CUBAN BREADED STEAKS

This is a traditional way of preparing marinated steaks in Cuba, where this dish is known as Bistec Empanizado. I have tried several side dishes with it, and red beans and rice are my favorite. Cooking time does not include the 30-minute marinading.

3 garlic cloves, minced to a paste
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper
2 tablespoons fresh lemon juice
1/2 cup freshly squeezed lime juice
4 top sirloin steaks, about 6 ounces each
3 eggs, beaten
1 cup fine dry breadcrumb
1 tablespoon minced fresh flat-leaf parsley
4 tablespoons light olive oil, for sauteeing
3 tablespoons finely minced white onions, for garnish
3 tablespoons minced fresh flat-leaf parsley, for garnish

Steps:

  • Thoroughly combine all the marinade ingredients in a large shallow dish. Gently pound out the steaks with a flat-sided meat mallet to a thickness of 1/4 inch. Add to the dish and marinate at room temperature for 30 minutes, turning occasionally.
  • Remove the steaks from the marinade and pat dry. Place the eggs in a shallow bowl and mix the bread crumbs with the parsley on a plate. Dredge the steaks first in the egg wash and then in the bread crumbs, coating them well. Heat 2 tablespoons of the oil in a heavy saute pan or skillet and saute 2 steaks at a time over medium-hight heat for about 2 minutes per side for medium-rare, or 3 to 4 minutes per side for medium, and until the bread crumb coating is golden brown. Repeat for the remaining steaks.
  • To serve, place the steaks on serving plates and garnish with a small mound of onion topped with the parsley.

Canola oil, for frying
1 1/2 pounds top sirloin, cut against the grain on the bias into eight 1/8-inch strips or fingers
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
4 eggs
3 cups Italian-style breadcrumbs
1/4 cup smoked almonds
1/4 grated Parmesan
2 tablespoons extra-virgin olive oil
1/4 teaspoon paprika
3 red bell peppers, fire roasted, from a jar
1 clove garlic, smashed
1/2 shallot, chopped
Kosher salt and freshly ground black pepper
4 ounces gorgonzola dolce, at room temperature
Four 6-inch tomato focaccia rolls, split and toasted (or your favorite focaccia bread)
Homemade Hot Giardiniera, recipe follows (or your favorite oil-packed hot giardiniera), finely chopped
1/4 cup table salt
1 cup small-diced carrots
1 cup tiny cauliflower florets
4 to 8 serrano peppers, sliced (depending on heat level desired)
2 cloves garlic, minced
1 stalk celery, diced small
1 red bell pepper, diced small
2 cups canola oil
1 tablespoon dried oregano
1/2 teaspoon freshly ground black pepper

Steps:

  • For the steak: Preheat the oven to 200 degrees F. Fill a large cast-iron skillet with 1 1/2 inches of oil and heat over medium-high heat. Sprinkle the steak strips with salt and pepper. In a shallow bowl, add the flour. In another shallow bowl, lightly beat the eggs. In another shallow bowl, add the breadcrumbs. Lightly coat both sides of the steak in the flour, then in the egg and then in the breadcrumbs.
  • Pan-fry the steaks, however many can fit at a time, until golden brown on both sides, about 3 minutes per side. Remove the steaks from the oil and onto a baking sheet lined with a wire rack or paper towels. Season the fried steaks with salt and keep warm in the oven while you cook the rest, if need be.
  • For the roasted red pepper sauce: Combine the almonds, Parmesan, oil, paprika, bell peppers, garlic and shallot in a food processor and blend until smooth, about 15 seconds. Season, and then place into a small saucepan and simmer for 5 minutes to take away the raw garlic bite and intensify the flavors. Set aside.
  • For the sandwich build: Schmear some of the gorgonzola on the bottom half of the bread. Place the hot breaded steak on the cheese, then the roasted red pepper sauce and then the giardiniera. Repeat with the remaining ingredients. Cut in half and serve with extra red pepper sauce for smothering.
  • Combine 2 cups water and the salt in a glass or non-reactive bowl. Mix until the salt is dissolved. Add the carrots, cauliflower, serranos, garlic, celery and bell pepper to the salt water and stir to combine. Cover and refrigerate overnight.
  • Day 2, drain and rinse the vegetables. In a clean bowl, mix together the oil with the oregano and pepper. Add the vegetables and mix to combine. Allow to marinate overnight. Giardiniera will only get better with time. After 2 days at the most in the bowl, you can place in air-tight mason jars and keep in the fridge for at least 2 to 3 weeks.

COUNTRY FRIED ROUND STEAK

2 teaspoons salt
1 teaspoon granulated garlic
1 teaspoon ground black pepper
1 teaspoon onion powder
Two (5-ounce) Black Angus top round steaks
Buttermilk
4 ounces whole butter
Country Gravy, recipe follows
1 medium garlic clove, minced
2 ounces bacon grease
4 ounces all-purpose flour
1 cup heavy cream
1 cup water
Black pepper, to taste
Kosher salt, to taste

Steps:

  • Mix flour, salt, garlic, pepper and onion powder together to make seasoned flour mixture.
  • Tenderize steaks by running through a meat tenderizer or beating with a hand meat tenderizer. Soak in buttermilk briefly and then dip in seasoned flour mixture.
  • Heat butter in saute pan on medium high heat. Place breaded steaks in pan and cook until golden brown and tender. Approximately 10 minutes per side.
  • Serve with Country Gravy.
  • Brown garlic in the bacon grease. Stir in flour until smooth. Let roux (grease and flour) cook lightly for a couple of minutes stirring frequently. Add cream and water stirring constantly. Simmer until gravy thickens and is hot. Season with salt and pepper, to taste.

2 eggs
3 tablespoons water
4 cups dry bread crumbs, or more as needed
1 tablespoon garlic powder
1 tablespoon salt
½ cup grated Parmesan cheese
½ cup vegetable oil, or as needed

Steps:

  • Place the beef roast into the freezer for several hours, until very firm and almost frozen. Slice the beef about 1/8 inch thick across the grain. You can also ask the butcher to slice it very thinly for you.
  • Whisk the eggs and water together in a bowl. Spread the bread crumbs out onto a large sheet of aluminum foil, and sprinkle with garlic powder, salt, and Parmesan cheese. Mix all the crumb ingredients together until well combined. Dip each piece of beef into the egg mixture, then thoroughly coat with crumbs. Place the coated slices onto a sheet of foil on a baking sheet, and separate them with waxed paper as you dip and coat the beef.
  • Heat the vegetable oil in a large, heavy skillet until shimmering, and pan-fry the beef slices until golden brown, about 2 minutes on the first side and 1 minute on the second side. Fry 2 or 3 slices per batch.

1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cut into 1/4 inch slices
1 cup all-purpose flour
2 eggs, beaten
2 cups Italian seasoned bread crumbs

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

8 half-pound lamb steaks (can use 8 shoulder chops)
1 garlic clove
1 teaspoon salt

Steps:

  • Trim excess fat from the steaks or chops. Crush garlic and rub over meat; season pieces with salt and pepper and roll in flour. Dip in eggs, then in bread crumbs. Brown quickly on both sides in the hot shortening. Turn heat low and continue cooking slowly, covered, until meat is tender, about 20 minutes.

I ususally ask for tomato and avocado slices with my steak. Delish! Allow the meat to marinate in special mixture overnight. These make wonderful sandwiches and it can also be eaten cold.
