1 package active dry yeast
4 1/4 cups all-purpose flour,plus more for dusting
2 tablespoons unsalted butter,softened
2 tablespoons sugar
1 tablespoon fine salt
3 tablespoons unsalted butter,melted
1/2 teaspoon kosher salt
1/8 to 1/4 teaspoon garlic powder
Pinch of dried oregano

Steps:

  • Make the dough: Place 1/4 cup warm water in the bowl of a mixer; sprinkle in the yeast and set aside until foamy, about 5 minutes. Add the flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water; mix with the paddle attachment until a slightly sticky dough forms, 5 minutes.
  • Knead the dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 2-foot-long log; cut into 16 1 1/2-inch-long pieces. Knead each piece slightly and shape into a 7-inch-long breadstick; arrange 2 inches apart on a parchment-lined baking sheet. Cover with a cloth; let rise in a warm spot until almost doubled, about 45 minutes.
  • Preheat the oven to 400 degrees. Make the topping: Brush the breadsticks with 1 1/2 tablespoons of the butter and sprinkle with 1/4 teaspoon kosher salt. Bake until lightly golden, about 15 minutes. Meanwhile, combine the remaining 1/4 teaspoon salt with the garlic powder and oregano. Brush the warm breadsticks with the remaining 1 1/2 tablespoons melted butter and sprinkle with the flavored salt.

SOURDOUGH BREADSTICKS

Wonderful with soups, salads or your favorite pasta dish. The Pizza Sticks make a great snack! This recipe makes a soft flavorful breadstick. I make in my Kitchen Aid however it can easily be made by hand. The amount of flour required will vary with the consistency of the starter and the additions that are added, i.e. pepparoni.

Number Of Ingredients 14

2 cups all-purpose flour
2 cups sourdough starter
1 -4 tablespoon water (as needed)
2 1/2 tablespoons olive oil
1 teaspoon salt
1/2 cup parmesan cheese, grated
3/4 cup pepperoni, diced
6 mozzarella string cheese (split lengthwise)
olive oil or non-stick olive oil flavored cooking spray
parmesan cheese, grated
sea salt
garlic salt
sesame seeds
poppy seed

Steps:

  • Blend together the dry ingredients in mixing bowl; make a well in the center.
  • Pour in sourdough starter and olive oil and mix on low; adding additional water and flour as needed.
  • Optional: Add 1/2 cup grated parmesan cheese.
  • Knead for approximately 6-8 minutes until dough is smooth and elastic.
  • NOTE: For Pizza Bread Sticks: Add pepparoni and grated parmesan cheese once the flour has been incorporated (approximately 3 minutes after kneading started).
  • Remove from bowl and form into a ball and place in a bowl that has been sprayed with non-stick cooking spray, turning once to coat the top.
  • Loosely cover with plastic wrap and let rise in a warm draft-free place until doubled in bulk, about 1 1/2 - 2 hours (depending on your starter and the temperature of your kitchen).
  • Turn dough onto floured work surface and gently pull (do not roll) into a rectangle approximately 16 x 8 x 1/2 inches.
  • Using a pizza cutter, cut dough into 10-12 pieces.
  • For Pizza Breadsticks; Cut each stick slightly wider, place mozzarella sticks in the center of the dough and fold over to totally encase the cheese with dough. (See Note Below).
  • Place sticks 2 inches apart on pizza peel (or back of pizza pan) covered with parchment paper.
  • Cover with a damp towel and allow to rise until doubled, about 45 minutes(this will vary depending on your sourdough starter and kitchen temperature).
  • Place baking stone in oven and preheat to 375 degrees F.
  • Bruh tops of dough with olive oil and sprinkle with preferred topping.
  • Bake for 12-15 minutes until bottoms are light brown.
  • Serve warm.
  • Note: If you plan to freeze or serve later, bake plain,;cool on wire rack and store in plastic ziplock bag. Just before serving, brush tops with butter or olive oil and sprinkle on preferred topping and pop into a hot oven for a couple minutes.

1 teaspoon active dry yeast

1 egg, separated

  • Mix 2 tablespoons sugar with water until dissolved. Add yeast and let sit until foamy, 5 to 10 minutes.
  • Meanwhile, mix remaining sugar, flour, and salt in a large mixing bowl. Combine sourdough starter and egg yolk in a separate bowl. Whisk egg white lightly and reserve in the refrigerator.

Steps:

  • Combine dry ingredients and gradually add milk to form a soft dough.

¼ cup margarine, melted
1 tablespoon garlic salt
¼ cup grated Parmesan cheese

  • Lightly grease one large baking sheet.
  • Divide each roll in half. Roll dough between hands to make a 4-inch long stick. Place sticks on the prepared baking sheet. Brush lightly with egg white or melted butter or margarine. Just breadsticks with a very good flavor. My wife likes 'em unglazed or with garlic butter topping - either way. I enjoy breads made with both buttermilk and sourdough. No sourdough? No problem. A few pinches of yeast in a mixture of flour and water and 6 hours later you have a flavorful base to the recipe. This dough is designed to be a little stiff. Feel free to add a couple of additional tablespoons of buttermilk if desired.

1 teaspoon sugar (or honey-6g)
1 teaspoon yeast (instant-3g)

Steps:

  • If using sourdough, refresh your starter with equal weights flour and water. you'll need 182 g of starter.
  • If using a poolish sponge, mix 91 g water with 91 g flour and add 1/8 teaspoon of yeast. Allow to double in volume at room temperature 6 to 9 hours.
  • Mix sponge with buttermilk and add the dough ingredients.
  • Knead by hand for about 8 minutes and rest for 15 minutes covered.
  • Stretch dough into a rectangle and tri-fold letter style top to bottom, side to side. Cover and rest 15 minutes.
  • Stretch and fold and cover in a straight-sided clear container until doubled in volume about 30 more minutes or a little longer.

