Hot-chocolate mix is a wintertime staple. A homemade version is delicious and natural-containing only cocoa, sugar, and salt-and especially economical compared with store-bought mixes.

- In a large bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store the mixture in an airtight container.
- For individual servings, pour 1 cup whole milk into a microwave-safe mug, and microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. For a larger batch of cocoa, warm the milk in a saucepan set over medium-low heat, taking care not to let the milk boil; as it warms, stir in 2 tablespoons of mix for each cup of milk.

- Heat all but 2 tablespoons of the milk and the cream in a saucepan. Do not allow it to boil.
- In a soup bowl mix the cocoa, sugar, vanilla, cinnamon and the reserved milk and cream. Pour the cocoa mixture into the hot milk and cream blending well. Return mixture to bowl and garnish with mini marshmallows or graham cracker bears.

- Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 12 regular-size muffin cups.
- In large bowl, beat cake mix, water, oil and egg with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.
- Bake 17 to 22 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes.
- In small bowl, mix frosting and marshmallow creme. Spoon into small resealable food-storage plastic bag; seal bag. Cut 3/8-inch tip off 1 corner of bag. (Or spoon mixture onto cupcakes instead of piping.)
- Pipe 3 small dollops of frosting mixture on top of each cupcake to look like melted marshmallows. Sprinkle with cocoa. Press pretzel half into side of each cupcake for cup handle. Store loosely covered.

- 1. Place hot cocoa package, Hershey's Kisses and mini marshmallows in a plastic bag or cellophane wrap and put in the bottom of a mug. Add the candy cane stick or tape it to the outside of the mug. Then add one of the Snowman Soup poems. You can either tie it to the candy cane or stuff it inside the cup. That's it! Your gift is ready!
- 2. Snowman Soup Poem: Frosty has melted. It's sad but true. But he left a gift for you. Little white snowballs And two dark eyes. And a nose that's quite tasty. Just give it a try. Pour the package in the mug. And add the eyes and nose. Use the candy stick to stir. Then sip it very slow!
THE BEST HOT CHOCOLATE
Steps:
- Place milk and half-and-half in a saucepan and heat to a simmer over medium heat.
- Meanwhile, stir together the cocoa powder, sugar, and cinnamon. A few teaspoons at a time, stir the hot milk into the cocoa mixture to make a smooth paste. Scrape the cocoa mixture into the saucepan with the milk and simmer 2 minutes; do not let it boil. Stir in the vanilla and keep warm in a thermos.
- Pour into small serving cups and place 4 mini-marshmallows on each serving or spritz them with whipped cream. Serve immediately.
- Make the marshmallows: Combine the water, the corn syrup, and the sugar in a saucepan fitted with a candy thermometer. Bring to a boil and boil to "soft-ball" stage, or about 235 degrees F.
- Meanwhile, whip the egg whites until soft peaks form. Sprinkle the gelatin over the 2 tablespoons water and let sponge.
- When the syrup reaches 235 degrees F, remove it from the heat, add the gelatin, and mix. Pour the syrup into the whipped egg whites. Add the vanilla and continue whipping until stiff.
- Cover a sheet pan with parchment paper then sprinkle it with powdered sugar. Pour the marshmallow onto the pan and spread it out. Let cool about 2 hours then with a pair of scissors dipped in cornstarch, cut out football shapes.

- In a small bowl, stir 1/2 cup milk and the flour until smooth.
- In a saucepan bring 4 1/2 cups milk to a simmer over medium heat. Place chocolate in a small bowl, and ladle 1 cup of the simmering milk over the chocolate and whisk to dissolve it. Stir the dissolved chocolate into the simmering milk.
- Slowly add the flour mixture to milk in the saucepan, then stir in sugar, butter, and cinnamon, and return to the simmer. Cook, stirring until thick and smooth - about 5 minutes.
- Remove from heat, and let rest about a minute. Ladle soup into warm bowls, and pass the brioche, panettone, or cookies for dunking into the soup.

- Make a cornflour slurry by mixing the cornflour with the COLD milk. Stir well to dilute.
- Put the chocolate chips in a bowl.
- Heat the milk over low heat until small bubbles appear around the edge of the saucepan. Do not boil!
- Pour the hot milk over the chocolate chips and leave for a couple of minutes. Add the vanilla paste.
- Using a small balloon whisk, stir the chocolate slowly starting from the centre and slowly increasing your range of motion. Stir until the chocolate is melted and smooth.
- Stir in the cornflour slurry and transfer back into the saucepan.
- Gently heat the chocolate soup, stirring with a whisk, until it starts to thicken.
- Remove from the heat and divide between two small bowls.
- Garnish your soup with heart-shaped candy, freeze-dried raspberry powder, fresh berries, sweet croutons, small cookie shapes or sprinkles.
- Serve while still warm.

SPICY TOMATO CHOCOLATE SOUP

- Heat oil and butter in a stock pot over medium high heat until butter melts.
- Add onion and sauté until translucent, approx. 5 mins. Add garlic, carrots, celery and sun dried tomatoes.
- Season with salt, pepper, harissa, paprika, cumin and coriander. Saute for a couple of minute to toast spices and soften vegetables.
- Add wine and continue cooking on high until all of the liquid has evaporated. Add tomatoes and chicken broth. Bring to a boil. Cover and reduce heat to a simmer. Cook for 45 mins or until the vegetables are tender.
- Pass soup through a food mill or blender to puree and remove any large particles. Return soup to pot and place over low heat.
- Add parsley and cilantro. Add chocolate and enough honey to balance acidity. Adjust seasoning to taste.
- Serve hot, garnished with queso fresco, fresh goat cheese or crème fraiche.
