Provided by Mary Cadogan

Categories     Dinner, Main course

Time 1h30m

Number Of Ingredients 7

375g pack ready-rolled shortcrust pastry
500g onions , finely sliced
3 tbsp olive oil
few sprigs thyme , leaves only
3 eggs
300ml milk
100g ready grated emmental

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Slide a baking sheet in to heat. Roll the pastry out enough to line a deep 20cm flan tin or a shallow 23cm one. Chill for 10 mins.
  • Put a few balls of crumpled foil in the base of the pastry case and bake on the baking sheet for 10 mins. Remove the foil and bake for 5 mins more, until light golden.
  • Meanwhile, cook the onions in the oil until starting to soften, then add thyme, pepper, and salt if you want to. Cook slowly for about 15 mins until the onions are soft and tinged brown.
  • Beat the eggs, beat in the milk and half the cheese and some pepper. Spread the onions over the flan case and pour in the egg mix. BRIE, APPLE & ONION TART

Brie, apple & onion tart image

Apples and cheese make perfect partners in this puff pastry tart, ideal for using up the remnants of a cheeseboard or leftover cranberry sauce. Serve hot or cold for a Boxing Day buffet

Provided by Cassie Best

Categories     Buffet, Dinner, Lunch, Supper

Time 1h

Number Of Ingredients 9

320g pack ready-rolled all-butter puff pastry , defrosted at room temperature if frozen
1 tbsp olive or rapeseed oil , plus a drizzle
3 large onions , halved and sliced
2 tbsp white wine vinegar , plus a splash
1 tbsp Dijon mustard
small bunch of thyme , leaves picked, plus a few sprigs to serve
1 eating apple
100g cranberry sauce (or chutney)
175g brie , sliced (or other cheese)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Unroll the pastry sheet onto a large baking tray (leave it on the paper from the pack). If the edges are not straight, trim them with a sharp knife. Score a border, about 1cm in from the edge. Score a criss-cross pattern over the central piece of pastry (this will prevent it from rising too much) and around the border, if you like. Bake for 15 mins.
  • Meanwhile, heat the oil in a large pan. Add the onions and cook for 10-15 mins until softened and starting to caramelise. Stir in the vinegar, bubble for 1 min more, then add the Dijon mustard and thyme, season well and set aside. Slice the apple thinly through the core so a few slices have a nice star in the middle, and remove any seeds. Toss the slices in a splash of vinegar to prevent them from browning.
  • The pastry should be puffed and starting to colour. Push down the centre, then spread over the onions. Add blobs of cranberry sauce, then top with the apple slices and brie, overlapping them to cover the tart. Add a few more thyme sprigs, drizzle with a little oil, then put back in the oven for a further 25 mins until the cheese is bubbling and the apple slices are soft. Serve warm or cold.

BALSAMIC ONION TARTLETS

Balsamic Onion Tartlets image

I recently acquired a copy of Martha Stewart's Hor D'Oeuvres Handbook and became taken with her flair for small bites with beautiful presentation. The onion relish here was inspired by Dancer's Chicken with Balsamic Onions. You can prepare the onions a day or so ahead of time and finish the tarts just before serving. I tend to offer a lot of variety so I keep the batches of each hors d'oeuvre small, but this can be easily doubled. Don't let the preparation time scare you, its mostly simmering time that frees you to attend to other things. These tarts are just wonderful served along with a zesty red wine.

Time 55m

Yield 15 serving(s)

Number Of Ingredients 9

15 miniature phyllo cups (1 package found in the freezer section of the market)
1 large vidalia onion, thinly sliced and chopped
1 teaspoon olive oil
1 cup chicken broth
1 teaspoon dried thyme or 1 tablespoon fresh thyme
3 tablespoons balsamic vinegar
3 -4 ounces yogurt cheese or 3 -4 ounces cream cheese
1 tablespoon milk (only if you are using cream cheese)
3 -4 sprigs fresh thyme, optional garnish

Steps:

  • Under medium to low heat, place olive oil and onions in a skillet and cook for 3 or 4 minutes so that onions begin to soften but not brown.
  • Add 1/3 cup of chicken broth to the onions and continue to cook until the liquid evaporates. This should take about 8 to 10 minutes.
  • Add thyme and another 1/3 cup of broth, and cook until the liquid evaporates.
  • Add the balsamic vinegar and the remaining broth, cooking until liquid evaporates. The final simmer takes about 12-15 minutes.
  • The results will be soft and tender onions with a tart sauce that is slightly syrupy but not at all loose.
  • To fill the Phyllo cups you can either use a pastry bag with a star tip or a teaspoon. If you are using cream cheese, allow it to soften a bit and mix with a tablesoon of milk.) Place a small amount of the yogurt or cream cheese in the shell filling about 1/3 to 1/2 way to the top. Top each with a spoonful of the onions.
  • Bake the tartlets in a pre-heated 350 degree oven for 8 to 10 minutes.
  • To garnish, you can pipe little rosettes of yogurt or cream cheese on top and sprinkle with a few fresh thyme leaves.
