I found the recipe for this hearty stovetop dish several years ago and changed it to fit our tastes. When I served it at a Christmas brunch, it was an instant hit. -Marilyn Hash, Enumclaw, Washington

1 pound bulk Italian sausage
5 cups frozen shredded hash brown potatoes
1/2 cup chopped onion
1/2 cup chopped green pepper
1/4 to 1/2 teaspoon salt
Pepper to taste
1/2 cup sliced mushrooms
4 large eggs, lightly beaten
1 medium tomato, thinly sliced
1 cup shredded cheddar cheese
Sour cream and salsa, optional

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink. Add the potatoes, onion, green pepper, salt and pepper. Cook over medium-high heat for 18-20 minutes or until the potatoes are browned. , Stir in mushrooms. Pour eggs over the potato mixture. Arrange tomato slices on top. Sprinkle with cheese. , Cover and cook over medium-low heat for 10-15 minutes or until eggs are completely set (do not stir). Serve with sour cream and salsa if desired.

2 cups milk
3 tablespoons flour
3 tablespoons butter
4 ounces cream cheese
1 lb bacon
4 ounces turkey sausage
8 eggs
1 1/2 tablespoons garlic powder (1/2 tbsp for the sauce, 1/2 tbsp for the crust and 1/2 tbsp for the eggs)
1 tablespoon onion powder (1/2 for the sauce and 1/2 for the eggs)
1 tablespoon cayenne pepper (1/2 for the sauce and 1/2 for the eggs)
1 tablespoon black pepper (1/2 for the sauce and 1/2 for the eggs)
4 tablespoons olive oil
1 lb pizza dough
4 ounces monterey jack pepper cheese
4 ounces monterey jack cheese

Steps:

  • Preheat your oven to recommended pizza crust cooking temperature.
  • Shred your cheese(if you bought blocks).
  • Start cooking your bacon.
  • Now we start on the pizza sauce . Grab your butter and start melting it in a large non stick pan on medium/low heat(we don't want to burn the butter). As soon as the butter is nice and melted SLOWLY! add and whisk in the flour a little bit at a time. It should never clump up and be lumpy. It should always be smooth and bubbly.
  • Once all the flour is in the mix add your milk and spices.
  • Once the sauce is back up to boiling go ahead and add your cream cheese. Let the cream cheese just melt into the sauce while slowly stirring it. Once its blended set it on a back burner on low heat.
  • Now we make the eggs.
  • Crack all of your eggs into a bowl and add in your spices. Whisk FURIOUSLY! until they are nice and airy(only about 30 seconds of whisking for me).
  • Melt a 1/2 tbsp of butter to the bottom of a nonstick pan and add your eggs. I have a pattern to my eggs follow it if you wish. I do not stir eggs. I scrape the pan in an orderly fashion starting from the center out in both directions. Once the eggs are still a little runny I pile them in the middle of the pan and turn the heat off. They finish on their own.
  • Now that all of the main ingredients are done all that's left is putting them on your crust.
  • Take the pizza crust out and put it on a baking sheet.(I put aluminum foil down and spray it with Pam for ease of removing the pizza later).
  • Now put as much sauce as you prefer on your dough(I like my pizza SAUCY!).
  • Next add your cheese. Add roughly 3/4 of the cheese on now. Sprinkled evenly from edge to edge.
  • Next take your bacon and crumble it up and spread it evenly over the pizza.(I pull the fat off my bacon, to each his/her own).
  • Now sprinkle on your turkey sausage crumbles.
  • Now add your eggs.
  • And the last of the cheese!
  • Now take that remaining 1/2 tbsp of garlic powder and mix it with the 4 tbsp of olive oil. Add this to the "crust" of the pizza.
  • Now pop it in the oven!

Steps:

  • Preheat oven to 425 degrees.
  • Unroll the pizza crust into a 15x10x1 inch sheet cake pan, stretch to fill the pan and curl up the edges to form a crust.
  • Brush crust with olive oil and prick with a fork to avoid bubbles.
  • Bake until lightly browned about 7-8 minutes.
  • In a medium size bowl whisk together the eggs, milk salt and pepper.
  • In a medium skillet heat a little oil over medium heat. Add egg mixture and cook until soft scrambled.
  • Spoon egg mixture over crust, add bacon and cheese. Bake for another 7 minutes or until cheese is melted.

