CRISPY BAKED CATFISH

Steps:
- Heat oven to 450°. Spray broiler pan rack with cooking spray. If fish fillets are large, cut into 4 serving pieces.
- Mix cornmeal, bread crumbs, chili powder, paprika, garlic salt and pepper. Lightly brush dressing on all sides of fish. Coat fish with cornmeal mixture.
- Place fish on rack in broiler pan. Bake uncovered 15 to 18 minutes or until fish flakes easily with fork.

CATFISH BREAD
Steps:
- Preheat the oven to 350 degrees F.
- Saute the onion, celery, and pepper with 3 tablespoons of the margarine. When wilted, add the catfish chunks and the remaining 1 tablespoon margarine together with liquid crab boil and mix well. As catfish cooks, break up fish with a cooking spoon. Set catfish mixture aside.
- In a microwave oven, melt cream cheese on HIGH for 1 minute. Add ketchup, parsley, and pepper and mix well. Fold cream cheese mixture into catfish mixture and add Italian bread crumbs.
- Microwave mixture on HIGH for 8 minutes, stirring once halfway through cooking. Cut French bread lengthwise. Place on cookie sheet, sliced side up. Spread catfish mixture on each length of bread. Sprinkle with mozzarella and cheddar mixture.
- Bake for 10 minutes, or until cheese is melted and bubbly. Cut into individual slices. Serve and enjoy!
BAKED BREADED YUMMY CATFISH
I don't know how original this is, but my husband loves it. It is full of flavor. We serve it with a baked sweet potatoe and sauteed spinach and garlic.

Steps:
- Line baking dish with foil and spray with cooking spray.
- Combine egg and Italian dressing in shallow dish.
- Combine breadcrumbs, cheese, pepper, and garlic powder in second shallow dish.
- Dip fish in egg mixture, followed by bread crumb mixture.
- Drizzle remaining egg mixture over fish.
- Add remaining breadcrumbs to fish.
- Coat lightly with cooking spray.
- Bake at 350 degrees for forty-five minutes.

BAKED CATFISH
Steps:
- Season fish with salt and pepper. Place fish in oval casserole dish. Melt 4 ounces butter in small sauce pan. Add wine and remaining ingredients, except the paprika. Simmer about 2 minutes. Remove from heat and spoon over fish. Now sprinkle paprika over fish. Bake fish in 375 degree oven for 10 to 12 minutes, or until the fish is done.

- Dredge filets in butter.
- Dredge filets in bread crumbs.

- . * Preheat oven to 425°F Coat a large nonstick baking sheet with cooking spray.
- * In a shallow soup bowl, combine cornmeal, paprika, thyme, salt, celery seeds, onion powder, garlic powder and pepper. Pour milk into another shallow soup bowl.
- * Dredge fillets first in milk and then in cornmeal mixture, coating both sides and pressing cornmeal mixture gently to adhere. Place coated fillets on baking sheet and lightly spray each with cooking spray.

BAKED CATFISH FILLETS
These are sooo yummy! They taste almost like fried catfish because of the cornmeal, and come out nice and crispy on the outside and soft on the inside. The ranch dressing adds a real zing, too!

- Preheat oven to 425 degrees.
- Whisk wet ingredients together in a bowl and combine dry ingredients on a piece of wax paper.
- Spray a glass baking dish with Pam or olive oil.
- Rinse catfish in cool water and DRY THOROUGHLY with paper towels.
- Dip each catfish fillet in wet ingredients and dredge in breading to coat. Just a nice, light covering is enough. Don't try to completely cover in breading.
- Place catfish fillets in glass baking dish & refrigerate for 10 minutes. This step, plus making sure the fillets are very dry before dipping in the egg will help the breading stick to the fish and NOT the pan!
- Bake at 425 for 10 to 12 minutes per side.
- Serve with lemon wedges for garnish.

- Preheat an oven to 425 degrees F (220 degrees C). Grease a 13x9 glass baking dish with the oil, and set aside.
- Rinse the catfish fillets, and pat dry. In a shallow bowl, combine the cornmeal, creole seasoning, paprika, sugar, and black pepper. Combine the eggs and hot sauce or water in a another bowl. Dip the fillets in the egg mixture, dredge in the cornmeal mixture, and arrange in the baking pan.
- Bake for 15 minutes, or until cooked through and golden brown. Turn once during cooking. Place catfish on a paper-towel lined plate, and serve immediately with additional hot sauce.

Where did this recipe come from? Well, I kinds' made it up. I had a bunch of baked fish recipes, and just kind of took a bit from each of them, added a tad or two of my own, and had baked catfish that was easy, and yummy.

Steps:
- Mix together all ingredients except the fish and bread crumbs.
- Wash & dry fish.
- Toss fish in oil mixture.
- Lightly dip one side of fish in bread crumbs.
- Place on cookie sheet (crumb side up) and bake at 350 for about 15-17 minutes or until done.
- Serve with Rosemary Baked Potato Wedges, Green Salad & Mango Salsa for a healthy meal.
