PULLED PORK HASH

Pulled Pork Hash image

Pulled pork, hash brown potatoes, onion, peppers, bbq sauce and sunny side up eggs. Great breakfast or brunch option for leftover pulled pork.

Provided by Steve Cylka

Time 35m

Number Of Ingredients 10

2 tbsp oil
1 onion (, diced)
1 red pepper (, diced)
2 garlic cloves (, minced)
750 g (2 pound) bag frozen hash browns
2 1/2 cups pulled pork
1/2 cup bbq sauce
1/2 tsp cayenne pepper
salt and pepper to taste
6-8 eggs

Steps:

  • Heat oil in a skillet on medium heat. Add onion, red pepper and garlic. Cook until they are tender, about 5 minutes.
  • Add the frozen hash browns. Cook for about 10-15 minutes so that the hash browns cook through and start to crisp up on the outside. Stir often, scraping the bottom of the skillet.
  • Stir in the pulled pork, bbq sauce, cayenne, salt and pepper. Cook for another 7-10 minutes, stirring often.
  • In another skillet, fry the eggs sunnyside up.
  • Scoop some of the pulled pork has onto a plate. Place one or two eggs on top of the hash.
  • Serve hot.

PORK AND POTATO HASH

Pork and Potato Hash image

Perfect for leftover pork loin -- even better if you have a little leftover juices (gravy or pan drippings) from your roast pork. Our family loves this. It's a Jacques Pepin recipe.

Provided by vrvrvr

Categories     One Dish Meal

Time 50m

Yield 6 serving(s)

Number Of Ingredients 12

1 3/4 lbs potatoes, cut into 1/4-inch slices
1 1/2 cups water
1 medium onion, chopped
3 tablespoons drippings, leftover from your pork roast (if any remains)
3 -4 garlic cloves, minced
3 -4 scallions, minced
3 tablespoons olive oil
1/4 teaspoon Tabasco sauce
3/4 teaspoon salt
2 teaspoons Worcestershire sauce
2 -2 1/2 cups leftover cooked pork, diced
1 fried egg, for garnish (optional)

Steps:

  • Place the sliced potatoes, 1 1/2 cups water, onions, and juice from pork roast in a 12" nonstick skillet.
  • Bring to a boil, cover, and boil over medium heat for 10 minutes.
  • Add garlic, scallions, olive oil, Tabasco, salt, Worcestershire and pork.
  • Mix well and cook, uncovered, over high heat, stirring, for about 5 minutes.
  • Most of the moisture will have evaporated by now and the mixture should be starting to sizzle. Since the hash will begin to stick at this point, use a heat-resistant spatula to scrape up the crusty bits sticking to the bottom of the pan and stir them into the uncooked mixture.
  • Continue to cook over medium heat for about 20 minutes, stirring every 3-4 minutes.
  • The mixture will brown faster in the last 10 minutes of cooking and should be stirred every 2-3 minutes.
  • Turn out onto a large platter (or just bring the skillet to the table) and serve immediately.
  • Garnish with fried egg on top, if desired.

PULLED PORK HASH

Pulled Pork Hash image

A great way to use up leftovers, hash is a fast and simple meal. This recipe uses pulled pork from pork shoulders I cooked on my Weber® Smokey Mountain last weekend. It's great for a quick dinner or relaxed breakfast. The secret to crispy hash is using precooked potatoes. Goes great with biscuits, too.

SCRAMBLED BREAKFAST HASH

Scrambled Breakfast Hash image

This is a simple tasty dish my mom and I threw together in order to use up the tater-tot crowns left-over from dinner the night before.

Provided by Chef Buggsy

Categories     Breakfast

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 10

2 cups tater tots (I used precooked crowns)
4 green onions, white and tops chopped
2 tablespoons butter, divided
1 teaspoon garlic powder
6 eggs
2 tablespoons water
1 cup grated colby cheese
salt and pepper
top with a dollop sour cream (optional)
top with salsa (optional)

Steps:

  • Place 1 Tbs. butter in a medium skillet and melt over med. heat.
  • Add chopped green onion and garlic powder to butter and cook until onion is tender. Stir often to keep onion from burning.
  • Once onion is softened, add the tater-tot crowns and cook until brown and crispy; turning occasionally. Crowns will start to break apart.
  • While tater crowns are browning, add eggs to a large glass mixing bowl.
  • Add the 2 Tbs. water to the eggs and scramble with a fork.
  • In a large skillet, melt 1 Tbs. butter on medium heat.
  • Pour the eggs into the large skillet and allow the bottom to start to set.
  • Add salt and pepper to the egg and scramble.
  • Cook eggs until they are nice and fluffy and set.
  • Place a scoop of the tater-tot crown mixture on a plate and sprinkle with a little cheese, top the mixture with some of the fluffy eggs and another sprinkling of cheese.
  • Top with sour cream, salsa or both if you so desire and enjoy!
  • Note: When making scrambled eggs, you should never mix them with milk (unless your making French toast). Milk causes the eggs to weep and be less fluffy.

