STIR FRIED FAVA BEANS WITH SZECHUAN PEPPERCORNS
If you like fava beans, then you will very much enjoy this Stir Fried Fava Beans with Szechuan Peppercorns dish. Use frozen or fresh fava beans for the dish!

Steps:
- Heat oil in wok over medium-high heat. Add garlic, Sichuan peppercorn, dried chili, and half of the chopped scallion. Cook for a minute, stirring vigorously to make sure nothing burns.
- Add fava beans and stir fry for about 2 minutes. Add salt, white pepper, sesame oil, shaoxing wine and 2 tablespoons water and stir fry until the beans are cooked through and soft.
- Stir in the remaining scallion, plate and serve.

STIR FRIED FAVA BEANS AND BAMBO SHOOTS

Steps:
- Bring a saucepan of water to a boil. Lightly salt the water. Add the fava beans and simmer for 8 to 10 minutes or until the skins of the beans split open. Drain the beans and refresh in cold water. Remove from cold water and remove skins. Discard skins. Drain bamboo shoots.
- In a wok heat oil and add beans and bamboo shoots. Stir fry for about 2 minutes. Add stock and salt and allow to heat through for about 2 minutes.
- In a bowl combine cornstarch and water and stir until cornstarch dissolves. Add cornstarch to mixture and continue to cook until thickened. Drizzle with sesame oil. Serve with white rice. Garnish with Chinese parsley
DEEP-FRIED BROAD BEANS (FAVA BEANS)
I happened upon these in a local Asian grocery store and fell in love. My first batch was seasoned with cheese (sort of nachoish!) and the next, with garlic. This basic recipe hails from http://www.uktvfood.co.uk/ and I haven't tried it yet, therefore cook time is an estimate.

- Heat the vegetable oil in a wok or deep saucepan.
- Add the broad beans to the hot oil and fry until lightly coloured.
- Remove the fried beans using a slotted spoon. Drain on kitchen paper.
- Season with salt and serve.

FRICASSéE OF BEEF AND FAVA BEANS

- Cook fresh fava beans in large pot of boiling salted water 2 minutes. Drain favas. Place in large bowl of ice water. Drain. Slip outer skin off each bean and discard skin; place beans in large bowl. (If using frozen beans, do not blanch.)
- Melt 1 tablespoon butter with 1 tablespoon oil in large nonstick skillet over high heat. Working in batches, add beef and sauté just until browned on both sides, about 2 minutes. Transfer beef to medium bowl.
- Melt remaining 1 tablespoon butter with 1 tablespoon oil in same skillet over medium heat. Add onions; sauté until tender and golden, about 15 minutes. Add fava beans; sauté 5 minutes. Remove from heat; cool 15 minutes.
- Meanwhile, whisk whipping cream, lemon juice, egg yolks, salt, and pepper in small bowl to blend. Stir cream mixture into fava bean mixture. Cook over medium-low heat just until sauce thickens slightly and mixture is heated through, about 6 minutes (do not boil). Add beef and stir until heated through, about 3 minutes. Transfer fricassee to rimmed platter. Sprinkle with mint.
STEAMED FAVA BEANS WITH THYME

- Remove the pods from the fava beans. If you like, peel their skins.
- Put beans in top of a steamer and sprinkle them with thyme. Cook them until they are tender (this depends on their size and whether they are peeled, but it shouldn't take longer than 15 minutes).
- Put the beans in a warm serving bowl, add the butter, salt and pepper and toss them. Serve immediately.

- Heat vegetable oil in a skillet over medium heat; add onion. Cook and stir for 2 minutes. Add chopped tomato and tomato paste; cook until tomatoes are mushy, about 4 minutes. Add 1 teaspoon water, if necessary.
