EASY BAKED BEANS ON TOAST (BRITISH-INSPIRED)
Steps:
- Heat a large pot over medium heat. Once hot, add olive oil (or avocado oil or water), shallot, salt, and pepper and sauté until translucent and tender - about 3-5 minutes.
- Add garlic powder (or minced garlic) and stir. Then add all the remaining sauce ingredients to the pot: water, cider vinegar, tomato paste, yellow mustard, maple syrup, unsulphured molasses. Stir again to combine. Whisk if needed to break up any clumps.
- Add the drained and rinsed beans and stir to coat. Turn the heat to medium-high and let the mixture reduce for 8-10 minutes (you should be able to hear and see the sauce bubbling). If the sauce starts to spit, turn the heat down slightly. Avoid covering the pot or the sauce won't reduce quickly.
- Stir often to avoid sticking. After 10 minutes the baked beans should be done and there will be some sauce coating the beans. Turn off the heat. Taste test and adjust, adding more salt for overall flavor, maple syrup for sweetness, apple cider vinegar for tang, or molasses for depth of flavor. Place a lid on the pot to keep the beans warm.
- If serving with toast (we prefer hearty sourdough), put your bread in the toaster. Once golden brown, remove - usually within 3 minutes.
- Once toasted, option to butter your toast with vegan butter or drizzle with olive oil. Then top with the piping hot beans.
- Best when fresh and eaten with a knife and fork. The toast will turn a little wet where the sauce lands, and that's how it's typically eaten. Alternatively, serve on a baked potato. Optionally, garnish with arugula, roasted cherry tomatoes, or wilted spinach.
- Store leftover beans covered in the refrigerator for up to 3-4 days, or in the freezer for up to 1 month. Reheat in a saucepan over medium heat until hot (adding a bit of water to thin as needed if too thick).

HOW TO MAKE FULL ENGLISH BREAKFAST WITH BAKED BEANS
A traditional full English breakfast: a hearty way to begin the day with eggs, sausages, bacon, beans and tomatoes.

Steps:
- The baked bean recipe serves 4, while the fry-up serves 2. If making an English breakfast for 4 persons, double the ingredients used for the fry-up.
- Baked beans
- Soak the beans in plenty of water overnight.
- Cook the beans in fresh water for about 40 minutes or until tender. The cooking times depend on the size and age of the beans, so keep checking and don't let them turn to mush. Drain well. You can use two cans of beans instead.
- Chop the onion finely. Heat the oil in a saucepan and cook the onion until golden and softer, about 5 minutes. Add the smoked and sweet paprika and stir well for another minute.
- Simmer: Add the chopped tomatoes and their juices, cooked beans, soy sauce, sugar, vinegar, salsa or ketchup, bay leaves, some salt, and pepper. Simmer on low heat for about 20 minutes or until the sauce has thickened slightly.
- Adjust the taste with more salt and pepper and depending on taste with more sugar. If I make the beans with ketchup, I usually don't need to add any sugar anymore, in the case of salsa I might add a pinch more, depending on the brand of salsa I use.
- Fry-up
- Cook sausages: Heat a grill pan. Add the sausages and cook them on medium-low heat, turning often, until nicely browned and crispy on all sides. To make sure they are cooked through I usually cut one in the middle (the one I am eating myself afterward). Depending on the size of the sausages, cooking them might take between 10 and 15 minutes.
- Grill tomatoes: Halve the tomatoes, lightly sprinkle the cut side with salt and cook them on the cut side until done and slightly caramelized. This should take about 10 minutes. Turn them on the other side for a minute or so at the end of the cooking process.I only have one grill pan, the one I use for the sausages as well, so I usually cook the sausages and tomatoes together. If they don't fit together in the pan, cook the sausages in a regular pan and use the grill pan for the tomatoes.
- Fry the bacon in the same pan for a few minutes on each side, until the desired level of crispiness is achieved. Let drain on kitchen paper. If the pan is not large enough, fry the bacon after the sausages are ready, it will not take long.
- Fry eggs: When ready to serve, fry the eggs in a little oil or butter. You can fry them to your liking, the egg yolk can be runny or set.
- Toast the bread.
- Serve: Arrange the beans, sausages, bacon, tomatoes on a large heated plate and place the fried egg on top. Serve with toasted bread, tea, coffee, orange juice, jam or marmalade, ketchup, and brown sauce.
- Or you can serve the breakfast between two slices of toasted bread or toasties as suggested above.

