sauté for another 8 minutes or so, until the broccoli rabe is crisp and tender.
- Taste, and adjust the seasonings as needed.
- Serve hot and enjoy.

BROCCOLI RABE WITH GARLIC

- Cut off and discard the tough ends of the broccoli rabe and cut the rest of into 2-inch pieces. Place the broccoli in a colander and rinse. Drain well. Heat the olive oil in a large pot. Add the garlic and cook over low heat, stirring occasionally, for 4 to 6 minutes, until golden brown. Remove the garlic with a slotted spoon, and set aside. Add the broccoli to the hot oil. Add the red pepper flakes, salt, and pepper and cook, covered, over medium to low heat for 5 to 10 minutes, turning occasionally with tongs, until the stalks are tender but still al dente. Add the reserved garlic, check the seasonings, and serve hot.
SAUTéED BROCCOLI AND MUSHROOMS
This recipe just caught my eye while I was reading Cooking Light, Sept/07, issue. Have taken the liberty of adding some toasted almonds and crushed red pepper flakes to an otherwise wonderful recipe. It was awesome! UPDATE: Made this again & had no almonds but did have cashews, so I used them and they were even better! 09/15/07

- Heat oil in a large Dutch oven over medium-high heat.
- Add mushrooms and shallots to pan; sauté 10 minutes or until mushrooms are lightly browned.
- Stir in sherry; cook 2 minutes or until liquid evaporates, stirring frequently.
- Add broccoli and salt to pan; stir well.
- Stir in broth & red pepper flakes; bring to a boil.
- Cover and cook 5 minutes or until broccoli is crisp-tender.
- Stir in black pepper, if using, and toasted slivered almonds or toasted cashews.

BROCCOLI STUFFED BABY PORTABELLA MUSHROOMS
The broccoli in the stuffing is a nice change from the usual crab or sausage you find in many recipes. Do make the effort to add roasted bell pepper to the tops as it makes the finished mushrooms look really special. I found this recipe a few years ago in a magazine, but only tried it recently. Now it's my favorite mushroom recipe.

- Heat oven to 350 degrees F.
- Remove mushroom stems and chop 1/2 cup mushroom stems, discard extra stems.
- Melt butter in a 10" skillet over medium heat.
- Cook onion and broccoli 2 minutes, stirring occasionally.
- Stir in mushroom stems.
- Cook 2 minutes, stirring occasionally.
- Cool slightly.
- Stir in bread crumbs and cheese.
- Spoon vegetable mixture into mushroom caps.
- Place on ungreased baking pan.
- Garnish with bell pepper pieces.
- Bake 15 minutes.

- Bring a large pot of lightly salted water to a boil over high heat. Add the pasta and cook until al dente, about 8 minutes.
- Meanwhile, make the sauce. Combine the oil, garlic, and red pepper flakes, in a large skillet. Cook over low heat, stirring often, just until the garlic begins to brown, about 3 minutes. Add the mushrooms and increase the heat to medium. Cook until the mushrooms exude their juices, about 12 – 15 minutes more. Stir in the broccoli rabe and dry oregano. Add water and soy sauce; cover partially with the lid. Cook, stirring occasionally, until the broccoli rabe is barely tender, about 5 minutes.
