I find this recipe simple and the aroma mmmmm. The secret making hash browns is to partially cook the potatoes first so they do not discolor when you cook them. The cheese in this recipe helps them hang together so you get a golden cake of hash browns not just broken up bits. Boil your potatoes ahead of time and it will only take 10-15 minutes to finish them at breakfast

1 lb russet potato
1/4 teaspoon salt
pepper
1/2 cup cheddar cheese (mild, medium or aged your choice)
2 slices bacon, cooked & crumbled,optional
2 green onions

Steps:

  • Boil the potatoes until just barely tender, set aside to cool so you can handle them.
  • Grate the potatoes.
  • Spray a non stick skillet with veggie oil and place half the potatoes in it, sprinkle with salt& pepper.
  • Top with cheddar, green onions& bacon.
  • Add remaining potatoes, pat down.
  • Turn heat to high and cook about 5 minutes, shaking pan to keep the potato cake loose.
  • Using a spatula lift edges carefully to see when the bottom is golden brown.
  • Place a plate over the skillet and invert the pan getting the potato cake out in one piece, brown side up on the plate.
  • Spray the skillet with oil again and slide the potato cake back into the pan uncooked side down.
  • Cook about another 5 minutes.
  • Slide back onto a plate and cut into wedges.

Steps:

  • Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
  • Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
  • Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

1 pound elbow macaroni
1 tablespoon vegetable oil
1 pound breakfast sausage, casings removed
1 large yellow onion, chopped
2 small green bell peppers, chopped
2 1/2 cups half-and-half
1/8 to 1/4 teaspoon cayenne pepper
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces Gruyere, shredded (about 1 cup)
1 1/2 cups frozen shredded hash browns, thawed
4 tablespoons unsalted butter, melted

Steps:

  • Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
  • Heat the oil in a large saucepan over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat with the back of a wooden spoon, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the onions, 1 tablespoon water and a pinch of salt to the saucepan and cook until just starting to soften, 3 to 4 minutes, scraping up any browned bits with the wooden spoon. Add the bell peppers and cook until lightly browned and softened, 6 to 8 minutes. Transfer the onion and green bell pepper to the plate with the browned sausage.
  • Carefully wipe out the saucepan (or give it a quick rinse if it is really dirty). Add the half-and-half and cayenne and bring to a simmer over medium heat. Cook until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni and reserved pasta water to the saucepan and stir to combine. (The mixture will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Gently fold in the browned meat and vegetables and season with more salt if needed. Pour into a 13-by-9-inch baking dish. Toss the hash browns with the melted butter and a pinch of salt and scatter over the macaroni and cheese. Bake until the cheese is bubbly and the hash browns are just starting to brown, about 10 minutes. Broil until the hash browns are golden brown and crispy, about 3 minutes.

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

6 pieces peppered bacon, chopped
4 large eggs
2 sweet potatoes, peeled and diced into 1/2-inch pieces
4 parsnips, peeled and diced into 1/2-inch pieces
2 cups Brussels sprouts, quartered
1 medium red onion, chopped
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 Roma tomato, diced
1 cup crumbled goat cheese
1/4 cup fresh parsley leaves
8 leaves basil, chiffonade

Steps:

  • Line a plate with a paper towel and set aside. Heat a large nonstick skillet over medium-high heat. Fry the bacon, stirring occasionally, until crisp, 4 to 5 minutes. Remove the bacon to the lined plate with a slotted spoon or spatula.
  • Remove all but 2 tablespoons of grease from the skillet, reserving the remaining grease. Fry the eggs in the bacon fat for 2 to 3 minutes. Remove to a plate and cover with a paper towel to keep warm.
  • Add 1 more tablespoon bacon grease and turn up the heat to high. Add the sweet potatoes, parsnips, Brussels sprouts, onion, garlic and some salt and pepper, then cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
  • Place fried eggs on top of hash and sprinkle over the bacon, diced tomatoes, goat cheese, parsley and basil.

