BASIC BRAN MUFFINS image

A good home-baked bran muffin makes for a tasty breakfast or snack during the day. You can't go wrong with this basic no-frills recipe.

1 1/2 cups natural wheat bran
1 cup all-purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup raisins
1 cup milk (2%)
1/4 cup canola oil
1/4 cup fancy molasses
1/4 cup packed golden brown sugar
1 large egg

Steps:

  • Preheat oven to 425°F.
  • Combine bran, flour, baking powder, baking soda and salt in a bowl. Stir in raisins. Whisk together milk, oil, molasses, brown sugar and egg in a bowl until blended. Add milk mixture to bran mixture and stir just until combined. Spoon batter into paper-lined or greased muffin cups, filling cups three-quarters full.
  • Bake until a cake tester inserted in centres comes out clean, about 15 minutes. Cool muffins in pan for 5 minutes. Remove from pan and cool on a rack. May be frozen for up to 1 month.

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

1 cup coconut
½ cup nuts (optional)

Steps:

  • Preheat oven to 180°C. Line a muffin tray with liners.
  • Mix the oil, eggs and brown sugar together, until the sugar dissolves.
  • Add the bran, flour, milk and baking soda and baking powder, vanilla essence and mix together.
  • Add raisins, grated carrot, chopped nuts and coconut to the mixture.
  • Add the mixture to muffin tins, make sure the mixture fills the tin about halfway with the muffin mixture.
  • Bake for 15 - 20 minutes.

1 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon
7 ounces Greek yogurt
1/2 cup sugar
1/2 cup honey
2 extra-large eggs, lightly beaten
1 teaspoon pure vanilla extract
2 1/2 cups wheat bran
1 1/2 cups fresh blueberries (8 ounces)

Steps:

  • Preheat the oven to 350 degrees. Brush the top of a muffin pan with vegetable oil and line it with 12 paper liners.
  • Stir together the flour, salt, baking powder, baking soda, and cinnamon in a medium bowl. In a large bowl, whisk together the yogurt, sugar, 1/2 cup vegetable oil, honey, eggs, and vanilla until combined. Add the dry ingredients, stirring just until combined. Gently stir in the wheat bran and blueberries until combined.
  • Scoop the batter into the muffin cups with a rounded 2 1/4-inch ice cream scoop. Bake for 25 to 30 minutes, until the tops are golden brown and a cake tester comes out clean. Allow to cool for 5 minutes and serve warm or at room temperature.

2 cups bran flakes ((for gluten free option, see note above))
3/4 cup milk of choice
1/2 cup yogurt, applesauce, pumpkin, or mashed banana
2 tbsp oil or additional milk of choice
2 tbsp molasses ((or sub pure maple syrup, honey, or agave))
optional 1 tbsp ground flax, for added nutrition
1 1/4 cup spelt, white, or oat flour
1/2 cup sugar ((see note above for sugar free))
1 tbsp baking powder
1/4 tsp salt
optional 1/2 cup raisins

Steps:

  • In a large bowl, soak bran flakes in the milk for half an hour. Then preheat the oven to 400 F. Whisk all remaining ingredients into the bowl to form a batter. Portion into lined muffin tins, and bake on the center rack for 20 minutes. The muffins taste even better the next day, and liners peel off easily after a day as well. View Nutrition Facts

1/2 cup flax meal
1/4 teaspoon sea salt
1/2 teaspoon baking soda
6 dates, pitted
3 large eggs
2 tablespoons olive oil
1/4 cup water
1/4 cup pumpkin seeds
1/4 cup sesame seeds
1/4 cup sunflower seeds
1/2 cup walnuts, chopped
1/2 cup currants

Steps:

  • Preheat the oven to 350°F. Line 11 muffin cups with paper liners.
  • In a large bowl, combine the almond flour, flax meal, salt, and baking soda. In a high-powered blender, puree the dates, eggs, olive oil, and water on high speed until very smooth. Stir the wet ingredients into the almond flour mixture until blended, then stir in the seeds, walnuts, and currants.
  • Scoop 1/4 cup of batter into each prepared muffin cup.
  • Bake for 15 to 20 minutes, until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs attached. Let the muffins cool in the pan for 20 minutes, then serve warm.

Steps:

  • 1. Sift together the bread flour, baking soda, baking powder and milk powder.
  • 2. Add the rest of the dry ingredients to the above and blend well by hand.
  • 3. In a separate bowl; whisk together the eggs and oil until blended.
  • 4. Add the water to the egg mixture and whisk together.
  • 5. Make a well in the centre of the dry ingredients and add the wet ingredients. Fold together just until blended. DO NOT OVERMIX!!!!!
  • 6. Let the mix rest for approx. 10 to 20 min. so the bran has time to soak up the liquid.
  • 7. Grease top of 3 muffin pans. Paper line the muffin cups.
  • 8. Once mix has rested, deposit batter with piping bag evenly over 3 doz. Muffins.
  • 9. Bake muffins at 400F for approx. 20 min.; until the muffin springs back when touched.
  • 10. Remove muffins from tins directly after baking to prevent “sweating”.

1/2 cup molasses
3/4 cup buttermilk
1 can (8 ounces) crushed pineapple in natural juice, undrained
1/2 cup chopped nuts, dates or raisins

Steps:

  • In a bowl, combine the first seven ingredients. Make a well in the center. Combine the egg, oil, molasses, buttermilk and pineapple with juice. Pour into well; mix just until dry ingredients are moistened. Stir in the nuts, dates or raisins. , Fill 18 greased muffin cups two-thirds full. Bake at 400° for 12 minutes or until golden brown.
