BREAKFAST CASSEROLE DENVER STYLE
Had this recipe saved for a while from the web. Looks good, and a little different from other breakfast casseroles I have seen (including a bit smaller as it is not in a 9x13 pan as many I see).

Steps:
- Spray 9" pie plate with non-stick cooking spray.
- In large bowl combine eggs, onion, thyme, salt and pepper and beat well.
- Stir in potatoes, cheese, ham and green pepper.
- Pour into pie plate and bake 40 to 45 minutes in preheated 350 degree oven (or until set).
- Garnish with sliced tomato slices and serve.

BAKED DENVER OMELET
My family loves omelets, and this is a quick and easy one. These directions are for a Denver omelet, but experiment with other ingredients to make your favorite.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 10-inch round baking dish.
- Melt butter in a large skillet over medium heat; cook and stir onion and bell pepper until softened, about 5 minutes. Stir in ham and continue cooking until heated through, 5 minutes more.
- Beat eggs and milk in a large bowl. Stir in Cheddar cheese and ham mixture; season with salt and black pepper. Pour mixture into prepared baking dish.
- Bake in preheated oven until eggs are browned and puffy, about 25 minutes. Serve warm.

DENVER OMELETTE CASSEROLE
This is a great breakfast casserole for large groups. I got this from a sweet lady and her cookbook, Betty "Winks" at Cooking. She did cooking demos at a local department store I worked at in Little Rock, AR. I have made it several times and there is never any left. Great for holidays and deer camp. Goes great with hash browns and biscuits! You can also substitute a can of Rotel tomatoes for the stewed tomatoes and bell pepper.

- Sauté the veggies: Heat a large skillet with oil or a generous amount of cooking spray and add sliced mushrooms. Cook over high heat for 3-4 minutes and add both varieties of peppers. Continue cooking over hight heat and stirring occasionally for 2-3 minutes and add the onions and garlic. Cook everything together on high heat for another 2 minutes. Remove from heat. Add the ham and mix well; set aside.
- Bake: Spray a 10 x 8 or similar sized baking dish with cooking spray and transfer the veggie/ham mixture to the baking dish. Then, pour the egg mixture evenly over the veggie/ham mixture. Bake for 30-35 minutes or until cooked through and golden brown on top. Once cooked, rest for a few minutes before slicing.
