Steps:
- Pour raspberries into a large jar and cover with sugar. Pour vodka over all and close with lid.
- Shake several times the first day until all of the sugar has dissolved.
- Store in a cool, dark place for a minimum of one month (I recommend 6 weeks, longer is fine too). Shake every day or two.
- When the liqueur is ready to be bottled, line a strainer with a couple of layers of cheesecloth, preferably butter muslin and place it over a large pot or bowl. Pour the liquor over the cheesecloth slowly letting the liquid drain while the strainer catches the solids. Repeat if necessary.
- When ready, store in bottles. I like to keep one in the fridge for an icy after dinner drink!

RASPBERRY CHAMBORD SYRUP
One restaurant where we have lemon creme cake uses raspberry syrup on the plate, and it looks so pretty, but it also tastes wonderful along with the intense lemon, so I decided to make my own using fresh raspberries and Chambord (raspberry liqueur). Place this in a condiment squirt bottle like restaurants use for mustard and...

Steps:
- 1. Rinse raspberries. Either puree raspberries in blender or mash them in a saucepan while heating. Once you see the juice has been released, strain seeds from the juice.
- 2. Place the juice in a saucepan (or if you are returning it to the saucepan in which you mashed the berries, be sure to rinse all seeds from pan.) Add 1/2 cup of sugar and boil until it becomes slightly syrupy (lightly coating the spoon). It only takes a minutes or two. If it becomes a thick syrup, it will become jelly upon cooling.
- 3. Remove from heat. Once the syrup is cool enough to touch, add the chambord, pour the syrup in a condiment squirt bottle, and place in the refrigerator. It will become thicker once chilled.
- 4. This picture shows how the still hot syrup will run on a plate, but this is the same syrup that once chilled, made the squiggles on the plate with the lemon cake, so really be cautious that it doesn't get too thick because cooled jelly will not come out of the squirt bottle. Makes about 1/3 cup of syrup.

Steps:
- Gather the ingredients.
- Split the raspberries equally between two quart-sized jars. Add 1/2 cup of sugar to each. Shake to coat the berries and allow to macerate for 30 minutes.
- Pour half the vodka into each jar (about 1 1/2 cups per jar). Seal and shake well to dissolve the sugar. Check every 30 minutes and shake again until you're sure the sugar is completely dissolved.
- Store the jars in a cool, dark place for two weeks, shaking every day or two.
- Using a fine-mesh strainer lined with cheesecloth, strain the raspberries from the liqueur. To remove more sediment, empty and rinse the cheesecloth and strain two or three more times.
- Funnel the raspberry liqueur into two 16-ounce (or four 8-ounce) bottles. Seal and store with other liquors in a cool place out of direct sunlight.

FUDGY CHOCOLATE LAYER CAKE WITH RASPBERRY CHAMBORD WHIPPED CREAM
I bought a convection oven and I was playing around with some recipes and combined a German chocolate recipe with a fudgy chocolate recipe and then my mind just went in a totally different direction - the directions the recipe that I wrote here are for three layers and I think in a conventional oven that would be best - I tried doing my first one which is pictured here in a spring form (because of the convection oven) and then just sliced it in half - I would not recommend that - I was lucky I had wrapped tin foil around the bottom of the pan - the batter is so liquid that it runs through - so three single layer pans will work best - I made this last weekend for my neighbors birthday and everyone was drooling - hope you enjoy it!

22 SWEET AND FUN RASPBERRY COCKTAILS TO MIX UP
From thespruceeats.com
- Floradora. One taste of the Floradora and you'll fall in love. This early 20th-century Broadway-inspired cocktail is easy and its ingredient list doesn't do the flavor justice.
- French Martini. The French martini is an explosion of flavor with just three ingredients. It is the ultimate fruit martini and its tantalizing taste of raspberry and pineapple has placed it at the top of all-time favorites.
- Clover Club Cocktail. Raspberries don't make many appearances in classic cocktails, but they put on a show when they do. The original Clover Club cocktail uses gin, egg white, and raspberry syrup and it is truly amazing.
- Raspberry Vodka Lemonade. Fresh raspberries succumb to the muddler in this easy vodka lemonade. The cocktail comes together quickly with a little citrus vodka.
- Knickerbocker. A classic cocktail, sweet raspberries take center stage in the Knickerbocker. It's essentially a rum sour sweetened with raspberry syrup and the darker fruit profile is a nice change from other fruity rum drinks.
- Raspberry Snakebite. The snakebite is a mix of beer and hard cider and it's a nice foundation for experimentation. In the raspberry snakebite recipe, the beer becomes vanilla porter and fresh raspberry juice makes it a little more interesting.
- Raspberry Caipirinha. The raspberry caipirinha recipe requires just four ingredients. You'll need a handful of fresh raspberries, lime juice, and a dash of sugar.
- Gummy Bear Margarita. Few drinks will bring out your inner child as quickly as the gummy bear margarita. This yummy drink features a fruity combo of watermelon, cranberry, and citrus, but the real star of the show is the raspberry-kiwi tequila!
- Raspberry Bellini. Bellinis are among the best brunch cocktails. When you're ready for something new, give the raspberry Bellini a try. The traditional peach flavor is replaced with fresh raspberries and it includes a shot of cachaça.
- Raspberry Margarita. Break out the tequila and the blender and enjoy a sweet, fruity margarita. This recipe is for a frozen cocktail made with fresh raspberries.

