Maple Bacon Cheddar Biscuits image

Soft, tender, oh-so-flaky biscuits the whole family will love! Wtih crisp bacon and maple syrup, what could be better, right?

Provided by Chungah Rhee

Categories     appetizer

Yield 12 servings

Number Of Ingredients 10

8 slices bacon, diced
4 cups all-purpose flour
1 cup shredded extra-sharp cheddar cheese
4 teaspoons baking powder
1 1/2 teaspoons kosher salt
1 teaspoon baking soda
3/4 cup unsalted butter, frozen
1 1/2 cups buttermilk
6 tablespoons maple syrup, divided
2 tablespoons melted unsalted butter

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with parchment paper or a silicone baking mat. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate. In a large bowl, combine bacon, flour, cheese, baking powder, salt and baking soda. Grate butter using the large holes of a box grater. Stir into the flour mixture. In a medium bowl, whisk together buttermilk and 4 tablespoons maple syrup. Add to the flour mixture and stir using a rubber spatula until a soft dough forms. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 1 1/4-inch thick rectangle. Cut out 12 rounds using a 2 to 2 1/2-inch biscuit or cookie cutter. Place biscuits onto the prepared baking sheet; place in the freezer for 15 minutes. Remove biscuits from freezer. Place into oven and bake for 15-18 minutes, or until golden brown. In a small bowl, whisk together remaining 2 tablespoons maple syrup and butter. Serve biscuits warm, brushed with the maple-butter mixture.

MAPLE-BACON BISCUITS

The biscuits are fluffy and have both cooked bacon crumbles and a hint of maple syrup. I recommend using nonstick baking sheet.

Time 30m

Yield 12

Number Of Ingredients 12

3 cups all-purpose flour
3 tablespoons white sugar
4 teaspoons baking powder
½ teaspoon cream of tartar
½ teaspoon salt
¾ cup cold butter
1 cup milk
2 tablespoons pure maple syrup
1 egg
½ cup finely chopped cooked bacon
2 tablespoons melted butter, or to taste
2 tablespoons pure maple syrup, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or use a nonstick baking sheet.
  • Combine flour, sugar, baking powder, cream of tartar, and salt in a large bowl. Use a pastry cutter to cut cold butter into flour mixture, until you see small, pea-sized pieces of butter throughout the dough. Add milk, 2 tablespoons maple syrup, and egg and mix just until the ingredients are combined; do not overmix. Dough will be sticky with visible pieces of butter.
  • Turn dough out onto generously floured surface and sprinkle bacon pieces on top. Gently knead dough 10 to 15 times to incorporate bacon, sprinkling with additional flour if the dough is super sticky.
  • Pat the dough out to a 3/4- to 1-inch thickness and cut with a biscuit cutter or glass. Transfer biscuits to the prepared baking sheet.
  • Bake in the preheated oven until golden brown on top, 10 to 15 minutes. Brush the tops with melted butter and remaining maple syrup for extra depth.

MAPLE BACON BISCUITS

Maple Bacon Biscuits image

Breakfast in a biscuit! My husband and I had these during a trip to LA and they were fabulous. I am not a fan of maple, but these biscuits are very good. I just happened across the original recipe while reading food related articles. This recipe makes 2 dozen, however, I freeze 1 1/2 dozen and take them out as needed. Give them a try; I am sure you will love them as well. Adapted from Zoe Nathan of Rustic Canyon

Categories     Breads

Time 1h15m

Yield 2 dozen, 24 serving(s)

Number Of Ingredients 15

1 lb bacon, cut into 1/2 -inch pieces
3 1/2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 lb butter (2 sticks)
3/4 cup maple syrup, plus
2 tablespoons maple syrup
3/4 cup buttermilk, plus
2 tablespoons buttermilk
1 egg yolk
1 egg
1 tablespoon heavy cream
1/8 teaspoon fleur de sel (can substitute with Kosher Salt)

Steps:

  • In a medium frying pan, cook the bacon over medium heat until cooked but not crispy, 10 to 12 minutes, stirring frequently. Remove the bacon to a paper towel-lined plate or pan, to remove excess fat.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • Using a pastry cutter or fork, cut in the diced butter, until it resembles small peas. Stir in the bacon, then one-fourth cup plus 2 tablespoons of maple syrup and the buttermilk until the dough just comes together (it will still be clumpy). Be careful not to overwork the dough.
  • On a lightly floured surface, gently press or roll the dough to 1-inch thickness. Cut the biscuits using a 2-inch round cutter; you should have 24 biscuits. Place 12 biscuits on each of two parchment-lined baking sheets, spaced 2 inches apart. Freeze the trays just until the biscuits are chilled, about 10 minutes. (Here is where I removed 6 biscuits to bake from the freezer and allow the rest to hard freeze. Later, I pack them away for freezing to pull out later.).
  • Heat the oven to 350 degrees. While the biscuits are chilling, prepare the egg wash: In a small bowl, whisk together the egg yolk, egg and cream. Brush the chilled biscuits with egg wash and top each with a pinch of fleur de sel.
  • Bake the biscuits until they just begin to brown, about 25 minutes (you should easily be able to pick the biscuits up off the tray). Remove the tray from the oven. Quickly drizzle 1 teaspoon of the remaining maple syrup over each biscuit, then place the tray back in the oven for 3 minutes more.
  • BAKE FROM FROZEN: Heat oven to 400 degrees. Place desired number of frozen biscuits on a lightly oiled baking sheet. Bake for 20-26 minutes to desired browning is achieved.

