OVERNIGHT HAM BREAKFAST STRATA



Overnight Ham Breakfast Strata image

Prep this recipe the night before and bake it in the morning for a sweet and savory breakfast perfect for large groups and holiday crowds

4 cups sweet brioche or challah bread (torn into cubes)
1 lbs Prime Fresh Honey Ham (chopped)
2 cup milk
8 eggs
Salt and pepper
1 tsp Vanilla
1 tsp cinnamon
¼ tsp Nutmeg
5 sprigs fresh thyme (leaves removed)
Dried cranberries
8 oz Monterey jack cheese (shredded)
8 oz Swiss cheese (shredded)

Steps:

  • In an 8x8 high walled baking dish, add the bread.
  • Toss half over the chopped ham into the bread mix.
  • Whisk the milk eggs together in a larger bowl.
  • Add salt and pepper to the mix along with the vanilla, cinnamon, nutmeg, and thyme.
  • Pour over the bread mixture.
  • Add the remaining ham and dried cranberries.
  • Sprinkle with the Monterey Jack and cover with the swiss cheese.
  • Cover and place in fridge overnight.
  • Preheat oven to 350 degrees F.
  • Cover the strata with foil or a tight-fitting lid and bake 20 minutes.
  • Remove foil and bake an additional 25-30 minutes until the eggs are set.
  • Let cool for 5 minutes before slicing and serving warm

12 slices white bread, crusts removed
1 pound fully cooked ham, diced
2 cups shredded cheddar cheese
6 large eggs
3 cups whole milk
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/4 cup butter, melted
1 cup crushed cornflakes

Steps:

  • Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese. Cover with remaining bread. , In a bowl, beat eggs, milk, Worcestershire sauce, mustard, salt, pepper and cayenne. Stir in onion and green pepper; pour over all. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Pour butter over bread; sprinkle with cornflakes. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

10 slices day-old bread, crusts removed and bread cubed
1 medium onion, finely chopped
4 medium fresh mushrooms, finely chopped
1/4 cup butter, cubed
4 cups cheddar cheese, shredded
2 cups cooked ham, cubed
2 tablespoons all-purpose flour
8 eggs
3 cups milk
2 tablespoons prepared mustard
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Place the bread cubes in a greased 13x9x2 inch baking dish.
  • In small skillet, saute onion and mushrooms in butter; spoon over bread.
  • Sprinkle with cheese, ham and flour.
  • In large bowl, whisk the eggs, milk, mustard, garlic powder and salt.
  • Pour over ham and cheese.
  • Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking.
  • Bake, uncovered, at 350 degrees for 60-70 minutes or until a knife inserted near the center comes out clean.
  • Let stand for 10 minutes before serving.

This strata, from my favorite new casserole cookbook, can be rustic down home comfort food or dressed up for a sophisticated brunch dish. The gruyere cheese with the touch of pear, apple and raisins makes this traditional dish something special.

2 tablespoons butter, softened (optional)
8 slices cinnamon raisin bread or 8 slices white bread, 1/2 inch thick, rustic
6 ounces ham, thinly sliced
1/4 cup onion, 1/2 medium, finely chopped
1 small pears or 1 small tart apple, peeled, cored, and chopped
1 cup sharp cheddar cheese or 1 cup gruyere cheese, 4 ounces shredded
2 cups milk
4 eggs
1 1/2 teaspoons Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon black pepper

Steps:

  • Lightly butter 1 side of each bread slice using the 2 tablespoons of softened butter or omit this step if desired.
  • Top 4 slices of bread, buttered side up, evenly with ham and place the other 4 slices of bread buttered side down on top of ham.
  • Quarter each sandwich forming 4 triangles and place in a buttered 2-quart baking dish, arrange triangles pointed sides up.
  • Sprinkle chopped onion, pear or apple, and cheese over triangles.
  • In a medium bowl, add milk, eggs, mustard, Worcestershire sauce, and pepper. Whisk together and carefully pour over triangles in baking dish.
  • Cover with plastic wrap and chill for at least two hours or overnight.
  • In a 350 degree oven, bake covered for 20 minutes. Uncover and bake approximately 25 minutes longer or until puffed and golden brown and a knife inserted in the middle comes out clean. Prep and Cooking time does not include 2-24 hour chilling time.

I got this recipe off of Recipe Link posted by Gladys - and it is SO good and perfect for holiday or anytime! It was so nice to prepare this the night before and be able to just throw it in the oven Christmas morning! Everyone LOVED it!

1 lb bacon (cut into 1/2 inch pieces)
1/2 lb cooked ham (cut into cubes or diced)
1 small onion (chopped)
10 -12 slices white bread (recipe originally said cubed but I left them whole)
2 cups cubed potatoes (I used Ore-Ida western style or can use O'Brien)
3 cups shredded cheese
10 large eggs
3 cups milk
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
salt and pepper

Steps:

  • The NIGHT BEFORE:.
  • In large skillet, cook bacon until crisp.
  • Drain off excess bacon fat, but keep a little in skillet in order to cook onion.
  • Add onion, ham and chopped bacon to skillet and cook until onion is tender and transparent.
  • Butter a large baking dish - I used a glass lasagna dish.
  • Layer the bread to cover bottom of dish - will use probably 5-6 slices or half the amount of bread cubed.
  • Add half of potatoes and cheese.
  • Top with bacon, onion and ham mixture.
  • Add remaining pieces of bread, potatoes and cheese.
  • In large bowl, beat eggs, milk, Worcestershire sauce, mustard, salt and pepper.
  • Pour this mixture evenly over the ingredients in baking dish.
  • Cover and chill OVERNIGHT in the refrigerator.
  • The NEXT MORNING:.
  • Remove strata from the refrigerator and bring to room temp (about 30 minutes prior to baking).
  • Preheat oven to 325°F.
  • Bake uncovered for 1 hour or when knife is inserted near center and comes out clean.
