MEATY COUNTRY BREAKFAST SCRAMBLE



Meaty Country Breakfast Scramble image

A meaty, stick to your bones, simple dish that will please the whole family. A real meat and potatoes basic dish, a definite comfort food. I developed this on my own after not being fully satisfied from frozen pre-made skillet/scrambles. For this dish I recommend you break out two large skillets. The meal, in my opinion, almost tastes better the second time around. A definite meal ideal for leftovers.

Number Of Ingredients 12

1 (16 ounce) O'Brien potatoes
1 (1 lb) breakfast sausage
1 (8 ounce) ham, diced (or julienne works just as well)
2 bell peppers, chopped (color of your choice, I mix it up depending on the season)
1 (8 ounce) button mushrooms, sliced
12 large eggs
8 green onions, chopped
3 teaspoons salt (or to taste)
4 teaspoons black pepper (or to taste)
4 teaspoons vegetable oil
2 cups cheddar cheese, shredded
1 cup milk

Steps:

  • Get 2 large skillets / sauce pans.
  • In the first pan put enough oil to lubricate and brown the potatoes O'Brien on med to high heat, stirring occasionally (per package directions, yours may vary).
  • In the second pan brown the breakfast sausage.
  • In a bowl beat the eggs along with the milk and set aside.
  • Just as the sausage finishes browning, toss in the ham with it to put a little color on it (it's diced and pre-cooked generally, so this should go quick).
  • Right after you add the ham to the sausage, add the green onions, bell peppers, and mushrooms to the potatoes O'Brien in the first pan, and sauté the potatoes and veggies together for about 5 minutes.
  • Once the ham has browned slightly, drain the fat, and add the sausage and ham to the first pan with the potatoes and veggies and stir the mixture together, then stir occasionally.
  • After dumping the sausage and ham, put the pan back on the heat and use it to scramble your eggs (the grease from the sausage will do a wonderful job lubricating the pan and imparting a little flavor to the eggs).
  • Once the eggs are scrambled fold them into the first pan, do not over mix, or you will turn the texture to mush.
  • Top the mixture with cheese, and gently stir to mix in the cheese,.
  • Serve and enjoy!

2 tablespoons milk
1 onion, chopped
2 slices cooked ham, chopped

Steps:

  • In a large bowl, beat together eggs and milk. Stir in onion, ham, cheese, salt, pepper and garlic powder.
  • Melt butter in a large frying pan or skillet over medium high heat. Add eggs and cook, without stirring, until eggs begin to set. At that point, stir the eggs until roughly scrambled. Keep doing this until eggs are fully cooked, about 10 to 15 minutes. Serve warm.

2 medium red potatoes, cut into 1-inch pieces
7 -8 medium eggs, beaten
1/3 cup ham, cut into bite size pieces
1/4 cup colored bell pepper, cut into bite size pieces (I use green and orange)
1 tablespoon basil
1 tablespoon oregano
1 tablespoon salt
2 tablespoons olive oil
1/4 cup shredded cheddar cheese
3 tablespoons butter

Steps:

  • Preheat oven to 450 degrees.
  • Drizzle potatoes with olive oil and season with basil, oregano and salt. Toss to coat.
  • Place in baking dish and bake for 30 minutes. Toss every now and then to prevent sticking.
  • After potatoes have been baking for 15 minutes, heat butter in a skillet and saute peppers and ham for about 5 minutes on medium heat.
  • Add eggs and scramble.
  • Serve egg mixture over potatoes. Sprinke with cheese.

1 large potato, peeled and diced
2 Roma tomatoes, diced and seeds removed
1/3 lb deli meat, chopped ((turkey or ham))
3/4 cup shredded cheddar cheese (or cheese of choice)
2 tsp avocado oil
Salt & pepper to taste

Steps:

  • Dice potato, deli meat and tomatoes.
  • Heat oil over medium heat and add potatoes. Cook until almost brown (about 5-7 minutes).
  • Add deli meat and cook additional 2-3 minutes.
  • Push deli meat and potatoes to side of skillet and pour in beaten eggs.
  • Scramble eggs as usual, slowly incorporating potatoes and deli meat.
  • Once eggs are still a little runny, add tomatoes and cook for 1-2 more minutes. Remove from heat.