BREAKFAST BREADS: BACON MAPLE BISCUITS RECIPE

Breakfast Breads: Bacon Maple Biscuits Recipe image

Provided by SharonE

Number Of Ingredients 8

3 slices (about 3 ounces or 85 grams) bacon
¼ cup (60 ml) maple syrup
1½ cups (190 grams) all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon table salt
Approximately 4 tablespoons (55 grams or ½ stick) unsalted butter, chilled, chopped into small chunks
¼ cup (60 ml) buttermilk

Steps:

  • Fry the bacon until it is crisp. Remove the bacon from the pan and drain it on a few stacked paper towels. Pour the bacon fat into a glass measuring cup so that you can see how much you have. (I usually end up with 2 tablespoons; note if you have more or less, so that you can adjust the butter quantity, as noted below.) Place your measuring cup in the freezer, and freeze until fat is solid. Chop the bacon into small bits, and place it in a small dish. Pour the maple syrup over the bacon and stir; then set the mixture aside. Preheat your oven to 425 degrees. Line a baking sheet with parchment paper. Remove the solidified bacon fat from the freezer. Mix the flour, baking powder, baking soda, and salt in large bowl. Using a pastry blender or your fingertips, rub the chilled bacon fat and 4 tablespoons butter (the amount needed for 2 tablespoons bacon fat; adjust up or down if you ended up with less or more bacon fat) into the dry ingredients until mixture resembles coarse meal. Add the bacon-maple-syrup mixture and the buttermilk, and blend together with a rubber spatula until it is evenly moistened. Knead just a couple times (as little as needed) to form the scraps into a dough. Pat out to 1-inch thickness on a well-floured surface, and cut into biscuits with a 2-inch cutter. Arrange the biscuits on the baking sheet, and bake for 12 to 14 minutes, until they are puffed and golden. Serve warm Do ahead: Biscuits are best the first day they are baked, but they can be prepared in advance. I like to make double and triple batches, freeze them on a tray until they're firm (and won't stick together), and then keep them in a bag in the freezer until I'm ready to bake them. When the need for biscuits arises, you can bake them directly from the freezer and just add a couple minutes to your baking time.

MAPLE BACON MONKEY BREAD

Maple Bacon Monkey Bread image

Sweet and salty monkey bread with a delicious twist - bacon! This recipe was created from two existing recipes, with the idea courtesy of the St. Louis Post Dispatch.

Categories     Breakfast and Brunch     Breakfast Bread Recipes

Time 1h25m

Yield 16

Number Of Ingredients 8

cooking spray
1 (12 ounce) package bacon
½ cup margarine
¾ cup packed dark brown sugar
½ cup maple syrup
¾ cup white sugar
2 teaspoons ground cinnamon
2 (16.3 ounce) packages refrigerated biscuit dough, separated and cut into quarters

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat the inside of a 9-inch fluted tube pan (such as Bundt®) with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble and remove extra fat.
  • Melt margarine in a small saucepan over medium heat; stir in brown sugar and maple syrup. Bring mixture to a boil; cook and stir until mixture begins to foam, about 1 minute. Remove saucepan from heat.
  • Mix white sugar and cinnamon in a resealable plastic bag; add 6 to 8 biscuit pieces at a time and shake until well coated. Pour any remaining sugar-cinnamon mixture into brown sugar mixture. Place saucepan over medium heat and cook and stir until sugar dissolves, 2 to 3 minutes.
  • Sprinkle 1/4 the bacon pieces in the bottom of the tube pan; pour in about 1/4 the brown sugar mixture. Arrange 1 layer of biscuit pieces in the tube pan; sprinkle in 1/4 the bacon pieces. Drizzle about 1/4 the brown sugar mixture over the biscuit pieces. Continue layering until all the ingredients are used, ending with a drizzle of brown sugar mixture.
  • Bake in the preheated oven until biscuits are cooked through, about 35 minutes. Allow to cool in pan, 10 to 20 minutes; invert onto a serving plate.