1 cup warm water (about 105°F.; 95°F.-100°F. if using a food processor)
a 1/4-ounce package active dry yeast (2 1/2 teaspoons)
3 cups unbleached all-purpose flour
2 teaspoons salt
5 tablespoons fat such as extra-virgin olive oil, vegetable oil, cold unsalted butter (cut into pieces), or cold lard (cut into pieces)
2 to 3 tablespoons cornmeal for dusting pans

Steps:

  • In a small bowl whisk together water and yeast and let stand while combining remaining dough ingredients.
  • Pulse together flour and salt 2 or 3 times to combine. Add oil, butter, or lard and pulse until combined well, 10 to 20 times. Add yeast mixture, scraping all of it from bowl with a rubber spatula, and pulse until dough forms a ball, about 10 times. Let dough rest in processor 5 minutes. Process dough continuously 10 seconds. On a lightly floured surface knead dough just until it forms a smooth ball.
  • In bowl combine flour and salt and mix on low speed until combined. Add oil, butter, or lard and beat until thoroughly combined, about 3 minutes, stopping to scrape bowl and paddle as necessary.   • In a large bowl stir together flour and salt. Add oil, butter, or lard and blend with fingertips or a pastry blender until mixture resembles coarse meal. Add yeast mixture, scraping all of it from bowl with a rubber spatula, and stir until a rough dough forms. On a lightly floured surface knead dough just until it forms a smooth ball, about 5 minutes.
  • Put dough in a lightly greased bowl, turning to coat, and let rise, covered tightly with plastic wrap, at room temperature until doubled in bulk, about 1 hour.
  • On lightly surface knead dough lightly to deflate and form into a ball. Grease bowl again and return dough to bowl, turning to coat. Chill dough, covered tightly with plastic wrap, at least 2 hours and up to 1 day.
  • Preheat oven to 325°F. and lightly dust 3 jelly-roll pans or large baking sheets with cornmeal.
  • Turn dough out onto lightly floured surface, making sure dough emerges from bowl in one piece and doesn't fold. (Folded dough becomes too elastic and is difficult to form into breadsticks.) Pat dough into a 9-inch square and cut in half to form 2 rectangles. Cut each rectangle crosswise into 4 1/2- by 1/2-inch strips for a total of 36 pieces and cover with plastic wrap or kitchen towel to keep them from forming skin.
  • Roll and stretch each piece of dough with palms of hands to form a narrow stick 12 to 15 inches long. (If dough resists, let pieces rest, covered, 5 minutes, and they will roll and stretch easily.) Arrange breadsticks as formed on pans about 1/2 inch apart and let rest 10 minutes. Bake 2 pans of breadsticks in upper and lower thirds of oven, switching their positions halfway through baking, until breadsticks are firm, crisp, and pale golden, 20 to 30 minutes. (Third pan of breadsticks may be kept at room temperature while first 2 pans bake.) Transfer breadsticks to racks and cool. Bake remaining pan of breadsticks in middle of oven and cool. Breadsticks may be kept, loosely covered with plastic wrap or in a paper bag, at room temperature up to 1 week. 1 cup warm water (110 degrees F/45 degrees C)
1 tablespoon white sugar
2 (.25 ounce) packages active dry yeast
3 tablespoons vegetable oil
1 egg
1 teaspoon salt
2 cups all-purpose flour
7 tablespoons white sugar
1 cup warm water (110 degrees F/45 degrees C)
2 ½ cups all-purpose flour, or as needed
½ cup butter, softened
2 tablespoons grated Parmesan cheese
¼ teaspoon garlic powder

Steps:

  • Mix 1 cup warm water, 1 tablespoon sugar, and yeast together in a large bowl; let stand until yeast softens and begins to form a creamy foam, about 5 minutes. Add vegetable oil, egg, salt, 2 cups flour, 7 tablespoons sugar, and 1 cup warm water; beat with an electric mixer until smooth. Stir in remaining 2 1/2 cups flour until dough is soft.
  • Turn dough onto a floured surface; knead until smooth and elastic, 6 to 8 minutes. Place in a greased bowl, turning once to grease the top of dough. Cover and let rise in a warm place until doubled in size, about 40 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 to 3 baking sheets.
  • Punch dough down and turn onto a floured surface. Divide dough into 36 pieces. Shape each piece into a 6-inch rope. Arrange on the prepared baking sheet, 2 inches apart. Cover and let rise until doubled in size, about 25 minutes.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes.
  • Beat butter, Parmesan cheese, and garlic powder together in a bowl until creamy; serve alongside baked breadsticks.

1 (.25 ounce) package active dry yeast
1 teaspoon honey
1 cup warm water (110 degrees F (45 degrees C))
2 ½ cups bread flour
¼ cup freshly grated Parmesan cheese
2 tablespoons olive oil
2 teaspoons Italian seasoning, divided
1 teaspoon salt
¼ cup melted butter
1 teaspoon garlic salt

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line baking pans with parchment paper.
  • Dissolve yeast and honey in warm water in the bowl of a stand mixer. Let sit until creamy, about 10 minutes.
  • Stir flour, Parmesan cheese, olive oil, 1 teaspoon Italian seasoning, and salt into the yeast mixture. Beat until smooth and the dough pulls away from the sides of the bowl. Let rest, about 5 minutes.
  • Turn dough onto a lightly floured surface and pinch off about 3 tablespoons. Roll into a log shape. Place on the prepared baking sheet. Repeat with remaining dough.
