Kosher salt and freshly ground black pepper
1/2 cup extra-virgin olive oil, plus more as needed
1/4 cup red wine vinegar
2 tablespoons capers, drained
2 tablespoons chopped jarred pepperoncini
12 ounces high-quality canned or jarred tuna in oil, such as Ortiz
1 head red leaf lettuce, leaves separated
1/2 cup thinly sliced red onion
1 cup cherry tomatoes, halved
1 cucumber, peeled if skin is thick, cut into batonnet (1/4-inch sticks)
2 hard-boiled eggs, peeled and halved
1 cup sliced roasted red peppers, drained
1/4 cup pitted Nicoise or Kalamata olives
1/4 cup fresh basil, torn
1/4 cup fresh dill leaves
1/4 cup fresh parsley leaves

Steps:

  • Blanch the wax beans: Plunge the beans into salted boiling water and let cook, 2 minutes. Remove and plunge into ice water to stop the cooking. Dry off completely.
  • Whisk together the olive oil, vinegar, capers and pepperoncini in a small bowl. Set aside.
  • Drain the tuna. Leave the tuna in big chunks; do not crumble. Place the lettuce on a platter. Arrange the tuna, onions, wax beans, cherry tomatoes, cucumbers, eggs, roasted peppers and olives on top. Drizzle liberally with the dressing. Garnish with the herbs and season with salt and pepper. Serve.

1 pound red-skinned potatoes, sliced 1/3 inch thick
Kosher salt
2 tablespoons dry white wine
10 ounces haricots verts or thin green beans, trimmed
4 large eggs
1/4 cup white wine vinegar
1/2 shallot, minced (about 2 tablespoons)
2 tablespoons dijon mustard
1 tablespoon chopped fresh thyme
Freshly ground pepper
3/4 cup extra-virgin olive oil
8 cherry tomatoes or small cocktail tomatoes, halved or quartered
1 head Boston lettuce, leaves separated
6 radishes, trimmed and quartered
2 5 1/2-ounce cans Italian or Spanish tuna packed in olive oil, drained
1/2 cup nicoise olives

Steps:

  • Put the potatoes in a medium saucepan; cover with cold water and season with salt. Bring to a simmer over medium-high heat and cook until fork-tender, about 5 minutes. Drain and transfer to a medium bowl; drizzle with the wine and let cool. Reserve the saucepan.
  • Meanwhile, bring a separate saucepan of salted water to a boil. Fill a bowl with salted ice water. Add the haricots verts to the boiling water; cook until crisp-tender and bright green, 2 to 4 minutes. Drain and immediately plunge into the ice water to cool; drain and pat dry.
  • Place the eggs in the reserved saucepan and cover with cold water by about 1 inch. Bring to a simmer over medium-high heat, then cover, remove from the heat and let stand, 10 to 12 minutes. Drain, then run under cold water to cool. Peel under cold running water.
  • Make the dressing: Whisk the vinegar, shallot, mustard, thyme, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in the olive oil in a slow, steady stream until emulsified.
  • Toss the tomatoes ian a small bowl with salt and pepper to taste. Add about 1/4 cup dressing to the potatoes and toss. Quarter the hard-cooked eggs.
  • Divide the lettuce among 4 plates. Arrange the potatoes, haricots verts, radishes, hard-cooked eggs and tuna on top. Pour any juices from the tomatoes into the dressing, then add the tomatoes to the plates. Drizzle with the dressing and top with the olives.

For the Salad:
1/2 pound white potatoes (scrubbed)
1/4 pound fresh green beans (trimmed)
4 cups salad greens (either baby greens or larger greens torn into bite-sized pieces)
1 large (12-oz.) can tuna (drained)
4 hard boiled eggs (peeled and quartered)
2/3 cup brine-cured pitted black olives (e.g. Kalamata)
10 to 12 cherry tomatoes, cut in half
For the Dressing:
1/2 cup extra virgin olive oil
1/4 cup aged red wine vinegar
1 tablespoon Dijon mustard
2 cloves fresh garlic (peeled)
3-4 anchovy fillets
Kosher salt to taste
Freshly ground pepper to taste

Steps:

