FRENCH BRIE AND HAM BAGUETTE



French Brie and Ham Baguette image

1 (18 to 20-inch) baguette
1/3 cup peach or raspberry preserves
1 (6-ounce) package deli ham slices
1 (5-ounce) wedge brie, sliced, room temperature (recommended: Alouette)

Steps:

  • Slice baguette horizontally with a serrated bread knife. Spread preserves on both sides of bread. On bottom half of baguette, lay down overlapping slices of ham and top with slices of brie. Place top of baguette on sandwich. Cut into 1-inch pieces and secure with decorative sandwich picks.
  • Optional: heat in a 400 degree F oven for 10 to 12 minutes.

2 teaspoons olive oil
2 to 3 clusters red seedless grapes
Kosher salt
Freshly ground black pepper
One 350-to-400-gram wheel of brie (12 to 14 ounces)
2 tablespoons balsamic vinegar
1/4 cup finely chopped pistachios
Basil leaves, for garnish
Sliced baguette and crackers, for serving

Steps:

  • Place a piece of aluminum foil under the rack of your grill and preheat it to medium-high.
  • Drizzle the oil over the grapes and season with salt and pepper. Place the grapes and the brie onto the grill and cook, turning both occasionally, until the grapes are lightly charred and bursting, about 4 to 6 minutes.
  • Remove the grapes from the heat, transfer to the serving platter and drizzle with balsamic. Continue to cook the brie for 2 to 3 minutes, or until grill marks appear and it is soft but you are still able to lift it. Add to the platter.
  • Scatter the pistachios over the brie and grapes and garnish with a few basil leaves. Serve immediately with sliced baguette and crackers.

8 (6-inch) diagonal baguette slices
1 1/2 tablespoons unsalted butter, softened
6 ounces firm-ripe Brie, cut into thin wedges
1/2 Gala apple, halved lengthwise, cored, and cut into thin slices
1 cup tender watercress

Steps:

  • Spread 1 side of each baguette slice with butter. Turn over 4 slices and divide cheese and apple among them. Season apple with salt and pepper and top with remaining 4 baguette slices, buttered sides up.
  • Heat a dry 12-inch heavy skillet over moderate heat until hot, then cook sandwiches, pressing occasionally and turning over once, until bread is golden brown and cheese is melted, about 5 minutes total. Tuck watercress into sandwiches.

1 large white baguette , sliced into 4
8 rashers of smoked back bacon , grilled
200g brie , cut into slices (or chunks)
4 tbsp red onion chutney

Steps:

  • Heat your oven to 200C/180C fan/gas 6. Slice the baguette sections vertically and fill each with 2 slices of bacon and a quarter of the cheese. Put them on a baking sheet. Cook in the oven for 5 mins, until the bread is crisped up and the cheese is beginning to melt.
  • Top each with a dollop of red onion chutney and serve immediately.

80 g baguette (part baked)
40 g brie cheese
25 g green seedless grapes
10 g watercress
7 g butter

Steps:

  • Buy a part baked baguette while this is cooking in the oven slice some half fat brie, some green seedless grapes and wash some watercress.
  • When the baguette is cooked, slice in half and spread a small layer of butter or favorite spread on it.
  • Place the Brie, grapes and watercress into the bread while it is still warm -- Yummy!

  • Preheat oven to 400 degrees F. Place grapes on a nonstick baking sheet and drizzle with 1 teaspoon of olive oil. Toss to coat grapes evenly and roast for about 15 minutes or until grapes begin to look like they might burst and shrivel a bit. Set grapes aside to cool. Keep oven temperature.
