- Melt butter in 4-quart Dutch oven over medium-high heat. Cook celery and onion in butter 6 to 8 minutes, stirring occasionally, until tender. Remove Dutch oven from the heat.
- Gently toss celery mixture and remaining ingredients, using spoon, until bread cubes are evenly coated.

BETTY CROCKER'S CLASSIC BREAD TURKEY STUFFING
This is the stuffing that my mom makes very Thanksgiving, and it's absolutely divine. The holiday just isn't the same without the taste of this dish. The day after it's cooked, it's wonderful cold, too! This recipe makes enough for a 12-pound turkey, about three quarts of stuffing.

Steps:
- In a large, heavy skillet over medium heat melt the butter, then sauté the onion and celery (and mushroom, if using) until the onion is soft, stirring occasionally.
- Stir in the salt, pepper, and sage and cook for an additional 3 minutes.
- Place the bread cubes into a large, deep bowl.
- Pour 1/4 cup of the butter/celery mixture over the cubes and toss well, then repeat steps until all of the butter mixture is used.
- Toss the cubes thoroughly to coat.
- (Regarding the optional chicken broth: for dry stuffing, add little or no liquid; for moist stuffing mix in lightly with fork just enough chicken broth to moisten dry crumbs.) Let cool and use as stuffing for the turkey.
- We've made this stuffing in the crockpot, as well, adding the chicken broth for moistness.

- Note: regardling the amount of salt - yes, the amount listed above is correct and is what is listed in the original Betty Crocker recipe. When the butter mixture is first added to the bread, if you taste it at this point it might seem salty (because it is sitting right on the surface of the bread) but remember that the liquid and butter soaks into the bread and redistributes evenly. Also, this recipe, being from the 1950s, is specifically for cooking *inside* the turkey, which a lot of people no longer do, and again the salt will redistribute from the juices in the meat. If you use a crockpot for cooking your stuffing, I'd recommend reducing the amount of salt.
- Note #2: again, regarding the salt. You're going to have to decide for yourself about the salt. Having eaten this recipe for every year of my life I know it tastes wonderful as it's written. But that's just me.

- Cut a pocket in each chop by slicing almost to the bone. Fill each chop with 1/2 cup stuffing; secure with toothpicks if necessary. BAKED PORK CHOPS AND STUFFING

- Preheat oven to 350° F.
- Sprinkle pork chops lightly with salt and pepper. Heat oil in a large skillet over medium-high heat. Add pork chops and brown both sides. Do not cook completely. Transfer browned pork chops to an oven safe baking pan or large cast iron skillet.
- In a medium bowl, fold together bread crumbs, onion, butter, 1/4 cup of the water, and sage. Place a mound of stuffing on each chop.
- In another medium bowl, blend cream of mushroom soup, remaining 1/3 cup of water, and soy sauce. Pour evenly over the stuffing. Sprinkle with freshly ground black pepper.
- Place in oven and bake for 1-1/2 to 2 hours, or until pork chops are very tender. Bake thinner (1/2") pork chops for a minimum of 1-1/2 hours, and add time for thicker pork chops. If using especially thick pork chops, I would recommend at least 2 hours of bake time, plus covering the dish for the first 30 minutes in the oven. The goal is to have fork-tender pork chops, and thicker chops will definitely take longer to get tender.

- Tear bread into pieces into a large bowl. Add Salt, Thyme, Sage Black Pepper into bread.
- Chop onion and Celery (rough chop). Brown over medium heat in skillet with butter. Let cook down and until translucent 8-10 minutes. Add chopped garlic. Add chopped parsley and stir at end of cooking.
- Take off of heat and let cool in pan.
- Mix eggs, soy and milk, stir with wisk.
- Put onion and celery mixture into container and mix with hand food processor until smooth.
- Mix vegetable mixture with egg and milk mixture.
- Poor over bread, mix with hands, it may be a little wet and loose.
- Put in greased 13 x 9 pan or in between pork chops.
- Bake at 350 degrees for an hour and fifteen minutes.

