4 skinless, boneless chicken breasts, cut into cubes
1 cup buttermilk
½ cup self-rising flour, or as needed
¼ teaspoon seasoned salt (such as Season-All®), or to taste
salt and ground black pepper to taste
3 tablespoons vegetable oil, or more as needed
1 (16 ounce) jar picante sauce

Steps:

  • Combine chicken and buttermilk in a bowl. Refrigerate 20 to 30 minutes.
  • Mix flour, seasoned salt, salt, and black pepper in a bowl.
  • Drain buttermilk from chicken and softly pat dry with paper towel. Mix chicken in flour mixture until well coated on all sides.
  • Heat oil in a saucepan over medium heat.
  • Fry chicken in 2 batches in the hot oil until no longer pink in the center and the juices run clear, about 10 minutes per batch; drain on a plate lined with paper towel.
  • Rinse saucepan and return to medium heat. Stir chicken and picante sauce together in the pan; cook until hot, about 5 minutes.

1 jar (16 ounces) picante sauce
3 tablespoons brown sugar
1 tablespoon prepared mustard
Hot cooked rice, optional

Steps:

  • Place chicken in a greased shallow 2-qt. baking dish. In a small bowl, combine the picante sauce, brown sugar and mustard; pour over chicken. , Bake, uncovered, at 400° for 30-35 minutes or a thermometer reads 170°. Serve with rice if desired.

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Steps:

  • Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
  • In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
  • Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

2 split (1 whole) boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
1 extra-large egg
1/2 tablespoon water
3/4 cup seasoned dry bread crumbs
Good olive oil
3 tablespoons unsalted butter, room temperature, divided
1/3 cup freshly squeezed lemon juice (2 lemons), lemon halves reserved
1/2 cup dry white wine
Sliced lemon, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • Place each chicken breast between 2 sheets of parchment paper or plastic wrap and pound out to 1/4-inch thick. Sprinkle both sides with salt and pepper.
  • Mix the flour, 1/2 teaspoon salt, and 1/4 teaspoon of pepper in a shallow plate. In a second plate, beat the egg and 1/2 tablespoon of water together. Place the bread crumbs on a third plate. Dip each chicken breast first in the flour, shake off the excess, and then dip in the egg and bread crumb mixtures.
  • Heat 1 tablespoon of olive oil in a large saute pan over medium to medium-low heat. Add the chicken breasts and cook for 2 minutes on each side, until browned. Place them on the sheet pan and allow them to bake for 5 to 10 minutes while you make the sauce.
  • For the sauce, wipe out the saute pan with a dry paper towel. Over medium heat, melt 1 tablespoon of the butter and then add the lemon juice, wine, the reserved lemon halves, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Boil over high heat until reduced in half, about 2 minutes. Off the heat, add the remaining 2 tablespoons of butter and swirl to combine. Discard the lemon halves and serve 1 chicken breast on each plate. Spoon on the sauce and serve with a slice of lemon and a sprinkling of fresh parsley.

2 large boneless skinless chicken breasts (about 8 ounces each)
Kosher salt and freshly ground black pepper
1 large lemon
1/4 cup all-purpose flour
1 tablespoon olive oil
6 tablespoons unsalted butter
5 large cloves garlic, thinly sliced
1/2 cup dry white wine
1/4 cup brined capers, drained
1/4 cup flat-leaf parsley leaves, roughly chopped

Steps:

  • Set a wire rack inside a rimmed baking sheet. Cut two 12-inch sheets of plastic wrap.
  • Cut the chicken breasts in half lengthwise, making 4 roughly equal pieces; they should look like large chicken tenders. Place one sheet of plastic on a clean cutting board. Put a chicken piece in the center of the plastic and top with the other sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4-inch thick and 6 to 8 inches long. Transfer to the wire rack. Repeat with the remaining chicken, one piece at a time. Liberally sprinkle with salt and pepper. Refrigerate the chicken cutlets uncovered for 1 hour.
  • Remove the zest from half of the lemon in wide strips with a vegetable peeler, leaving the bitter white pith behind. Halve and juice the whole lemon.
  • Put the flour in a shallow bowl or plate. Dredge the chicken in the flour, shaking off any excess. Heat the oil in a large nonstick skillet over medium-high heat until very hot, about 1 minute. Add 1 tablespoon of the butter and melt. Working in 2 batches, cook the cutlets, adding another tablespoon of butter to the skillet between batches, until golden brown, about 2 minutes per side (it's ok if the chicken is not completely cooked through, it will finish cooking in the sauce). Transfer the cutlets to a plate.
  • Reduce the heat to medium. Add the garlic and 1 tablespoon of the butter to the skillet and cook until the garlic is tender and fragrant, about 1 minute. Add the wine and cook until almost completely evaporated, about 4 minutes. Add the capers, lemon zest, 2 tablespoons of the lemon juice, 1/4 cup water and the cutlets with any accumulated juices and bring to a boil. Add the remaining 3 tablespoons butter. Turn the chicken to coat in the sauce and cook until the butter melts and the sauce thickens slightly. Garnish with chopped parsley.

