CORNED BEEF FOR SANDWICHES IN A SLOW COOKER

Corned Beef for Sandwiches in a Slow Cooker image

I cooked up this slow cooker corned beef specifically to make corned beef hash, but the leftovers were great sliced thin in a sandwich.

Provided by Cynthia Cliffen

Time 6h15m

Yield 10

Number Of Ingredients 8

1 (4 pound) corned beef brisket, seasoning packet discarded
1 tablespoon whole black peppercorns
4 whole cloves
¼ teaspoon cayenne pepper
1 pinch ground cinnamon
1 (15 ounce) can dark Irish stout beer (such as Guinness®)
2 medium heads garlic, cloves separated
4 leaf (blank)s bay leaves

Steps:

  • Place brisket, fat-side down, into a slow cooker. Cover with hot water and cook on High for 1 hour. Drain and discard water from the slow cooker.
  • Add peppercorns, cloves, cayenne, and cinnamon to a tea ball or spice bag. Place in the slow cooker with beer, garlic cloves, and bay leaves. Add more water to just cover the brisket.
  • Cook on Medium for 5 hours. Remove brisket carefully; it will be very tender and may fall apart or break in half. Let meat rest before slicing.

Make it the centerpiece of a family feast, or slice and shred it for a sandwich stuffer. Either way, this brisket is true to tradition (or maybe it's superstition), in that it tastes better the next day. So next time you're hosting the family gathering, save some stress and get this done ahead of time.

SLOW COOKER BEEF BRISKET

Slow Cooker Beef Brisket image

Wonderfully juicy, flavor exploding, melt-in-your-mouth Slow Cooker Beef Brisket is "better than any restaurant" according to my food critic husband! It's the ultimate easy company dinner because it can be made days in advance then reheated in the slow cooker for stress free entertaining (which is actually my preferred method)!

Provided by Jen

Time 8h15m

Number Of Ingredients 20

4-5 pounds beef brisket (trimmed of excess fat)
1 cup water
1 tablespoon beef bouillon
2 tablespoons Worcestershire sauce
1 tablespoon reduced sodium soy sauce
1/2 cup homemade barbecue sauce ((directions to follow))
2 tablespoons paprika
2 tablespoons packed brown sugar
1 tablespoon chili powder
2 tsp EACH garlic powder, salt
1 tsp EACH onion powder, chipotle powder, pepper
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper (optional for more heat)
1 1/2 cups ketchup
1/3 cup molasses
1/3 cup packed brown sugar
1/4 cup seedless blackberry preserves
1/4 cup apple cider vinegar
1 tablespoon reserved Spice Rub from above
1 tablespoon mesquite liquid smoke (optional but recommended*)

Steps:

  • Preheat oven to 425 degrees F. Line a large baking sheet with sides/jelly roll pan with parchment paper or foil for easy clean up. Set aside.
  • Spray 6 quart (or larger) slow cooker with non-stick cooking spray.
  • Trim brisket of excess fat and rinse and pat dry. If your brisket is extra long then slice it in half so it will fit in your slow cooker.
  • In a medium bowl, whisk together Spice Rub ingredients. Remove 1 tablespoon Spice Rub and add to a medium bowl to use in your barbecue sauce. Rub all remaining Spice Rub evenly all over the meat then place brisket on prepared baking sheet. (You can let sit at room temperature for 30 minutes or refrigerate up to 24 hours if desired). Bake uncovered for 30 minutes at 425 degrees F to sear meat.
  • Meanwhile, add all of the Barbecue Sauce ingredients to the 1 tablespoon reserved Spice Rub and whisk to combine. Remove 1/2 cup barbecue sauce and add to slow cooker along with 1 cup water, 2 tablespoons Worcestershire, 1 tablespoon reduced sodium soy sauce and 1 tablespoon beef bouillon. Whisk to combine (the bouillon will not be completely dissolved but will dissolve during cooking).
  • Using tongs (so you don't burn yourself) carefully transfer brisket to slow cooker. It will be large so you will have to squish it in. Not all of it will be under the liquid.
  • Cover and cook on LOW for 8-10 hours until brisket is very tender, flipping over half way through cooking. If your brisket is tough, it just needs to cook longer.
  • Remove brisket to a foil lined baking sheet. Brush with barbecue sauce and broil 5-10 minutes, until slightly caramelized. Meanwhile, microwave or simmer remaining barbecue sauce until warmed through.
  • Brush brisket again with barbecue sauce and slice across the grain or chop if desired. Serve with remaining barbecue sauce plain or they make delicious sandwiches. (See side dish suggestions below recipe.)
  • MAKE AHEAD: I often will cook my brisket until tender then remove the removable ceramic insert and refrigerate the brisket in the juices. The next day, I skip off all the hardened fat then cook on LOW in the slow cooker for 1-2 hours until warmed through and proceed with recipe.