STUFFED PORK CHOPS

- If the pork chops do not already have a pocket cut in them, slice the meaty side of the pork chop in half almost to the bone so that it creates a pocket.
- On both sides, sprinkle the pork chops with salt and pepper.
- Heat the oil in a skillet over medium heat. Once the oil is hot, sear the pork chop on both sides just until golden brown.
- Remove the pork chops to a plate.
- Preheat the oven to 350 degrees Fahrenheit.
- In a skillet, melt the butter. Add the celery and onion. Saute the celery and onion until tender, about 10 minutes.
- In a large bowl, combine the bread cubes, butter mixture and the remaining stuffing ingredients. Mix well.
- Stuff about 1/2 cup to 3/4 cup stuffing in each pork chop so that it fills the pork chops and also sticks out a little bit. This will give the pork chop a pretty look!
- Place the pork chops in a baking dish, either 9x13" or a bit smaller.
- Arrange the remaining stuffing around the pork chops.
- Bake the pork chops for about 20-25 minutes or until the internal temperature of the pork reaches 145 degrees Fahrenheit. At this temperature there will be a blush of pink in the pork which means they will be nice and juicy!
- Allow the chops to rest for 3-4 minutes, then serve.
BAKED PORK CHOPS AND STUFFING
This is my idea of comfort food! This recipe was given to me by my mom. (I'm not sure where she got it from!) Sometimes I use chicken instead of pork, and it's still good!

- Preheat oven to 350.
- Grease the bottom of a non-stick pan with a small piece of pork fat from one of the chops.
- Brown chops on both sides over medium heat.
- Place in a single layer in a shallow 2 or 2 1/2 quart casserole. (I use an 8x8 inch square pan.).
- Mix together bread cubes, onion, butter, 2T. water and poultry seasoning. Spread over the pork chops.

- Bring brine ingredients to a boil in a small saucepan. Turn off heat and cool. Add up to 10 ice cubes if you are in a hurry.
- Place pork chops in cooled brine to marinate from eight hours to overnight in the fridge.
- Remove pork chops from brine and discard brining liquid. Pat pork chops dry.
- Cut the bread into 1/2-inch cubes. In a cup, mix egg, cream and final chicken broth together.
- Gather remaining ingredients as the dish goes together quickly once started. You will need two good-sized frying pans, one for the pork chops and one for the dressing.
- Preheat pan on med-hi heat, add olive oil and butter and fry pork chops 3-4 minutes per side. Remove from heat and place a tightly-fitted lid on pork chops. Don't worry, they aren't supposed to be done yet.
- Now, in the second pan, sauté the onion and raisins in butter over medium-hi heat for a few minutes. Add cilantro and cubed bread and sauté for a couple more minutes.
- Remove from heat and stir in egg mixture a little at a time, so that you don't end up with scrambled eggs. When soaked in, return to heat and cook for a few more minutes.
- At this point, the pork chops will have finished cooking. Serve the pork chops with the stuffing on the side.
- Note: Please use the second pan so that the dressing will compliment the pork chops rather than tasting just like them. It's worth washing the second pan!

- Preheat oven to 350.
- Prepare stuffing mix according to package instructions (or make your own recipe).
- After the stuffing is prepared, add anything you want to the stuffing mix (apples, cranberries, mushrooms, olives, etc.).
- Scramble the eggs and add sea salt and freshly ground pepper, to taste. Place in a shallow dish.
- Place flour in another shallow dish.
- Place breadcrumbs in another shallow dish. Add garlic powder, seasoned salt and dill weed. Combine well.

- Heat olive oil in a small pan over medium heat until it sizzles if anything is put into it.
- Dip chops in flour, then eggs, then breadcrumb mixture.
- Brown chops (one at a time) on all sides to get breading to stick to chops and stay crisp while baking.
- Transfer chops from pan to glass baking dish.
- Cover and bake 35-40 minutes.
- Serve with extra any leftover stuffing.
