BETTY CROCKER'S CLASSIC BREAD TURKEY STUFFING

Betty Crocker's Classic Bread Turkey Stuffing image

This is the stuffing that my mom makes very Thanksgiving, and it's absolutely divine. The holiday just isn't the same without the taste of this dish. The day after it's cooked, it's wonderful cold, too! This recipe makes enough for a 12-pound turkey, about three quarts of stuffing.

Provided by Julesong

Categories     Chicken

Time 15m

Yield 3 quarts

Number Of Ingredients 9

12 cups bread, cubes (Mom makes her own sometimes)
1 cup unsalted butter
3/4 cup minced onion
1 1/2 cups chopped celery, stalks and leaves
1 cup chopped mushroom (optional)
2 teaspoons salt
1 teaspoon pepper
1 tablespoon ground sage
no-salt-added chicken broth (optional)

Steps:

  • In a large, heavy skillet over medium heat melt the butter, then sauté the onion and celery (and mushroom, if using) until the onion is soft, stirring occasionally.
  • Stir in the salt, pepper, and sage and cook for an additional 3 minutes.
  • Place the bread cubes into a large, deep bowl.
  • Pour 1/4 cup of the butter/celery mixture over the cubes and toss well, then repeat steps until all of the butter mixture is used.
  • Toss the cubes thoroughly to coat.
  • (Regarding the optional chicken broth: for dry stuffing, add little or no liquid; for moist stuffing mix in lightly with fork just enough chicken broth to moisten dry crumbs.) Let cool and use as stuffing for the turkey.
  • We've made this stuffing in the crockpot, as well, adding the chicken broth for moistness.
  • Adapted from Betty Crocker's Picture Cook Book, circa 1950.
  • Note: regardling the amount of salt - yes, the amount listed above is correct and is what is listed in the original Betty Crocker recipe. When the butter mixture is first added to the bread, if you taste it at this point it might seem salty (because it is sitting right on the surface of the bread) but remember that the liquid and butter soaks into the bread and redistributes evenly. Also, this recipe, being from the 1950s, is specifically for cooking *inside* the turkey, which a lot of people no longer do, and again the salt will redistribute from the juices in the meat. If you use a crockpot for cooking your stuffing, I'd recommend reducing the amount of salt.
  • Note #2: again, regarding the salt. You're going to have to decide for yourself about the salt. Having eaten this recipe for every year of my life I know it tastes wonderful as it's written. But that's just me.

BAKED PORK CHOPS AND STUFFING

Baked Pork Chops and Stuffing image

This easy recipe has been a longtime family favorite, with fork-tender pork chops covered in a super flavorful stuffing and gravy.

Provided by Brenda | A Farmgirl's Dabbles

Categories     Pork

Time 2h

Number Of Ingredients 11

4 bone-in pork chops, about 1/2" to 3/4" thick and 1.5 lbs. in total weight
kosher salt
freshly ground black pepper
1 T. canola oil
4 c. soft bread cubes, about 1/2'' in size
2 T. finely chopped onion
1/4 + 1/3 c. water, divided
1/4 c. unsalted butter, melted
1/4 tsp. dried sage
1 can (10.75-oz.) less sodium cream of mushroom soup
2 tsp. soy sauce

Steps:

  • Preheat oven to 350° F.
  • Sprinkle pork chops lightly with salt and pepper. Heat oil in a large skillet over medium-high heat. Add pork chops and brown both sides. Do not cook completely. Transfer browned pork chops to an oven safe baking pan or large cast iron skillet.
  • In a medium bowl, fold together bread crumbs, onion, butter, 1/4 cup of the water, and sage. Place a mound of stuffing on each chop.
  • In another medium bowl, blend cream of mushroom soup, remaining 1/3 cup of water, and soy sauce. Pour evenly over the stuffing. Sprinkle with freshly ground black pepper.
  • Place in oven and bake for 1-1/2 to 2 hours, or until pork chops are very tender. Bake thinner (1/2") pork chops for a minimum of 1-1/2 hours, and add time for thicker pork chops. If using especially thick pork chops, I would recommend at least 2 hours of bake time, plus covering the dish for the first 30 minutes in the oven. The goal is to have fork-tender pork chops, and thicker chops will definitely take longer to get tender.

STUFFED PORK CHOPS

Stuffed Pork Chops image

Learn how to make traditional savory stuffed pork chops. This easy dinner makes a beautiful presentation for an alternative holiday dinner.

Provided by Julie Clark

Categories     Main Dish

Time 55m

Number Of Ingredients 11

2 bone-in thick cut pork chops ((about 1 1/2" thick))
salt and pepper ((to taste))
1 tablespoon olive oil ((for browning the chops))
3/4 cup butter
1/2 cup chopped celery
1/2 cup diced onion
7 cups dry bread cubes*
1 teaspoon teaspoon salt
1/2 teaspoon ground black pepper
3/4 tablespoon poultry seasoning
3/4 cup chicken stock

Steps:

