Here's how to make the best black beans and rice! This classic Latin-style side dish is perfect with tacos or as a lunch idea.

3 cups cooked (1 cup dry) white long grain rice
1 medium sweet onion
1 green bell pepper
6 garlic cloves
2 15-ounce cans black beans or (or 3 cups cooked or Instant Pot black beans)
2 tablespoons salted butter (substitute olive oil for vegan)
1 tablespoon olive oil
2 teaspoons cumin
2 teaspoons oregano
1 teaspoons kosher salt
2 tablespoons lime juice (juice of 1 lime)
Fresh cilantro, for a garnish

Steps:

  • Start the rice: use How to Cook Basmati Rice or Instant Pot White Rice.
  • Mince the onion. Chop the pepper into a small dice. Mince the garlic.
  • Drain and rinse the beans.
  • In a large skillet, heat the butter and olive oil over medium high heat. Once melted, add the onion, bell pepper, and garlic. Cook for 10 minutes, stirring occasionally until the onions are translucent and lightly browned. Add the beans, cumin, oregano, and kosher salt and stir to combine. Cook for 3 minutes until warmed and fragrant, then stir in rice for 1 minute until heated through.
  • Remove from the heat and add the lime juice. Serve garnished with fresh cilantro.

2 tablespoons coconut oil
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon ground coriander
2 stalks celery, chopped
1 tomato, chopped
½ cup frozen corn
2 teaspoons chopped fresh oregano
2 teaspoons chopped fresh cilantro
1 (15 ounce) can black beans, rinsed and drained
½ cup mild salsa
¼ cup water, or as needed
2 cups cooked white rice
salt to taste

Steps:

  • Heat coconut oil in a large skillet over medium-low heat. Add chili powder, garlic powder, cumin, and coriander; fry until fragrant, about 30 seconds. Add celery, cook and stir until softened, 3 to 5 minutes.
  • Add tomato, frozen corn, oregano, and cilantro; stir to coat. Stir in black beans and salsa. Bring to a simmer and cook for 10 to 15 minutes, adding water as needed to keep the mixture saucy.
  • Remove from the heat and stir in cooked rice until coated. Season with salt.

2 tablespoon(s) vegetable oil
6.8 package(s) spanish rice
1/2 cup(s) chopped green bell peppers
1/2 cup(s) chopped onion
14 ounce(s) can 1/2 oz. tomatoes undrained
1/2 teaspoon(s) hot pepper sauce
16 ounce(s) 1 pinto beans rinsed & drain
1/2 cup(s) shredded cheddar cheese
2 tablespoon(s) parsley
16 ounce(s) 1 can black beans rinse, drain

Steps:

  • In a large skillet heat oil over medium heat.
  • Add rice, green pepper, onion, and garlic; saute, stirring frequently, until rice is golden brown.
  • Stir in 2 cups water, tomatoes, hot pepper sauce and seasonings; bring to a boil over high heat.
  • Cover, reduce heat heat. Simmer 15 minutes. Stir in black and pinto beans. Cover; continue to simmer 5 minutes, or until liquid is absorbed and rice is tender,
  • Served topped with cheese; sprinkle with parssley if desired. Yield: 4 servings

This is a typical dish served in Cuba or Puerto Rico, each country has their own method of preparation. You can flavor this dish with meat, but I left it out as I serve it as a side dish with my meats. It is an easy and healthy short cut and takes about 30 minutes to cook.

2 tablespoons olive oil
1/2 cup chopped onion
1/4 cup chopped green pepper
2 cloves of minced garlic
1 (15 ounce) can black beans (undrained)
3/4 cup water
1 teaspoon oregano
1/4 teaspoon sugar
1 package sazon goya (without annato *see note)
1 tablespoon cooking wine or 1 tablespoon cider vinegar
2 cups cooked white rice

Steps:

  • Heat oil in a medium sauce pan, sauté onion,green pepper, and garlic.
  • Sauté until tender@8-10 minutes.
  • Add in remaining ingredients and stir until boiling, reduce heat and simmer until sauce is reduced@ 20 minutes.
  • Serve over white rice.
  • I like to mash a few of the beans with the back of a spoon to flavor the sauce.
  • Note: if you do not have Sazòn Goya an appropriate substitute would be ground cumin, chicken bouillon, and garlic salt to taste.

1/4 cup green onion, sliced

1 cup long grain rice
2 1/2 cups vegetable broth
1 (15 ounce) can black beans, drained and rinsed
2 tablespoons finely chopped cilantro

Steps:

  • Spray saucepan with cooking spray. Heat over medium until hot.
  • Saute onions and garlic until tender; about 5 minutes.
  • Add rice; cook over medium heat until rice is lightly browned, 2-3 minutes, stirring frequently.
  • Add broth to saucepan and heat to boiling; reduce heat and simmer, covered, until rice is tender, 20-25 minutes, adding beans during the last 5 minutes.
  • Stir in cilantro, season to taste with salt and pepper.

3/4 cup uncooked brown rice, rinsed and drained
1/2 teaspoon ground turmeric
2 cups vegetable stock or 2 cups chicken stock
1 medium onion, chopped
1 large jalapeno pepper, seeded and diced
1/2 medium bell pepper, diced
1/2 medium red bell pepper, diced
1/8 teaspoon crushed red pepper flakes
1 (15 ounce) can black beans, rinsed and drained
1/2 teaspoon ground cumin
1/2 teaspoon salt (to taste)
1 tablespoon olive oil
2 ounces sharp cheddar cheese, shredded
1/4 cup fresh cilantro, snipped
2 medium limes, quartered

Steps:

  • Bring the vegetable or chicken stock to a boil; stir in the turmeric and brown rice.
  • Bring rice to boiling, stir once, lower heat and cook 40 to 45 minutes or until done and liquid has been absorbed, adding more liquid if needed.
  • Heat a medium saucepan over medium-high heat, add 1 teaspoon of olive oil, warming slightly.
  • To the warmed pan, add the onion, jalapeno, bell peppers, and red pepper flakes; cook for 4 minutes or until beginning to brown on the edges, remove from heat.
  • Stir the drained beans and cumin into the mixture adding salt to taste.
  • Let stand covered for 5 minutes; stir in the remaining 2 teaspoons of olive oil.
  • To serve, divide the rice into 4 equal portions and place on individual plates.
  • Top the rice with bean mixture, sprinkle with cheese and snipped cilantro.
  • Serve lime wedges on the side to squeeze over all.