  • Gather the ingredients.
  • Bring a pot of salted water to boil. Boil the potatoes for about 4 minutes.
  • Remove with a slotted spoon, drain, then slice them in half. (Leave the water in the pot, though; you'll use it for blanching the green beans in a few moments.)
  • Heat a skillet over medium-high heat, with a bit of olive oil until it's quite hot, then place the sliced potatoes in the pan, cut-side down.
  • Sear for a minute or two until the potatoes are lightly browned, then remove them from the pan and transfer to a bowl. Toss with kosher salt and set aside.
  • Bring the water back to a boil, and add the green beans. Blanch for 2 minutes.
  • Remove with tongs to a bowl of ice water to shock them and keep them from cooking further. Drain and dry them with paper towels and set aside.
  • Combine the oil, vinegar, mustard, garlic, and anchovies in a blender or food processor. Process until smooth. Season to taste with kosher salt and freshly ground black pepper. (The anchovies are salty, so you might not need much additional salt.)
  • Place the salad greens in a bowl. Drizzle 2 tablespoons of the dressing and toss to coat. Arrange the greens on 4 serving plates or 1 large platter. Distribute the potato halves equally, with the browned sides facing up.
  • Toss the green beans, olives, and tomatoes with enough additional dressing to lightly coat them, and arrange them on the salad.
  • Divide the tuna and place it in the center of plates. Arrange the hard-boiled egg quarters, then garnish with the fresh parsley and serve. Note: Instead of the vinaigrette, you could serve a Niçoise salad with garlic aioli .

For a summer lunch or dinner, one of my favorite salads. There is always a debate going on about this salad, what should be in there and what not. I don't use potatoes in mine, but if you like to add them, do so. I have added the sardines because I like them in this salad, but you can leave them out. The dressing can be drizzled over the salad instead of mixing it in, or you can use your own favorite dressing. Serve with some nice bread, and a glass of wine (of course!) Cook time of the beans is not included.

8 ounces green beans, cooked but still crunchy
2 -3 hardboiled egg, quartered
1 small red onion, cut in rings
2 -3 tomatoes, skinned and in large chunks

1 crushed garlic clove
1/3 cup olive, halved or left whole
salt & freshly ground black pepper
2 -3 tablespoons olive oil

Steps:

  • Mix the oil and vinegar for the dressing, add salt, pepper and the herbs.
  • Toss together carefully, the dressing, beans, eggs (keep one for the garnish), onion, tomatoes, tuna, garlic and half of the olives; add salt and pepper to taste.
  • Pile in the center of the serving dish on top of the lettuce leaves, make it look as attractive as possible, finish the salad with the garnish ingredients.

12 small new potatoes, cooked until tender and halved
1 cup green beans, ends trimmed and cooked until tender

1 6-ounce jar marinated artichoke hearts, drained
2 firm ripe tomatoes, quartered lengthwise
2 hard-cooked eggs, peeled and halved lengthwise
6 anchovy fillets
12 black olives, pitted and sliced
Handful of capers
3 tablespoons tarragon vinegar
2 teaspoons Dijon mustard
1 garlic clove, peeled and crushed
3/4 cup extra-virgin olive oil
Coarse sea salt and freshly cracked black pepper
1 tablespoon mixed chopped herbs, like chervil and chives

Steps:

  • Quarter the lettuce through the root end. Rinse and pat dry with paper towels. Place each quarter on a large plate or in a shallow bowl. Drain the tuna and place in a bowl; flake into bite-size pieces with a fork and scatter over the lettuce. Next, scatter the potatoes, beans, pepper, artichoke hearts and tomatoes. 4 ounces haricots verts, trimmed
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
Freshly ground black pepper
1/2 cup extra-virgin olive oil
4 new red potatoes (about 12 ounces), cooked
10 cups torn Boston or other tender leaf lettuce, washed and dried
1 1/2 cups cored, seeded, and diced tomato or halved cherry tomatoes
Two 6-ounce cans tuna in olive oil, drained
8 anchovy fillets
1/2 cup Nicoise olives

Steps:

  • Bring two medium saucepans of salted water to a boil.
  • Gently lower the eggs into the boiling water of one saucepan and simmer gently, uncovered, for 10 minutes. Remove the eggs to a bowl of ice water. Once cool, peel and quarter the eggs.
  • Add the haricots verts to the second saucepan and blanch until just tender, about 3 minutes. Cool under running water, drain, and pat dry.
  • In a medium bowl, whisk together the vinegar and mustard. Season with salt and pepper. Whisk in the oil in a slow, steady stream to make a smooth, emulsified vinaigrette.
  • Slice the warm potatoes and then toss in a medium bowl with a few tablespoons of the dressing. Season with salt and pepper.
  • Line a serving platter with the lettuce. Mound the potatoes on the lettuce. Toss the haricots verts with a few tablespoons of dressing, season with salt and pepper, and mound next to the potatoes. Repeat with the tomatoes and tuna, dressing separately and placing on the lettuce. Add the egg quarters, but don't toss with the dressing. Arrange the anchovies between the mounds of ingredients and scatter the olives. Drizzle a little more of the dressing over everything and serve family style, with any extra dressing on the side.

