- Mix salsa, Cheddar cheese, Parmesan cheese, black beans, and cilantro together in a bowl. Spoon salsa mixture on the center of 1 tortilla and spread evenly. Place remaining tortilla on top of filling. Arrange quesadilla on a baking sheet and brush top tortilla with butter.
- Bake in the preheated oven until top begins to brown and cheese is melted, 9 to 12 minutes. Slice quesadilla with a pizza cutter; garnish with guacamole and red bell pepper.

- Lay out 3 tortillas on a cutting board. Combine the cheddar and Monterey Jack in a small bowl. Spread a third of the cheese on each tortilla, leaving a 1-inch edge. Place the remaining 3 tortillas on top.
- Melt 1/2 tablespoon butter in a 12-inch omelet pan set over medium heat, and add one filled tortilla. Cook until golden brown, 2 to 3 minutes. Flip with a spatula, and add another 1/2 tablespoon butter. Cook until browned and cheese is melted, 1 to 2 minutes more. Transfer to a cutting board. Repeat with remaining tortillas.
- Cut cooked tortillas into eighths; serve immediately with salsa, if desired.

- These are made just like any other quesadilla or grilled cheese sandwich.
- Spray the bottom of a non-stick skillet with cooking spray and preheat.
- When the pan is fairly hot place 1 Flour Tortilla in the pan.
- Fairly quickly (because you want to get everything on before the bottom starts to brown) spread on a few tablespoons of sauce.
- Then add a layer of Pepperoni (and anything else you like).
- Then top with shredded cheese.
- Top it off with the 2nd Flour Tortilla.
- Just like any other quesadilla or grilled cheese let it brown then flip it over. If all of the cooking spray was absorbed you can spray on a little more, but you usually don't need to.
- After both sides are browned and the insides are hot and melted take the "pizzas" out to cool.
- Once cooled slice in 1/4 like a pizza and wrap snugly with plastic wrap or aluminum foil.
- Tips and Ideas.
- My son is not super picky so I made these in batches and freeze and then take them out the morning of school and pop into his lunchbox. It is usually thawed and yummy by lunch time. If you freeze them you need to let the cool completely first the wrap them separately in plastic wrap and then aluminum foil to prevent ice crystals from forming.

- Lay the tortillas flat on a cookie sheet. Sprinkle some of the cheese on 1 half of each tortilla. Try not to get it too close to the edge. Fold the tortillas in half over the cheese to make a half-moon. Warm a skillet over low heat and add 1 tablespoon of the butter. Add the tortilla to the skillet and cook until it is lightly brown, about 2 minutes. Using a spatula, gently lift the edge so you can check. When 1 side is brown, turn the tortilla over and cook the other side until brown and the cheese is all gooey. Use a spatula to transfer to individual plates or a large platter. Repeat with remaining butter and tortillas. Top them with the sour cream, salsa and guacamole.

- Brush 4 tortillas lightly on one side with the oil. Place 4 tortillas on the grill oiled side down. Top with cheese to taste and another tortilla on each. Turn quesadillas when bottoms are browned and cheese begins to melt. Brown on the other side. Serve hot.
EASY CHEESY CHICKEN QUESADILLAS

- Place 3 of the tortillas on a work surface. Top the tortillas with half of the cheeses, then the chicken, then the remaining cheeses. Top the filling with the remaining tortillas. Spread outsides of the quesadillas with the butter.
- Heat a flat pan, large skillet, or griddle over medium heat. Add the quesadillas, one at a time, and cook, pressing down with a spatula, until bottoms are browned, about 2 to 4 minutes. Turn quesadillas and cook second side 2 to 3 minutes or until the tortillas are browned and crisp and the cheeses melt.
- Remove the quesadilla with a spatula to the work surface and cut into quarters. Repeat with remaining quesadillas. Serve immediately with salsa for dipping.
