BROCCOLI CASSEROLE WITH CRISPY ONIONS
This easy broccoli au gratin casserole can be made with fresh or frozen broccoli folded into a simple cultured butter and cheese roux. Crispy fried onions add crunch to this creamy, sublime side dish that can be prepped ahead of any meal.

Steps:
- Preheat the oven to 375°F. Steam the broccoli until tender in the microwave with 1/4 cup water for 5-7 minutes, or in a steamer basket on the stove for 12-15 minutes. Drain.
- While the broccoli is cooking, melt 1 tablespoon of the cultured butter in a non-stick skillet over medium heat. Add the onion and garlic and cook until the onion softens and the garlic is fragrant, for 3-4 minutes. Add the remaining cultured butter to the pan, melt, and sprinkle with the flour. Cook stirring for 2 minutes. Slowly add the milk while stirring, whisking away the floury lumps. Cook until the sauce thickens, stirring occasionally, about 7-8 minutes. Stir in the Parmesan cheese and kosher salt to taste and keep warm.
- Fold in the cooked hot broccoli to the bubbly cheese sauce, tossing to coat. Transfer to a buttered 2-quart baking dish and top with the crispy fried onions. Bake for 15 minutes or until the sauce is bubbly and the crispy onions are golden. Serve warm.

- Preheat oven to 350°F. Mix soup, milk and black pepper in large bowl. Add broccoli, 1 cup of the cheese and 1 cup of the Crispy Fried Onions. Toss gently to coat.
- Spoon mixture into lightly greased 13x9-inch baking dish. Cover with foil.
- Bake 30 minutes. Remove foil and stir well. Sprinkle with remaining cheese and Crispy Fried Onions. Bake, uncovered, 5 to 10 minutes longer or until cheese is bubbly and Onions are golden brown.

Steps:
- * Stir the soup, milk,black pepper, broccoli and 2/3 cup onions in a 1 1/2-quart casserole. (Add shredded cheddar cheese here if you like cheese).
- * Bake at 350°F for 25 minutes or until the broccoli mixture is hot and bubbling. Stir the broccoli mixture. Sprinkle with the remaining onions.
- * Bake for 5 minutes or until the onions are golden brown.
- * For cheese lovers, stir in 1/2 cup shredded Cheddar cheese with soup. Sprinkle with an additional 1/4 cup Cheddar cheese when adding the remaining onions.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Place a steamer basket in a pot over boiling water, and steam the broccoli about 5 minutes, until tender. Place the onions in a separate pot with enough water to cover. Bring to a boil, and cook until tender. Arrange the broccoli and onions in the prepared dish.
- Melt the butter in a saucepan over medium heat, and stir in the flour until smooth. Blend in the milk until thickened. Blend in the cream cheese until melted. Pour the mixture over the broccoli and onions. Sprinkle with Cheddar cheese, and top with bread crumbs.
- Bake covered in the preheated oven 30 minutes. Remove cover, and continue baking 30 minutes, until lightly browned.

- Preheat oven to 350 degrees F (175 degrees C).
- Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 4 to 6 minutes; drain.
- Melt butter in a large saucepan over medium heat. Stir in salt, flour, and milk. Cook, stirring constantly, until thick and bubbly. Stir in cream cheese until melted. Remove from heat, and stir in broccoli.
- Sprinkle 1/2 cup of crushed crackers over the bottom of a 1 1/2 quart casserole dish. Slowly pour the broccoli mixture into the dish, and top with remaining crushed crackers.
- Bake in preheated oven for 30 minutes.

CURRIED BROCCOLI CASSEROLE
Easy. One Dish. Fast. An adjusted version of the recipe found in an old edition of Better Homes and Gardens New Cook Book. My family recently turned vegetarian and this has become one of our staples. Unless you use an extremely potent curry powder (or increase amount), the recipe won't come out spicy.

Steps:
- Place fresh Broccoli and Carrots, covered, in a steamer and cook for 8-10 minutes, or until tender-crisp. If using frozen broccoli and carrots, cook according to package instructions.
- Drain Vegetables well.
- In a 2 quart casserole dish, combine Onion, Red Pepper, Garlic, Soup, Cheese, Milk, and Curry Powder. Mix in Broccoli and Carrots.
- Season with Salt and Pepper to taste.
- Begin crushing Saltines, one at a time, over the casserole. Continue crushing and spreading until top is covered well.
- Bake, uncovered, at 350 degrees for 30 to 35 minutes.
- Remove from oven and place under Broiler set to Low for 2 minutes, or until Saltines become just a little brown (as a note, they burn fast, so keep an eye on them!).