CHORIZO HASH

Chorizo Hash image

Start the day off right with this easy Chorizo Breakfast Hash! Spicy sausage and smoky bacon are cooked with creamy potatoes, then topped with scrambled egg and cheese.

Provided by Holly Nilsson

Categories     Breakfast

Time 1h

Number Of Ingredients 10

2 pounds Yukon gold potatoes (½ inch pieces)
1 pound chorizo sausage (casing removed)
4 strips bacon (sliced)
1 onion (diced)
4 cloves garlic (minced)
1 teaspoon coriander
1 teaspoon cumin
¾ teaspoon smoked paprika
6 eggs (whisked)
1 cup cheddar cheese (shredded)

Steps:

  • Preheat the oven to 375°F.
  • Place the potatoes in a large pot with 6 cups of water, bring to a boil and cook for 6-8 minutes or until they are fork tender. Drain them and set aside.
  • While potatoes are cooking, heat a large skillet over medium heat. Cook the bacon until crisp. Remove and set aside.
  • Remove the casing from the chorizo and add it to the bacon fat along with the onion. Cook until no pink remains, about 8 minutes. Remove from the pan and set aside leaving the fat in the pan.
  • Turn the heat up to medium high and add the potatoes, seasonings, and garlic to the pan. Cook until browned without stirring too much so the potatoes can form a crust. Stir in the meat.
  • While potatoes are browning, lightly scramble the eggs in a small pan over medium heat. Eggs should be slightly undercooked and shiny. Place on top of the hash and sprinkle cheese on top.
  • Place in the oven and heat until cheese is melted and heat through, about 5 minutes.

  • Choose The Main Meat. Leftover cooked meat or poultry are natural beginnings for hash. If you can shred it, you can hash it. Corned beef, carnitas, brisket, duck confit, roast chicken, and turkey are all perfect for hash.
  • Add One Type of Allium and One Kind of Potato. Onion, leek, pearl onion, or shallot: take your pick of allium and dice it. (You don't even need a whole onion—this is the perfect time to use up that half onion leftover from another meal.)
  • Add Other Vegetables. Meat and potatoes may be the foundation of hash, but don't miss the opportunity to add some extra veggies. This is where those leftover sautéed mushrooms you have sitting in the fridge come in, or that single ear of grilled corn on the cob leftover from the weekend's cookout, or that big bunch of kale you need to make a dent in.
  • Put an Egg On It. Sometimes I cook my eggs right in the hash. Sometimes I like to cook them on the side. (I prefer a soft-boiled 5-minute egg.) Do whichever you prefer, but know that if you cook them right in the hash, you'll have one less pot to wash.
  • Garnish and Serve. A flurry of chopped fresh herbs is my favorite way to finish a skillet of hash. A sprinkling of cheese works too. Then again, so does some salt and pepper.

  • In a large cast iron skillet, add 1/2 tablespoon of olive oil, and add the ham over medium heat. Continue to stir to get the ham crispy, 6 to 8 minutes. Remove the ham and set aside in a medium size bowl. Leave the drippings in the pan.
  • To the cast iron pan, add another 1/2 tablespoon olive oil, and add the par cooked potatoes over medium heat. Stir the potatoes every five minutes to allow the potatoes to crisp on each side. This should take roughly 20 minutes. Adjust heat if they appear to burn. Then remove potatoes and add to the bowl with the ham.
  • Add remaining olive oil to the cast iron pan. Add leeks and red pepper and sauté for 7 to 9 minutes until soft. While you are sautéing, begin cooking eggs, in a separate pan, to your preference. We like over easy.

Add cooking liquid and garlic to potato mixture, and bring to a boil. Reduce heat to medium, and cook, uncovered, for 20 minutes or until potatoes are tender and liquid evaporates. Stir in shredded pork and 1/2 teaspoon salt. Working with one egg at a time, carefully crack eggs over potato mixture, about 1 inch apart in pan. Sprinkle eggs evenly with remaining 1/4 teaspoon salt and 1/4 teaspoon ground red pepper. Cover, reduce heat, and cook for 3 minutes or until desired degree of doneness. Sprinkle with green onions.
