MASHED POTATO CASSEROLE
I love this recipe for the holidays because you can prepare it the day before and bake when needed. This recipe is from the Copper Kettle Chorus cookbook my Mother gave me 16 years ago. These mashed potatoes really rich and creamy delicious!

This is a dish my sister-in-law used to make, when she cooked years ago. It is not for those that are watching their weight. Very good and easy to make.

Steps:
- Pre-heat oven to 350 degrees.
- Cook and mash the potatoes.
- Add the cream cheese, 1/2& 1/2, butter, onion salt, seasoned salt, regular salt& pepper to taste.
- Beat together till fluffy.
- Place in 9x13 inch casserole.
- Brush top with butter and sprinkle with paprika.
- Bake in oven at 350 degrees for about 35 to 45 minutes or until heated through.

LOADED MASHED POTATO CASSEROLE
I leave out the nutmeg and use the real bacos for recipes from Oscar Mayer. Prep time does not include time to prepare your mashed potatoes. For the prepared mashed potatoes, all I do is mash up the potatoes and add a tablespoon of butter then continue on with the recipe.

MASHED POTATO CASSEROLE
This casserole may upset some mashed potato purists, but take heart: one bite and they'll be won over. The genius of this recipe, besides its utter deliciousness, is that it can be made the day before, or even two. Cook the potatoes, assemble the casserole, wrap tightly and store it in the refrigerator. When dinnertime comes, dust it with the cheese, butter and bread crumbs and bake the whole thing off. - Lightly grease a 9-inch-by-13-inch baking pan.
- In a large pot, bring the potatoes, 4 quarts water and 2 tablespoons salt to a boil. Boil potatoes until fork tender, about 20 minutes. Drain.
- Mash potatoes with 10 tablespoons butter, sour cream, 1 teaspoon salt, and pepper. Mash in the chives. Taste and adjust seasoning, if necessary. Spread potatoes into the prepared pan. Cover and refrigerate for up to three days.
- In a small bowl, combine the remaining 4 tablespoons butter, bread crumbs and cheese. Mix together until it forms coarse crumbs. Crumbs can be refrigerated for three days.
- Heat the oven to 400 degrees. Sprinkle crumbs over the top of the potato casserole and bake until golden and crisp, 30 to 40 minutes.

- For the mashed potatoes: Add the potatoes and 1 tablespoon salt to a large saucepan and cover with water. Bring to a boil and cook over medium-high heat until fork-tender, about 15 minutes. Drain the potatoes and set aside to dry.
- Whip together the cream cheese and butter in a large bowl with a hand mixer on medium speed until thoroughly blended, about 2 minutes. Add the still-warm potatoes alternating with the half-and-half. Whip until blended. Add in the pepper and garlic and season with salt to taste.
- Grease a 9-by-14-inch glass baking dish with butter and pour the potato mixture into it. Bake right away, or cover and refrigerate for up to 2 days.
- When ready to bake and serve, preheat the oven to 350 degrees F.
- For the topping: Pour the melted butter over the potato mixture and bake until bubbly and slightly golden, about 45 minutes. Garnish with the chives and parsley. The potatoes can be kept warm in a 200-degree oven or tented with foil until ready to serve, up to 2 hours.
MOM'S MASHED POTATOES A LA KING

- Add the potatoes, celery root and 1 tablespoon salt to a large saucepan and cover with water. Bring to a boil and cook over medium-high heat until fork tender, about 15 minutes. Drain the potatoes and celery root.
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking pan.
- Whip together the cream cheese and softened butter in a large bowl with a hand mixer on medium speed until thoroughly blended, about 2 minutes. Add the hot potatoes and celery root slowly, alternating with the half-and-half. Whip until blended. Sprinkle with salt and stir in the horseradish, garlic powder and white pepper.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
- While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).
- Drain potatoes and return to the pot. Mash while hot. Add sour cream, butter, Parmesan cheese, cream cheese, Cheddar cheese, green onions, salt, and pepper; beat until well blended. Transfer to a 3-quart casserole.

- Stir together the cream cheese, garlic salt, pepper and sour cream.
- Set aside.
- Peel and cut potatoes into chunks and boil till soft.
- Mash (or with electric mixer) the potaotes till they are in fine lumps.
- Add the cream cheese mixture and beat till fluffy and smooth.
- Spoon into well buttered 2-quart casserole.
- Dot with paprika.
- Bake covered in a 400 degree oven for 25 minutes (if made the day before and refrigerated, cook for 50 minutes).
- Uncover and bake 10 additional minutes to a golden brown.

- Set oven to 325°F.
- Grease a 2-quart casserole dish.
- In a bowl, stir together cream cheese, garlic, pepper, chopped green onions (if using), salt, egg, and sour cream until smooth; set aside.
- Boil potatoes; drain.
- Mash potatoes until smooth.
- Add sour cream mixture, mix until smooth.
- Spoon into baking dish.
- Dot with butter and sprinkle with paprika.
- (At this point, potatoes can be stored in the fridge and baked later).
- Bake, covered for 25 minutes, (45 minutes if stored in the fridge).
- Uncover, after 25 minutes, and continue baking for 10 minutes more.
- If desired 1 cup grated cheddar could be sprinkled on top of potatoes the last 10 minutes of baking.

- Grease a 9x13 inch casserole dish or 3 quart baking dish with butter. Preheat oven to 350 degrees.
- Place cubed potatoes in large stock pan. Cover with cold water and salt well. Bring the potatoes to a rapid boil, then reduce the heat to medium.