Vegetable oil
12 ounces pizza dough (, homemade* or store-bought, room temperature)
¾ cup pesto (, homemade or store-bought)
⅓ cup sun-dried tomatoes packed in oil (, thinly sliced)
8 ounces creamy jack or fontina cheese (, shredded)
5-6 large eggs (, room temperature)
¼ teaspoon crushed red pepper flakes (and kosher salt)
Fresh basil and sliced green onion for garnish
¼ cup white wine (, room temperature)
¾ cup warm water
1 ½ ounces fresh yeast
1 tablespoon honey
1 teaspoon salt
2 tablespoons olive oil (, divided)
3 ¼ cups flour (, divided)

Steps:

  • Preheat oven at 450 degrees F.
  • Heat 1 tablespoon vegetable oil in a 12-inch cast iron or ovenproof skillet over medium-high heat.
  • Add chorizo and cook until browned on the edges, about 5 minutes.
  • Transfer chorizo to a paper towel-lined plate to drain. Carefully wipe out remaining oil in skillet with a paper towel. Re-season the skillet by coating it evenly with about 2 teaspoons of vegetable oil.
  • Using your fingers, press the dough as evenly as you can to cover the bottom of the skillet and up the sides about ¼ inch. (Be careful not to burn yourself! The skillet will still be hot from cooking the chorizo, which helps make the crust crisp.)
  • Spread about half of the pesto over the dough. Save the remaining pesto to drizzle on after baking.
  • Top pesto with half of the chorizo and sun-dried tomatoes.
  • Next evenly spread the cheese on top of the pesto, chorizo and sun-dried tomatoes.
  • Sprinkle the remaining chorizo and sun-dried tomatoes over the cheese.
  • With your fingers or with the help of spoon, create 5 to 6 wells in the cheese to nestle the eggs.
  • Crack the eggs one at a time into a mug or ramekin then gently pour into the wells. This way you avoid the risk of breaking the yolk when cracking onto the pizza.
  • Sprinkle assembled pizza with crushed red pepper flakes or ground black pepper and kosher salt, as desired.
  • Bake in preheated oven for about 15 minutes, or until crust is golden and eggs are done to your liking. I used nearly extra-large eggs and the yolks were golden lava at 14 minutes.
  • Remove from oven; let rest a few minutes. Garnish with extra basil or parsley and drizzle some of the remaining pesto over top. Slice and enjoy!
  • Place wine, water, and yeast in a large bowl; whisk until combined.
  • Mix in honey, salt, and 1 tablespoon olive oil.
  • Add 1 cup of flour and mix with a wooden spoon until it becomes a loose batter.
  • Add 2 more cups of flour and stir for 2-3 minutes. Incorporate as much flour as you can with the wooden spoon.
  • Bring dough together by hand and turn out onto a floured board or marble surface with the remaining ¼ cup flour. Knead 3-4 minutes until dough is smooth and firm.
  • Place dough in an oiled bowl, using the remaining 1 tablespoon of olive oil. Cover bowl with plastic wrap. Let rise in a warm part of the house for 60-90 minutes. The dough should nearly triple in size.
  • Pizza dough recipe yields about 24 ounces of dough, enough for 3 10-12 inch pizzas.

  • Heat 1 tablespoon oil in a skillet to medium heat, add ground chuck and chorizo, cook until brown, breaking it up as it cooks. Season with salt and pepper, to taste. Add potatoes, onion and 1 more tablespoon oil, if needed. Stir to incorporate, then let cook 8 minutes, undisturbed to form golden crust. Stir potatoes, then let cook undisturbed another 8 minutes. When potatoes are almost totally cooked through, mix in garlic, rosemary, and red pepper. Form 4 pockets in the hash to put the eggs. Add a little more oil in the pockets, if necessary, so the eggs don't stick. Carefully pour an egg into each pocket, cover pan and turn heat to low.