BRITISH BAKED BEANS
These are really good homemade baked beans (UK style, similar to Heinz baked beans here, not like Boston Baked Beans). It's a recipe which I got from Waitrose www.waitrose.com/recipes I'm putting it up here for safe keeping, this is now a firm family favourite. Please note that preparation and cooking times do not include the preparation of the beans.

Steps:
- Soak the beans in cold water for 8 hours or overnight. Then cook according to pack instructions (I leave the lid off the pan, and add a tsp of baking soda to combat the gas producing side effects of beans. It works very well). Remember to boil well for 10 minutes before simmering, or you may get a tummy upset!
- Heat a large pan and add the bacon if using (if not using, make sure you use something else to lift the beans - more salt, a bit of chili, worcester sauce or whatever. These can also be added to the bacon version for still more flavour). Fry for 1 minute.
- Add the onion, celery (I use celery salt) and garlic, and continue to fry for 4-5 minutes until the bacon is cooked and the onion has started to soften.
- Stir in the chopped tomatoes, black treacle and tomato puree. Bring to a simmer, then stir in the cooked beans. Return to the boil and simmer for about 10 minutes (or put into crockpot on low to be ready and waiting later).
- Stir in the chopped parsley then spoon over toast, into jacket potato, or whatever.
- Freezes well.

Steps:
- Add dry beans to a large container and fill with cold water. Soak overnight. The following day, add beans and their soaking water to a large pot and bring up to a simmer. Cook until tender, between 1 and 2 hours. Drain the beans while reserving the liquid.
- Preheat your oven to 325 degrees F.
- Pour your beans into a large casserole dish and spread evenly, layer bacon and onion on top.
- In a small saucepan add the molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce, and brown sugar. Slowly bring the sauce up to a boil, simmer for a minute or two. Pull sauce off the heat and pour over the beans. Pour in reserved cooking water from the beans until beans are just covered. Tightly cover the casserole dish with aluminum foil.
- Bake in preheated oven for 3 to 4 hours. Remove the aluminum foil halfway through cooking time and add in a small amount of extra liquid if the beans start to get dry. Remove from the oven once beans are tender, cool, and serve.

- Rinse the beans, place in a large bowl, cover with 1 litre of cold water and leave to soak at room temperature overnight - 8-12 hours is ideal.
- In the morning, drain the beans, rinse again and place in a large, heavy-based saucepan. Cover with 1.5 litres of cold water and bring to a boil. Reduce the heat to a simmer, skim off any froth for the top of the water and cook, stirring occasionally for 60-90 minutes. The cooking time will depend on the age of your beans, so start checking to see how tender they are at around the 45-minute mark.
- To make the sauce, heat the oil and butter in a large frying pan. Cook the onions gently for 5 minutes until softened but not browned. Add the carrot and celery and continue to cook until softened. Add the garlic (if using) and cook, stirring for 1 minute.
- Pour in the tomatoes and vinegar, then add the sugar, tomato paste, Worcestershire sauce paprika and salt, stir to combine, then simmer until the sauce has reduced. Season to taste. If you want a smooth sauce, you can use an immersion or stick blender to puree it at this point.

- To a large saucepan, add 6 cups water and bring to a simmer. Add the beans, cover and simmer for 1 hour, stirring often so they don't stick to the bottom. Cooking time will depend on your beans so check them often for tenderness.

Add the onion, carrot and celery, cook until softened, about 5 minutes. Stir in the garlic and cook for 1 minute. Add the tomatoes (if using whole, crush with hands) ketchup, sugar, Worcestershire sauce and salt. Be mindful if your ketchup is salty, you may need to adjust the salt. Stir to combine. Add 1/4 cup (50 ml) water and stir, simmer for 15 minutes. Turn off the heat and stir in 1 cup (236 ml) water. Use a hand blender or a blender, working in batches to blend until smooth. - Put the bread in the toaster, and make the toast as desired. (If you like, you can butter the toast, but I find it unecessary as the beans are the primary flavor.)
- Stir the beans, and heat until almost boiling, but don't allow to boil. (According to directions on the tin, this will affect the flavor.)
- Place the toast on plates, and spoon ⅓ tin of the beans over the top of each slice. Serve immediately, preferably with a cup of hot tea.