1 tablespoon water
1/2 cup Progresso™ dry bread crumbs (any flavor)
1/2 teaspoon salt

1/4 cup Gold Medal™ all-purpose flour
2 tablespoons butter or margarine
2 tablespoons vegetable oil
2 tablespoons lemon juice

Steps:

  • Flatten chicken to 1/4-inch thickness between plastic wrap or waxed paper. Mix egg and water. Mix bread crumbs, salt, pepper and garlic powder. Coat chicken with flour. Dip into egg mixture; coat with bread crumb mixture.

1/4 cup Dijon mustard
1 lime, juice of
6 boneless chicken breasts
2 tablespoons butter

Steps:

  • Mix the salsa, mustard and lime juice in a large bowl or ziploc bag.
  • Add the chicken, turning to coat with the marinade. Let it marinate in refrigerator at least 30 minutes.
  • Melt butter in a large skillet over medium heat until foamy.
  • Drain chicken saving the marinade. Add chicken to skillet in a single layer. Cook 10-15 minutes till the chicken is a light brown on both sides. Add the reserved marinade to skillet and cook 5-10 minutes or until chicken is done.

¼ cup grated Parmesan cheese
1 teaspoon cantanzaro herbs (such as Savory Spice Shop®)
1 teaspoon garlic salt, divided
1 pound boneless, skinless chicken breasts, sliced horizontally
½ teaspoon black pepper
½ cup chicken bone broth
¼ cup lemon juice, or to taste
2 tablespoons capers
¼ cup dry white wine, such as Pinot Grigio
1 lemon, sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Add butter to a large cast iron skillet and place into the oven to allow butter to melt - careful not to burn the butter.
  • In a shallow dish combine flour, Parmesan cheese, cantanzaro herbs, and 1/2 teaspoon garlic salt. Mix to combine.
  • Season chicken with remaining 1/2 teaspoon garlic salt and black pepper. Dredge in the flour mixture to coat evenly.

4 boneless skinless chicken breast halves
1 teaspoon seasoning salt, to taste (I use SeasonAll)
2 tablespoons butter
1 onion
1 clove garlic, minced
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
1 cup picante sauce (your favorite - home made or store bought like Pace - the heat of this sauce determines the heat of)

Steps:

  • Pound the chicken breast halves with a meat mallet until uniformly about 1/4" thick.
  • Sprinkle them with a generous coating of seasoned salt on one side.
  • Melt butter in a skillet and saute the chicken breast halves until golden brown, about 3- 5 minutes per side.
  • Slice onion into 1/4" thick slices and quarter the slices.
  • Cut all peppers into strips about 1/4" wide.
  • Add onion, garlic and peppers to the sauteed chicken breasts and saute for a few minutes.
  • Add the picante sauce over the top of the chicken and vegetables.
  • Cover and simmer for about 5- 10 minutes, until vegetables are tender.

3/4 cup sour cream
3/4 cup salsa
1 cup mozzarella cheese, shredded
pepper, to taste
salt, to taste

Steps:

  • Preheat oven to 375 degrees.
  • Place thawed chicken in greased 9" x 13" baking dish and lightly salt/pepper, if desired.
  • Bake chicken for 30 minutes and remove.
  • Place sour cream on chicken and spread over breast (be sure to not place spoon back into container after touching chicken).
  • Spread salsa over chicken.
  • Bake another 10-15 minutes.
  • After baking is complete, sprinkle mozzarella over each breast and place back in oven for 1 minute.
  • (I found that the cheese browns nicely if you run it under the broiler for a short time.).
