BASIC VANILLA CAKE

Basic Vanilla Cake image

Provided by Food Network Kitchen

Time 1h

Yield two 9-inch cakes

Number Of Ingredients 8

2 sticks unsalted butter, at room temperature, plus more for the pans
3 cups all-purpose flour, plus more for the pans
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups sugar
4 large eggs, at room temperature
1 tablespoon vanilla extract
1 1/4 cups whole milk (or 3/4 cup heavy cream mixed with 1/2 cup water)

Steps:

  • Preheat the oven to 350 degrees F. Butter two 9-inch-round cake pans and line the bottoms with parchment paper; butter the parchment and dust the pans with flour, tapping out the excess.
  • Whisk 3 cups flour, the baking powder and salt in a bowl until combined. Beat 2 sticks butter and the sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Reduce the mixer speed to medium; beat in the eggs, one at a time, scraping down the bowl as needed. Beat in the vanilla. (The mixture may look separated at this point.) Beat in the flour mixture in 3 batches, alternating with the milk, beginning and ending with flour, until just smooth.
  • Divide the batter between the prepared pans. Bake until the cakes are lightly golden on top and a toothpick inserted into the middle comes out clean, 30 to 35 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.

CLASSIC YELLOW CAKE BATTER

Classic Yellow Cake Batter image

Layer cake, cupcakes, or loaf cake? One basic batter makes all these and more. Raspberry-Cream Layer Cake, Cappuccino-Chocolate Cupcakes, and Chocolate-Vanilla Marble Cakes each use this entire batch of batter. For the Pineapple Buckle, halve the recipe -- leftover batter would deflate if stored.

Time 15m

Yield Makes 8 cups

Number Of Ingredients 8

1 cup (2 sticks) unsalted butter
1 3/4 cups sugar
4 large eggs plus 2 large egg yolks
1 tablespoon pure vanilla extract
3 cups cake flour (spooned and leveled)
1 tablespoon baking powder
1/2 teaspoon fine salt
1 1/2 cups buttermilk

Steps:

  • Bring cold ingredients to room temperature. Butter should be soft enough to hold a thumbprint but still keep its shape. In a large bowl, using an electric mixer, beat butter and sugar on high until light and fluffy, about 6 minutes.
  • Beat in 4 eggs plus 2 yolks, one at a time, until combined. Beat in vanilla extract.
  • In another large bowl, whisk together cake flour, baking powder, and salt. With mixer on low, add 1/3 the flour mixture to butter mixture, beating to combine.
  • Beat in 3/4 cup buttermilk, another 1/3 the flour mixture, another 3/4 cup buttermilk, and remaining flour mixture until just combined. Scrape down bowl as needed.

Categories     dessert

Yield 1 layer cake, 1 sheet cake or 30 cupcakes

Number Of Ingredients 13

2 cups all-purpose flour
1 3/4 cups granulated sugar
1/4 cup packed light brown sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
3 large eggs
1 cup whole milk
1/2 cup vegetable oil
1 tablespoon distilled white vinegar
2 teaspoons pure vanilla extract
1/4 cup hot tap water

Steps:

  • Mix the flour, granulated sugar, brown sugar, cocoa powder, baking soda, salt and baking powder in a large bowl with a mixer on low speed until combined. Add the eggs, milk, vegetable oil, vinegar and vanilla. Increase the speed to medium and beat until smooth, about 2 minutes. Beat in the hot water until smooth.
  • Turn this one-bowl chocolate cake batter into three different desserts.
  • Layer Cake:
  • Brush two 9-inch round cake pans with vegetable oil, line with parchment, then brush with more oil and dust with flour.
  • Divide the batter between the pans; tap against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the centers of the cakes comes out clean, 40 to 45 minutes. Let cool 15 minutes in the pans, then turn out onto racks to cool completely; discard the parchment.
  • Sheet Cake:
  • Line a 9-by-13-inch baking dish with foil and brush with vegetable oil.
  • Pour the batter into the pan; tap against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Let cool completely in the pan.
  • Cupcakes:
  • Line 30 muffin cups with paper liners.
  • Pour the batter into the muffin cups, filling them about halfway. Tap the pans against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the centers of the cupcakes comes out clean, 20 to 25 minutes. Let cool 5 minutes in the pans, then remove to racks to cool completely.

ONE CAKE BATTER, SIX FLAVORS - FOOD NETWORK

From foodnetwork.com
Author Food Network Kitchen
Published Mar 7, 2020
Estimated Reading Time 3 mins
  • Vanilla Cake. This is where it all begins — a super-solid vanilla cake perfect for stacking and icing with whatever flavor frosting you like. And fittingly, it's also the essential building block for all the following variations too.
  • Chocolate Cake. Take the base cake batter (good ol' vanilla) and add unsweetened dark cocoa powder, melted bittersweet chocolate and brewed coffee (it brings extra depth to the chocolate flavor).
  • Confetti Cake. This might be the oldest trick in the baking book, but it's a good one — mix rainbow sprinkles into the base cake batter to make it party-ready.
  • Raspberry Jam Swirl Cake. This next iteration takes the base cake batter and swirls jam into it. You could absolutely layer and frost this cake (what a moist, show-stopping cake that would be!)
  • Lemon Poppyseed Cake. OK, now we're getting into the real shapeshifting. The base cake mixture gets amped up with lemon zest, lemon juice, and poppyseeds.