- Grease a 9x9 square baking pan. I like to line it with parchment paper with overlapping ends so I can lift it out after it bakes for even cutting.
- Rinse the raspberries and shake off all the excess water. Toss them gently with the cornstarch, lemon juice and Chambord. Set aside.
- Cream the soft butter, sugar, and salt until well blended. Add in the vanilla, and then the flour. Blend until the mixture has a crumbly texture, and there is no dry flour remaining.

- DeKuyper Razzmatazz. Razzmatazz is a raspberry liqueur that makes the ideal substitute for Chambord. They taste similar and once mixed into cocktails like Martini, Kir Royale, The Hollywood, Espresso Martini, or Raspberries and Cream, few could tell the difference.
- Crème de cassis. Creme de cassis is a blackcurrant liqueur that’s bursting with sweet, fruity flavor. It originated in Dijon around 1841. There are no laws on how much or what quality fruit must be used to make Creme de cassis, so the flavor will vary by producer.
- Di Amore Raspberry. Di Amore Raspberry is an Italian liqueur that tastes of sweet, black raspberries. A considerably cheaper option, it tastes a lot like Chambord with a little less vanilla flavor and not quite as smooth.
- Raspberry extract. Not everyone wants to consume alcohol. To replace Chambord in mocktails and sweet treats, use raspberry extract. You’ll get a similar fruity flavor without the alcohol content – ideal for your next Raspberry Mojito.
- Framboise. Another raspberry liqueur is Framboise which has an intense and sweet in flavor. You’ll notice it doesn’t have the same silky mouthfeel as Chambord, but in most applications, it will barely be noticeable.
- Ole Smoky Blackberry Moonshine. Let’s start by saying Ole Smoky Moonshine doesn’t have the same flavor as Chambord. This is a good substitute for people that want something a little less French.
- Giffard Blackberry Liqueur. Giffard Blackberry (Muroise aux Baies Rouges) Premium Liqueur is a premium replacement for Chambord. This brilliant ruby drink is the option for anyone who can’t get their hands on Chambord and doesn’t want to sacrifice quality.
- Pama Pomegranate Liqueur. Pama Pomegranate Liqueur is made in the United States and combines pomegranate juice with vodka and tequila. It is only 17% ABV so it won’t hit you like a regular bottle of vodka or tequila would.

6 BEST SUBSTITUTES FOR CHAMBORD - MISS VICKIE
From missvickie.com
- Raspberry Liqueur. We have already mentioned that Chambord is a combination of different berries, so you can choose raspberry liqueur as a replacement.
- Black Raspberry Liqueur. If you cannot find the raspberry liqueur, you can also choose the black raspberry liqueur which is sweeter rather than tartness.
- Framboise. For people who want information about a specific brand when trying to find out the substitute for Chambord, they can opt for framboise. This is the brandy that’s flavored with raspberry.
- Rum. Yes, we are talking about using rum in place of Chambord. The users can opt for raspberry-flavored rum. In addition to rum, you can also opt for raspberry-flavored vodka because it can perfectly replicate the flavor of Chambord.
- Raspberry Syrup. If your recipe can manage with the non-alcoholic substitute, we suggest that you use raspberry syrup. For the most part, the raspberry syrup can be bought from the breakfast aisle of grocery stores.
- DIY Substitute. If you don’t mind mixing and matching some ingredients, you can follow this heading. That’s to say because you can make a Chambord substitute by mixing one teaspoon of the raspberry extract with every two tablespoons of liqueur (yes, the raspberry one).
