CRANBERRY BRIE BITES
Tangy cranberry, creamy brie, and crunchy walnuts come together in a buttery shell for an appetizer that will wow your guests. Bonus: These can be made up to 3 days ahead; wrap them in plastic wrap before the baking step and store in the refrigerator. Serve warm or at room temperature.

Steps:
- Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
- Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
- Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
- Preheat oven to 400 degrees F (200 degrees C).
- Bake bites in the preheated oven until golden brown, 18 to 20 minutes.

Steps:
- Preheat oven to 350F.
- Cut phyllo dough in half lengthwise.
- Keep half covered with plastic wrap and damp kitchen towel while working.
- Place two sheets of phyllo dough on work surface and brush with butter.
- Fold in half lengthwise and brush with more butter.
- Place 1 1/2 tsps cranberry sauce, 8 cubes Brie and nearly a tsp of crumbled bacon at the bottom of strip.
- Diagonally fold corner over filling, forming a triangle.
- Continue folding triangle shape up to the end.
- Brush with butter and place on a buttered jelly-roll pan.
- Repeat with remaining phyllo dough and filling.
- Bake 10-15 minutes or until golden brown.
- Cool 5 minutes brfore serving.
BRIE, BACON AND CRANBERRY FILO BITES
These easy brie and cranberry Christmassy canapes are best served fresh from the oven so the cheese is melty and hot. You will need a 24-hole mini muffin tin (or two 12-hole mini muffin tins).

- Preheat the oven to 190C/170C Fan/Gas 5.
- Take one sheet of the filo pastry and cover the rest of the pastry with a damp tea towel to stop it drying out. Cut the pastry in half so it is easier to work with. Take one half of the pastry and brush it with a little of the melted butter. Cut this half into 20 rough 5cm/2in squares. Take three of the squares and place them on top of each other, placing each at a slight angle to the one underneath (forming a star shape).
- Push the stack of pastry squares into one of the holes of a mini muffin tin, to make an empty pastry case. Repeat with the remaining pastry until all 24 holes are filled.
- Cut the brie into 24 small pieces and place one piece into each pastry case. Dot with a tiny amount of mustard, if using, add a little cranberry sauce and top with a few strips of bacon.
- Bake for 10-12 minutes, or until the bacon is cooked, the cheese melted and the pastry golden-brown. Leave to cool in the tin for a couple of minutes before removing carefully and serving.
BRIE & CRANBERRY TWISTS

- Heat oven to 220C/200C fan/gas 7. Stack two of the filo sheets. With a widest edge facing you, brush with some melted butter. Put three brie fingers at even intervals across the bottom of the filo. Top each finger with 1 tsp cranberry sauce, then sprinkle over a few chopped walnuts.
- Roll up the filo from the bottom. Cut into three parcels, and twist the ends to seal. Brush with more butter and sprinkle with poppy seeds. Repeat with the remaining ingredients. Bake for 10 mins. Or, cover the unbaked twists with cling film, chill for up to 1 day and bake just before serving.

BRIE & CRANBERRY FILO PARCELS

- Heat the oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment. Unravel a sheet of filo pastry onto a chopping board, covering the rest of the filo with a damp tea towel so it doesn't dry out. Brush the filo sheet liberally with some of the melted butter, then cut into three strips lengthways.
- Spoon ½ tsp cranberry sauce over the top right-hand corner of each pastry strip and place a piece of brie on top. Fold the pastry over the filling to create a triangle, then continue to fold the pastry over itself down the length of the strip. Brush with more butter to seal, then sprinkle over the poppy seeds and place on the lined baking tray. Repeat with the remaining ingredients. The parcels can be covered and chilled in the fridge for up to a day or frozen for up to three months.
- Bake for 15-20 mins (or 20-25 mins from frozen) until deep golden brown. Leave to stand for 5 mins before serving with some extra cranberry sauce.