1 (30-ounce) package frozen shredded hashbrowns
1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

18 thin slices Cheddar or American cheese
15 thin slices deli ham (about 3 ounces)
15 frozen, fully cooked sausage patties (about 12 ounces)

Steps:

  • Preheat the oven to 400 degrees F. Generously grease a 12-cup Bundt pan with butter.
  • Whisk the eggs, heavy cream, 1 teaspoon salt and a few grinds of black pepper in a large bowl until well combined. Add 1 tablespoon butter to a large nonstick skillet and heat over medium-low heat. Add the eggs and cook, stirring often, until they are just starting to come together but are still very runny, about 5 minutes.
  • Melt the remaining 7 tablespoons butter in a large microwave-safe bowl in the microwave. Add the hash browns and toss to combine. Reserve 1 cup of the hash browns. Hash browns are one of those brilliant recipes that taste amazing, look impressive and take very little effort. A welcome addition to any breakfast or lunch.

4 medium floury potatoes, peeled (like Maris Piper or King Edwards)
1 medium onion
1 egg, beaten
salt and pepper
vegetable oil, for frying

Steps:

  • Coarsely grate the potatoes and onion into a clean tea towel and then squeeze out the excess liquid by twisting the towel. Place the mix in a large bowl.
  • Add the egg, a good couple of pinches of salt and freshly ground black pepper (you need to salt the mixture well otherwise the hash browns can be quite bland). Mix the ingredients well.
  • Heat a good glug of oil in a heavy based frying pan and when the oil is hot (but not smoking), add spoonfuls of the potato mixture into the pan and flatten into patties about 1cm/½in thick. Flip over once browned and crispy - about 2-3 minutes each side.
  • Serve hot as a breakfast or supper side dish. Especially good with bacon and eggs.

Olive oil, about 2 tablespoons

Steps:

  • Place the potatoes into a large pot and cover with cold water. Bring potatoes to a boil and boil until just fork tender, 20-25 minutes. You want there to be a little give in the middle so you can still grate them on a cheese grater.
  • Pre-heat oven to 425 degrees Fahrenheit. Drain the potatoes and let cool until you are able to handle them without burning yourself. Peel the potatoes either with you hands (the skin will come off easily) or with a potato peeler. Grate the potatoes, using the large side of the cheese grater, and place grated potatoes into a large bowl. Add salt and toss the potatoes until it is evenly mixed in. I used about 2 teaspoons but you can salt to taste if you would like.
  • Line a large baking sheet with parchment paper. Use your hands to form the potatoes into patties. You can do whatever shape and thickness you like. I prefer them to be about 1/4 inch thick. Brush the top of each hash brown with a small amount of olive oil and sprinkle with salt. Bake hash browns until browned and crispy on each side, about 50 minutes, flipping once.
  • Enjoy with ketchup or avocado slices, if desired. Recipe makes about 12 hash browns depending on how thick you make them.

1 lb ground sausage ("hot" or "sage" flavored)
1/4 cup chopped onion
2 1/2 cups frozen cubed hash brown potatoes
5 large eggs, lightly beaten
8 ounces shredded sharp cheddar cheese (2 cups)
1 3/4 cups milk
1 cup baking mix
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook sausage and onion in large frying pan over medium-high heat for 5 minutes or until meat crumbles.
  • Stir in hash browns, and cook for 5 to 7 minutes or until sausage is no longer pink and hash browns are lightly browned.

3 cups frozen hash brown potatoes, thawed
½ cup Cheddar cheese
¼ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon canola oil
1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
¼ cup diced red bell pepper
¼ cup diced white onion
1 (4 ounce) can chopped green chilies
12 large eggs

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Lightly spray a muffin tin with cooking spray.
  • In a bowl, mix thawed hash browns, cheese, salt, and pepper. Evenly distribute the mixture in the muffin cups, pressing down the bottoms and up on the sides to create "cups." Bake for 20 minutes, or until golden brown around the edges.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes, until browned, stirring frequently to break up the sausage into small pieces. Drain.
  • In a bowl, mix the cooked Jimmy Dean sausage with the bell pepper, onion, and green chili.
  • Carefully remove the muffin tin from the oven and fill halfway with the sausage and pepper mix. Top each cup with 1 raw egg.
  • Place the muffin tin back in the oven for about 10 minutes, or until the eggs have set to your liking.