As the broccoli sits with salt and vinegar, it softens and becomes slaw. 1/2 cup roasted, salted almonds, coarsely chopped

1/4 cup pitted, torn olives, such as kalamata or Castelvetrano

Steps:

  • Rinse the sliced shallot under cold water and transfer to a large bowl.
  • Cut the stalks away from the broccoli heads. Using a knife or vegetable peeler, remove the fibrous outer layer of the stalks so its light green insides emerge; compost or discard the outer layer. Thinly slice the stalks crosswise, then thinly slice the heads into bite-size pieces. (A mix of shapes and sizes adds texture to the salad, so chop up the broccoli a few ways; there's no one right way to go about it.) Transfer to the large bowl as you go, then transfer any loose bits from the cutting board to the bowl.

Steps:

  • Make the salad: Prepare an ice bath by filling a large bowl with ice and cold water. Set aside.
  • Fill a small pot with water and bring to a boil over high heat. Reduce the heat to low and carefully submerge the eggs in the water. Cook for 7 minutes, then transfer to the ice bath. Let the eggs cool for 5 minutes, then peel. Slice the eggs in half lengthwise.
  • Add the potatoes to a medium pot and cover with cold water. Add a large pinch of salt. Bring the water to a boil and cook until the potatoes are fork-tender, about 15 minutes. Drain the potatoes in a colander. Cut the potatoes in half.

  • Make the vinaigrette: In a small bowl or glass measuring cup, whisk together the garlic, mustard, salt, pepper, and vinegar. Add the olive oil and whisk until smooth.
  • Lay the Boston lettuce leaves on a serving platter. Arrange the potatoes, cucumber, eggs, olives, tuna, green beans, and radishes on top.
  • Drizzle the vinaigrette over the salad and serve immediately.

Make salade niçoise your go-to salad for summer. With crunchy lettuce, ripe tomatoes, potatoes, tuna and soft-boiled eggs, it's full of flavour and texture

8 new potatoes
50g green beans (or a small handful), trimmed and halved
3 eggs
2 Little Gem lettuces , quartered
50g pitted black olives
2 medium tomatoes (plum are good), quartered
145g can tuna in olive oil, drained, oil reserved (see below)
½ garlic clove
1 anchovy fillet (optional)
1 tbsp Dijion mustard
2 tbsp red wine vinegar
4 tbsp reserved olive oil from the tuna can (topped up, if needed)

Steps:

  • To make the dressing, mash the garlic and anchovy, if using, with a small pinch of salt on a board using the blade of a large knife, or in a pestle and mortar. Combine the paste with the mustard and vinegar, then slowly stir in the tuna oil. Set aside.
  • Tip the new potatoes into a large pan of cold salted water, ensuring they're well covered. Bring to the boil, then reduce the heat to a simmer. Add the beans and cook for 5 mins, then remove with a slotted spoon and immediately plunge into a bowl of iced water to cool. Cook the potatoes for another 5 mins until tender, then drain and leave to cool. When cool enough to handle, halve or quarter them, and toss in a large bowl with 1 tbsp of the dressing. Leave to cool completely.
  • Meanwhile, cook the eggs in a second pan of simmering water for 7½ mins, then transfer to a bowl of iced water to cool. Drain the beans and eggs, then peel and halve the eggs.
  • Tip the lettuce quarters, cooked beans and olives into the bowl with the potatoes. Add most of the remaining dressing and gently toss. Divide the salad between two bowls, and top with the tomatoes and eggs. Flake over the tuna, then drizzle with the rest of the dressing and season.

12 ounces tiny new potatoes
2 eggs
8 ounces green beans
8 ounces fresh tuna
1 to 2 slices red onion, 1/2 cup chopped
3 to 4 large basil leaves, 2 tablespoons chopped
6 oil-cured black olives
2 ripe medium tomatoes
2 tablespoons lemon juice
1 tablespoon olive oil
1 1/2 teaspoons Dijon mustard
1 teaspoon anchovy paste
2 teaspoons capers
Freshly ground black pepper to taste
1/8 teaspoon salt
4 soft lettuce leaves, like Boston or bibb

Steps:

  • Scrub but do not peel potatoes; cook with eggs in pot large enough to hold potatoes, eggs and green beans.
  • Turn on broiler if using.
  • Trim green beans. Add them after the potatoes and eggs have cooked about 12 minutes.
  • Prepare stovetop grill, if using. Grill or broil tuna, following Canadian rule: measure fish at thickest part, and cook 8 to 10 minutes per inch, turning once.
  • Finely chop onion.
  • Wash, dry and cut basil leaves into thin strips; pit olives.
  • Wash, trim and cut tomato into wedges.
  • In small bowl whisk lemon juice, olive oil, mustard and anchovy paste. Stir in capers, onion, basil and olives.
  • When green beans are cooked, drain and cut in half crosswise. When potatoes are cooked, drain and quarter or halve. When eggs are cooked, drain and run under cold water; shell and discard one yolk. Cut remaining whole egg and white in quarters.
  • When tuna is ready, cut into bite-size pieces.
  • Arrange tuna, potatoes, green beans, eggs and tomatoes on lettuce leaves on a platter; spoon with dressing. Season with salt and pepper.
