- Preheat oven to 375 degrees. Cut broccoli stems into 1/2-inch pieces, and cut florets into 1-inch pieces; set aside. Melt butter in a 12-inch saute pan over medium heat. Add onions; cook until translucent, about 5 minutes. Add broccoli stems, and cook until they begin to soften, about 5 minutes. Add florets and water, and cook until broccoli is tender and liquid has evaporated, about 5 minutes more. Season with salt and pepper. Transfer to a bowl to cool completely.

- 1. Gather ingredients. Chop your vegetables, set aside Preheat oven to 350 degree.
- 2. In an 8 inch ovenproof skillet, I use my well seasoned cast iron skillet. Cook bacon until crisp. Drain, leaving drippings in the skillet. Place bacon on paper towel.
- 3. In the same skillet; add hash browns, broccoli, green pepper, onion and rosemary; cover and cook over low heat until hash browns are golden brown; stirring a few times. About 15 minutes. Add more liquid if necessary to keep from sticking, I have used chicken stock, or oil . The potatoes will suck up the bacon fat. The fat makes it taste so good! When finished cooking set aside.
- 4. In a medium bowl, whisk the eggs, water or milk, salt and pepper.
- 5. Pour over hash browns. Top with bacon, paprika and parmesan cheese. Bake uncovered for 25 to 30 minutes or until eggs are completely set.