  • Preheat the oven to 375 F.
  • Melt the butter in a large skillet set over medium heat.

1 (30 ounce) package frozen hash browns
1 1/2 cups 97% fat free cooked ham
1 1/2 cups shredded colby-monterey jack cheese
12 large eggs
1/2 cup heavy cream
1 cup 1% low-fat milk
1 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350*. Break up chunks of hashbrowns and place in a 9" x 13" casserole dish. Spray top of hashbrowns with cooking spray. Bake for 20 minutes. While hashbrowns are baking, prepare ham and cheese. In a separate bowl, add eggs, cream, milk, onion powder, salt, and pepper. Use an electric mixer and beat for 1 minute. When hashbrowns are done, sprinkle ham evenly on top of hashbrowns, then sprinkle cheese evenly on top of the ham. Pour egg mixture all over and put back in oven for 25 minutes. Pull casserole out and put aluminum foil loosely over top so that it doesn't brown too much. Put back in oven for an additional 15 minutes. Let set for 15 minutes and serve.

Hash browns are usually a breakfast thing--crispy and served with eggs. I love what happens when I combine them with other ingredients and bake into a casserole, mixing all the flavors and textures into one delicious cheesy, crispy and creamy bite!

1 tablespoon unsalted butter, at room temperature
One 16-ounce bag frozen shredded hash brown potatoes, thawed
8 ounces sharp yellow Cheddar, shredded (about 4 cups)
1/2 cup sour cream, plus more for garnish
1 medium yellow onion, coarsely grated
1 large egg
1 1/2 teaspoons sweet paprika
1/4 teaspoon cayenne
1/4 cup plus 2 tablespoons chopped fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. Grease a 9-by-9-inch casserole dish with the butter and set aside.
  • Add the hash browns, 7 ounces (about 3 1/2 cups) of the Cheddar, the sour cream, onion, egg, paprika, cayenne and 1/4 cup of the chopped chives to a large bowl. Season with salt and pepper and stir until combined. Pour into the prepared casserole dish and top with the remaining 1 ounce (1/2 cup) Cheddar.
  • Bake for 45 minutes until the casserole is heated through, browned on top and the sides become crispy. Let cool for 5 minutes. Cut into slices and dollop with more sour cream and the remaining 2 tablespoons chives.

Add onions back to skillet, press into a pancake. Season with salt and pepper.

  • Begin shredding the potatoes by using the largest holes of your box grater. Wash and scrub the potatoes clean. You can peel them or leave the peels on, whichever you prefer. I always peel them when I make shredded hash. Place the shredded potato in a large bowl lined with a couple paper towels. Top with more paper towels and press down hard so the paper towels can absorb a lot of the moisture. You want a lot of the moisture gone, so just keep squeezing and using new paper towels as necessary. Alternatively, you can shred the potatoes onto a kitchen towel, wrap them up, and squeeze them out over the sink.
  • Transfer the shredded potatoes to a plate lined with two layers of paper towels. Cook in the microwave on high for 2 minutes– see notes in my post about why you are doing this. Set the potatoes aside.
  • Place a 10 – 12 inch skillet on the stove. Bacon should always begin in a cold pan, so before you turn the heat on, lay out your three strips on the pan. Then, turn the heat on low. Cook the bacon on both sides just before they become crispy. They will go back onto the stove and then in the oven, so they have more time to cook later in this recipe. Remove from heat, reserve the grease, and set bacon on a plate lined with paper towels to absorb some grease. Once the bacon is slightly cool, you can chop it up.
