3 cups bread flour
3/4 cup granola cereal (any flavor)
2 tablespoons dry milk
1 teaspoon salt
1 1/2 teaspoons bread machine yeast or 1 1/2 teaspoons active dry yeast

Steps:

  • This recipe makes a 1 1/2 pound loaf.
  • Put ingredients into bread machine as listed, or as recommened by manufacturer.
  • Select basic/white cycle, use Medium or light crust color.
  • Remove baked bread from and cool on rack.

Make healthy Granola to use in trail mix or over yogurt for a healthy breakfast...in your breadmaker! I use about a 1/3 cup scoop of this over about 1/3 cup - 1/2 cup plain natural yogurt for my breakfast every day. I also found this to be an easy, filling and healthy camping breakfast with the individual size yogurts thrown in the cooler. Choose your own combo of nuts and dried fruits...for a special treat, add some dark chocolate chips after it has cooled.

2 1/2 cups oats
1/2 cup raw sesame seeds (shelled)
1/2 cup raw pumpkin seeds (shelled)
1 cup nuts (slivered almonds, walnuts, filberts etc)
3 tablespoons pumpkin butter (or natural peanut butter)
1 teaspoon sea salt
1 teaspoon pure vanilla extract
1/2 cup ground flax seeds (or bran or wheat germ)
1/4 cup honey
3 tablespoons unsweetened applesauce
1 teaspoon cinnamon
2 cups dried fruit (I use rasins and chopped apricots)

Steps:

  • Put all ingredients except the dried fruit in the breadmaker. Set to jam cycle and run. This will produce well-toasted but not burnt granola. If you like it a little less toasted, simply take it out before the time is up.
  • Add dried fruit after the cycle is finished.
  • Tips:.
  • Use a few tablespoons of orange juice concentrate instead of applesauce for an orangy flavor. This is would taste good with Craisins sweetened dried cranberries at the end.
  • If you like crispy, lumpy granola then add 1/2 cup of flour mixed with 1/4 tsp baking soda and a quarter cup of fruit juice concentrate.
  • If you want to use this as more of a trail mix than a yogurt topping it might be better to omit the ground flax.
  • I use a pair of scissors to cut up the apricots, but I'm sure a knife and chopping board would work just as well.

3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar

1 cup raisins

Steps:

  • Preheat oven to 250 degrees F.
  • In a large bowl, combine the oats, nuts, coconut, and brown sugar.
  • In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
  • Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

1 1/2 teaspoons salt
1 package regular active or fast-acting dry yeast

2/3 cup Cascadian Farm® organic oats & honey granola or cinnamon raisin granola

Steps:

  • In large bowl, mix 1 cup of the flour, the salt and yeast. In 1-quart saucepan, heat water, buttermilk, honey and butter over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into flour mixture until blended. Stir in granola. Stir in enough remaining flour to make dough easy to handle.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
  • Grease large cookie sheet with shortening or cooking spray. Shape dough into round loaf, about 5 inches in diameter and 3 inches high. Place on cookie sheet. Cover; let rise in warm place 45 to 60 minutes or until about 7 1/2 inches in diameter.
  • Heat oven to 400°F. Make 2 long cuts in top of dough to resemble one large "+" sign with sharp knife. Brush or spray top of dough with water. Bake 20 to 25 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.

1 ½ cups chopped pecans

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
  • Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
  • Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Using 12 grain flour from Bulk Barn and a recipe that is a variation of the one they provide. (Bulk Barn is a Canadian food retailer specializing in bulk foods.) The list of grains, in the order on the label, is hard whole wheat flour, whole spelt flour, kamul flour, granola oats, ground brown flax seeds, quinoa seed, amaranth seed, barley flour, whole rye flour, dark buckwheat flour, hulled sunflower seeds and millet seeds. If you have a 1½ lb loaf bread machine, reduce the yield below from 2.0 lbs to 1.5 lbs to get the right quantities for your machine. I use a Black & Decker bread machine with a 1½ lb loaf pan. If you want a "lighter" bread, reduce the 12-grain flour by ½ cup and increase the white flour by ½ cup. If you want a "sweeter" tasting bread, replace the brown sugar with honey. (Note: I had to use whole wheat flour in the ingredients to get approximate nutrition values. Note to those who live in the U.S.A.: replace the white flour with bread flour.)

½ beaten egg
¼ cup butter
2 cups all-purpose flour
¼ cup white sugar
1 teaspoon salt
1 teaspoon active dry yeast
8 cups vegetable oil for frying

Steps:

  • Place the milk and egg into the pan of your automatic bread machine, and add the butter, flour, sugar, salt, and yeast in that order, with the yeast on top. Select the dough setting, and start the machine.
  • When the dough cycle is finished, remove the dough to a floured work surface, and knead a few times to collapse all the bubbles. Cut the dough into 16 pieces, cover them with a damp cloth, and allow to rest for 20 minutes.
  • Stretch each ball out into a disk about 1/4 inch thick, and use a small cutter to cut a hole in the center (I used the top of a salt shaker; a bottle top works good too). Let the doughnuts rise on the floured surface until doubled, 30 to 40 minutes.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Gently place a few doughnuts at a time into the hot oil, and fry until they float to the top and turn golden brown, about 3 minutes. Flip the doughnuts over, and fry on the other side. Remove from the oil, and drain on paper towels.
