BREAD STUFFING FOR BAKED FISH
This was my Aunts recipe which I love and make quite often. Depending on how moist you like your stuffing, a little milk or egg may be added.

BAKED STUFFED FISH
Serve with Rice Pilaf and Orange and Red Onion Salad for a delicious meal!

Steps:
- Pre-heat the oven to 400°F. In a skillet over medium-high heat, melt the butter. Cook the onion, shallot, garlic, celery, red pepper and parsley until softened, about 4-5 minutes.Reserve some of the cooked veggies for the bottom of the baking dish. Deglaze the pan with white wine and let cook for another minute. Add the bread, salt, freshly ground black pepper and thyme. Mix to combine thoroughly. Gently fold in the crab meat. Rinse and pat dry the sole fillets. Squeeze some fresh lemon juice on the filets. Spread the stuffing along the filet and roll it up.Place reserved cooked veggies in the bottom of a buttered baking dish. Place the rolled up sole filets, seam side down, on top of the veggies. Cook covered with foil for 15 minutes. Take the foil off and continue to cook for another five minutes uncovered. Serve with Rice Pilaf and Orange and Red Onion Salad.
STUFFED FLOUNDER
Steps:
- Preheat the oven to 450 degrees F. Split each fillet in 1/2 to make a top and bottom portion of the fish. Lightly season the bottom portions with salt and pepper. Place 4 ounces crab stuffing on bottom portion. Place the top portion of fish on top of crab stuffing. Place in a baking dish. Sprinkle lightly with salt, pepper, bread crumbs, and paprika. Top with melted butter so as to moisten all of the crumbs. Place a little water in the baking dish. Bake for 15 to 20 minutes or until done. Garnish with parsley and lemon wedges.
- Being careful to not break apart lumps, pick the crabmeat free of shells. Refrigerate in mixing bowl. Whisk together the egg, mayonnaise, apple cider vinegar, and sugar, and set aside or refrigerate if not used immediately.
- Thoroughly combine the dry ingredients. Mix dry ingredients into the crab meat, trying not to break up or mash the lumps of crab. Gently work the wet ingredients into the mix. Chill immediately.
BAKED STUFFED FISH FILLET
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Cut fish into strips.
- Generously grease a muffin tin .
- Line prepared muffin cups with fish strips.
- Sprinkle lightly with salt.
- In a small skillet, sauté onion and celery in 6 tablespoons of butter until just tender.
- Combine vegetable and butter mixture with salt, ground black pepper, sage, and bread pieces. Add a little hot water if stuffing seems too dry.
- Spoon stuffing into each fish-lined muffin cup.
- Dot the top of each stuffing center with about a 1/2 teaspoon of butter.
- Sprinkle with chopped parsley.
- Bake for 30 minutes, or until fish flakes easily with a fork.
- Serve with lemon wedges, if desired.

STUFFED BAKED TROUT
A delicious and savory stuffing to enhance the wonderful flavor of fresh trout. Serve with a nice side of fresh green beans and warm soda bread, makes a wonderful meal.

Steps:
- Cook and stir onions and pepper in butter until tender.
- Removed from heat and add gread crumbs, parsley, lemon juice and basil.
- Rub cavities of trout with salt then stuff each with approx 1/4 cup of stuffing.
- Place fish in baking dish
- Cook uncovered in 350 degree oven until fish flakes easily. approximately 30 - 35 minutes.
- Garnish with cherry tomatoes and parsley if desired.
STUFFED RAINBOW TROUT
This is an absolutely wonderful dish for trout! I used trout fillet instead of the whole trout and it is easy, flavorful and makes a beautiful presentation. Definitely a company worth recipe!

Steps:
- Melt butter in a large skillet over medium heat; add onion and celery, and cook, stirring constantly, until tender.
- Remove from heat, stir in parsley and next 4 ingredients.
- Add bread cubes; toss gently.
- Combine egg and white wine; stir into bread mixture.
- Spread evenly into 11- x 7- x1 ½" baking dish; set aside.
- Rinse trout; pat dry.
- Sprinkle inside of fish evenly with ½ tsp salt.
- Combine lemon juice and soy sauce; brush inside of fish, reserving remaining lemon juice mixture.
- Dredge fish in flour.
- Place over stuffing, overlapping slightly.
- Drizzle with reserved lemon juice mixture.
- Place bacon over trout.
- Cover and bake at 350* for 45 minutes.
- Uncover and bake an additional 15 minutes.
BAKED FLOUNDER WITH SCALLOP STUFFING
Steps:
- 1. In a 10 inch skillet, melt the 1/2 cup of butter.
- 2. Add garlic and onion and saute until onions are translucent.
- 3. Add scallops and cook 2 or 3 minutes.
- 4. Season with salt, pepper and white wine to taste.
- 5. Add sufficient bread crumbs to prepare a moist stuffing.
- 6. Place each flounder filet dark-side-up on a flat surface.
- 7. Placing the scallop stuffing in the center of each filet, divide evenly among the filets.
- 8. Fold both ends of each filet over the stuffing, overlapping the ends.
- 9. Pour the melted butter and the hot water into a 9x12 inch baking dish.
- 10. Transfer the stuffed filets to the baking dish and bake 20 minutes while you prepare a white sauce.
- 11. WHITE SAUCE: In a small saucepan, melt butter, then whisk in flour.
- 12. Cook over low heat 2-3 minutes, whisking constantly.
- 13. Then add milk, and salt, pepper and white wine to taste.
- 14. Increase heat to medium, whisking constantly until the sauce is thickened.
- 15. Cook several minutes over low heat, stirring.
- 16. When the flounder has baked 20 minutes, pour the white sauce over the stuffed filets.
- 17. Return the baking dish to the oven briefly and heat until the sauce begins to bubble.
STUFFED FISH FILLETS
This fish dish is simple enough to please picky eaters but has enough splashes of flavor to appease fish a-fish-ionados.

- Preheat oven to 350°F. Prepare stuffing mix with the water and 3 Tbsp. of the margarine as directed on package.
- Sprinkle fish evenly with 1 Tbsp. of the lemon juice. Spoon 1/3 cup of the prepared stuffing onto each fillet; roll up loosely to enclose stuffing, starting at one of the short ends. Place, seam-sides down, in greased baking dish; spoon remaining stuffing around roll-ups. Sprinkle evenly with remaining 1 Tbsp. lemon juice and the paprika; dot with remaining 1 Tbsp. margarine.
- Bake 20 min. or until fish flakes easily with fork.