SLOW COOKED CORNED BEEF FOR SANDWICHES

Slow Cooked Corned Beef for Sandwiches image

This is an excellent recipe for party sandwiches. I always make 2 (and sometimes 3) briskets because it goes so fast. The meat should cook slowly for a minimum of 4 hours--cooking longer will just make it more tender. It sounds like a LOT of garlic, but no one has ever complained that it tasted too garlicky. Serve with brown mustard on rye or kaiser rolls. Can also add cole slaw to the sandwich for a uniquely delicious sandwich.

Categories     Main Dish Recipes     Sandwich Recipes     Beef

Time 4h15m

Yield 15

Number Of Ingredients 5

2 (3 pound) corned beef briskets with spice packets
2 (12 fluid ounce) bottles beer
2 bay leaves
¼ cup peppercorns
1 bulb garlic cloves, separated and peeled

Steps:

  • Place the corned beef briskets into a large pot. Sprinkle in one of the spice packets, and discard the other one or save for other uses. Pour in the beer, and fill the pot with enough water to cover the briskets by 1 inch. Add the bay leaves, peppercorns and garlic cloves. Cover, and bring to a boil.
  • Once the liquid comes to a boil, reduce the heat to medium-low, and simmer for 4 to 5 hours, checking hourly, and adding more water if necessary to keep the meat covered.
  • Carefully remove the meat from the pot, as it will be extremely tender. Set on a cutting board, and allow it to rest until it firms up a bit, about 10 minutes. Slice or shred to serve. I discard the cooking liquid, but it can be used to cook cabbage and other vegetables if desired.

Crock Pot Brisket (Texas BBQ Beef): We are CRAZY over this Slow Cooker Chopped Beef Recipe. It's tender, smoky, and spicy-sweet!

Provided by Sommer Collier

Categories     Main Course     Sandwiches

Time 7h45m

Number Of Ingredients 12

4-4.5 pounds beef brisket
3 tablespoons brown sugar
2 tablespoons smoked paprika ((or sweet paprika + 2 tsp liquid smoke))
1 tablespoon salt
1 1/2 teaspoons ground cumin
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
18 ounces spicy bbq sauce ((Texas-style))
8 sandwich rolls ((I used brioche buns.))
1 cup sliced dill pickles

Steps:

  • In a small bowl, mix the brown sugar, paprika, salt, and all spices together. Rub the spice blend over the entire surface of the brisket.
  • Set out a large 6-8 quart slow cooker. Place the brisket in the slow cooker, cover, and set on high for 6-7 hours, or on low for 11-13 hours.
  • Once the brisket is fork-tender (shreddable) place it on a cutting board and slice it into thin strips, against the grain. Then chop the brisket strips into fine pieces.
  • Move the chopped beef brisket back into the slow cooker. Add the spicy bbq sauce to the slow cooker, and stir the chopped beef, juices, and bbq sauce together.
  • Cover and slow cook until ready to serve. *Give it at least 30 minutes, but the longer the beef cooks in the sauce the better.
  • When ready to serve, scoop the chopped beef onto the buns and top with pickles.

Sear each side for two minutes, then add in the rest of the beef ingredients. Bring to the boil, then place a lid on the pan and place in the oven. Cook for 4 hours. Check the meat every hour to make sure the liquid isn’t going dry. Add in a cup of hot water from the kettle if it is. I usually add in 1.5 - 2 cups of water altogether.

  • To prepare brisket: Combine paprika, salt, garlic powder, onion powder and pepper in a small bowl. Rub all over brisket. Heat oil in a large, heavy skillet over medium heat. Add the brisket and brown on both sides, 3 to 5 minutes per side. Transfer to a 6-quart slow cooker.
  • Add beer (or broth) to the pan along with any remaining spice blend from your cutting board; increase heat to high. Cook for 5 minutes, scraping up browned bits with a wooden spoon. Pour over the brisket. Cover and cook on High for 6 hours or Low for 9 hours.
  • To prepare pickles: Meanwhile, combine white vinegar, cider vinegar and brown sugar in a small saucepan; bring to a boil over high heat and cook for 1 minute. Add pickling spice and 1 teaspoon salt. Pour into a large, heatproof glass bowl and add cucumbers and onion. Refrigerate, stirring occasionally, for at least 1 hour or until ready to serve.