  • If the pork chops do not already have a pocket cut in them, slice the meaty side of the pork chop in half almost to the bone so that it creates a pocket.
  • On both sides, sprinkle the pork chops with salt and pepper.
  • Heat the oil in a skillet over medium heat. Once the oil is hot, sear the pork chop on both sides just until golden brown.
  • Remove the pork chops to a plate.
  • Preheat the oven to 350 degrees Fahrenheit.
  • In a skillet, melt the butter. Add the celery and onion. Saute the celery and onion until tender, about 10 minutes.
  • In a large bowl, combine the bread cubes, butter mixture and the remaining stuffing ingredients. Mix well.
  • Stuff about 1/2 cup to 3/4 cup stuffing in each pork chop so that it fills the pork chops and also sticks out a little bit. This will give the pork chop a pretty look!
  • Place the pork chops in a baking dish, either 9x13" or a bit smaller.
  • Arrange the remaining stuffing around the pork chops.
  • Bake the pork chops for about 20-25 minutes or until the internal temperature of the pork reaches 145 degrees Fahrenheit. At this temperature there will be a blush of pink in the pork which means they will be nice and juicy!
  • Allow the chops to rest for 3-4 minutes, then serve.

PORK CHOPS WITH PAN FRIED STUFFING

Pork Chops With Pan Fried Stuffing image

Moist pork chops with a hint of maple syrup served with a savory golden raisin dressing. This comfort food is fit for gourmet company! Plan to brine the pork chops for at least 8 hours.

Provided by puppitypup

Categories     Pork

Time 30m

Yield 4 chops, 4 serving(s)

Number Of Ingredients 20

1 cup water
1 cup low sodium chicken broth
1 cup real maple syrup
1/8 cup kosher salt
1 tablespoon cracked peppercorn
1 tablespoon cider vinegar
1 pinch clove
1 pinch ginger
1 bay leaf
4 pork chops, 3/4 to 1 inch thick
1 tablespoon olive oil
1 tablespoon butter
1/4 cup butter
1 red onion, chopped
1 cup golden raisin
1/3 cup chopped fresh cilantro or 1/3 cup parsley
3 slices whole grain bread, ends preferred
1 egg
2 tablespoons heavy whipping cream
1/4 cup low sodium chicken broth

Steps:

  • Bring brine ingredients to a boil in a small saucepan. Turn off heat and cool. Add up to 10 ice cubes if you are in a hurry.
  • Place pork chops in cooled brine to marinate from eight hours to overnight in the fridge.
  • Remove pork chops from brine and discard brining liquid. Pat pork chops dry.
  • Cut the bread into 1/2-inch cubes. In a cup, mix egg, cream and final chicken broth together.
  • Gather remaining ingredients as the dish goes together quickly once started. You will need two good-sized frying pans, one for the pork chops and one for the dressing.
  • Preheat pan on med-hi heat, add olive oil and butter and fry pork chops 3-4 minutes per side. Remove from heat and place a tightly-fitted lid on pork chops. Don't worry, they aren't supposed to be done yet.
  • Now, in the second pan, sauté the onion and raisins in butter over medium-hi heat for a few minutes. Add cilantro and cubed bread and sauté for a couple more minutes.
  • Remove from heat and stir in egg mixture a little at a time, so that you don't end up with scrambled eggs. When soaked in, return to heat and cook for a few more minutes.
  • At this point, the pork chops will have finished cooking. Serve the pork chops with the stuffing on the side.
  • Note: Please use the second pan so that the dressing will compliment the pork chops rather than tasting just like them. It's worth washing the second pan!

STUFFED PORK CHOPS WITH CRISPY BREADING

Stuffed Pork Chops With Crispy Breading image

I'm not a big pork fan, but these chops are great! I love that they're breaded and then seared in olive oil. It helps to keep the breading in place and makes it crunchy, even after baking it in the oven. You can add pretty much whatever you want to the stuffing to make them work for your family. This is delicious with onion cheddar mashed potatoes and corn. I hope you like them!

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 11

4 pork chops, 1-inch thick
1 (6 ounce) box Stove Top stuffing mix (or make your own)
3 eggs, beaten
sea salt
fresh ground pepper
1/2 cup flour
1 cup fine breadcrumbs
1 teaspoon garlic powder
1 teaspoon seasoning salt
1 teaspoon dill weed
2 tablespoons olive oil

Steps:

  • Preheat oven to 350.
  • Prepare stuffing mix according to package instructions (or make your own recipe).
  • After the stuffing is prepared, add anything you want to the stuffing mix (apples, cranberries, mushrooms, olives, etc.).
  • Scramble the eggs and add sea salt and freshly ground pepper, to taste. Place in a shallow dish.
  • Place flour in another shallow dish.
  • Place breadcrumbs in another shallow dish. Add garlic powder, seasoned salt and dill weed. Combine well.
  • Slice pork chops down the center to create a pocket, taking care not to slice them the whole way through. Or have the butcher at your grocery store do it for you when you buy them.
  • Stuff the chops with the stuffing mix and secure the flaps of the pocket with a toothpick.
  • Heat olive oil in a small pan over medium heat until it sizzles if anything is put into it.
  • Dip chops in flour, then eggs, then breadcrumb mixture.
  • Brown chops (one at a time) on all sides to get breading to stick to chops and stay crisp while baking.
  • Transfer chops from pan to glass baking dish.
  • Cover and bake 35-40 minutes.
  • Serve with extra any leftover stuffing.