2 tablespoons vegetable oil, divided
20 ounce refrigerated shredded hash brown potatoes
2 tablespoons butter, divided
1/2 large sweet onion, diced
6 slices of cooked bacon or 3 ounce package pre-cooked bacon pieces
6 large eggs
8 ounces shredded sharp cheddar cheese
1 teaspoon salt, or to taste
1/4-1/2 teaspoon pepper, or to taste
green onions or parsley, chopped for garnish

Steps:

  • To make this cheesy breakfast egg scramble, start by adding half of the oil to your griddle or a large non-stick skillet and heat over medium high.
  • Once oil has heated, add hash browns in an even layer, sprinkle generously with salt and pepper, press down lightly and cook for 6-7 minutes or until golden on the bottom. Drizzle the top of your hash browns with the remaining oil, then flip the hash browns over using a large spatula. Season again with S&P. Continue cooking for another 7-8 minutes.
  • Once your hash browns are cooked, remove from pan or push aside on griddle. To the skillet or griddle, add 1 tablespoon butter and once melted, add diced onion. Cook for 2-3 minutes to soften onions. Add bacon pieces to warm and stir to combine. Cook for 1-2 minutes. Remove from skillet or move on top of hash browns if still on griddle.
  • To a skillet, add 1 tablespoon butter over medium heat. Add eggs to a large bowl with a dash of salt and pepper and whisk to scramble. Pour eggs into skillet. As eggs begin to set, gently PULL the eggs across the pan with a spatula, forming large soft curds. Continue cooking until eggs have thickened and no visible liquid egg remains.
  • Bring hash browns, bacon, onions and eggs together in your cooking vessel and gently stir to combine. Cover with shredded cheese and cook gently until cheese melts. Garnish with green onions or parsley. Serve immediately.

1 green bell pepper, diced
1 yellow bell pepper, diced

2 fresh garlic cloves, minced or pressed
1.5 Tbsps taco seasoning
8 ounces black beans, rinsed and drained
8 eggs
1/4 cup shredded cheese
1 cup cherry tomatoes, halved
1 avocado peeled and sliced chopped
sea salt and fresh ground pepper
a small bunch of fresh cilantro, chopped

Steps:

  • Heat half a tablespoon of oil in a large skillet over medium heat.
  • Add onions, garlic and peppers, then sauté until softened, about 4 minutes.
  • Add meat, and seasonings then cook while breaking up the meat until browned, about 5 minutes.
  • Add black beans to the meat mixture, combine well and cook 1 more minute. Remove from pan, and set aside.
  • In a mixing bowl and eggs, cheese, salt and pepper, then whisk well to combine.
  • Heat the remaining oil in the same pan, over medium heat.
  • Add eggs and cook until scrambled to your liking.

1/2 large Red Onion, chopped
2 handfuls Kale, destemmed and chopped ((about 1 cup packed))
12.3 oz Tofu, silken, extra firm ((I used Mori-Nu brand))
1/2 tsp Braggs 24 Herbs & Spices Seasoning ((or more to taste))
1/2 tsp Onion Powder, unsalted ((or more to taste))
1/2 tsp Garlic Powder, unsalted ((or more to taste))
1/4 tsp Ground Tumeric ((or more to taste))
1 Tbsp Nutritional Yeast ((or more to taste))
1/4 tsp Kala Namak (Black Mineral Salt) ((optional))

Steps:

  • Scrub potato and rinse well. Dice potato and place into steamer basket in a pot with water. Steam for 5 minutes. Remove from heat.
  • While diced potatoes are steaming, chop red onion into small pieces. Add to a non-stick pan. De-stem and chop kale. Add to pan with onions. Sautee for 5 minutes on medium high heat. Add a splash (1tbsp) of water if need to keep veggies from sticking to pan. Move sauteed veggies to one side of pan.
  • Remove tofu from packing and drain. Add tofu to pan with sauteed kale and onions. Using the back of a large spoon, mash tofu to desired crumbled texture.
  • Add all spices to tofu. Gently stir spices thru tofu and heat for about 3-4 min. Add the steamed cubed potatos to pan and mix the entire mixture together until well combine. Taste and adjust spices if desired. Enjoy!
