SLOW COOKER BREAD
Bread made in the slow cooker actually turns out a decent loaf, and it's very easy because this is a no-knead recipe. It is also quick because it requires only one rise; the second rise happens in the slow cooker. Adding seeds or rolled oats not only adds flavor, it also makes it easier to release the bread from the slow cooker.

Steps:
- Stir 1 cup water and yeast together in a small bowl until yeast is dissolved. Let sit until frothy or foamy, about 10 minutes.
- Mix flour and salt together in a plastic container with a tight-fitting lid. Add yeast mixture and stir with a wooden spoon until evenly combined and no traces of flour remain. Add 1 to 2 tablespoons water and stir again; dough should be tacky but not wet.
- Cover container with the lid. Let dough rise at room temperature for 1 hour.
- Set slow cooker to High. Cut a piece of parchment paper to line the bottom of your slow cooker.
- Dust a clean work surface with flour. Knead dough briefly with floured hands to get rid of any air pockets. Shape into a round or oval loaf depending on the shape of your slow cooker.
- Sprinkle some of the sesame seeds on the bottom of the slow cooker. Sprinkle remaining seeds generously all around the loaf. Place dough in the slow cooker and cover with the lid.
- Cook on High for 2 hours. Lift the lid a couple of times during cooking to release the steam. An instant-read thermometer inserted deep into the loaf should read between 200 and 210 degrees F (93 to 99 degrees C). The surface of the bread should be dry and no longer spongy. Remove the loaf and tap the bottom; it should sound hollow.
- Remove loaf from the slow cooker. Transfer to a wire rack and let cool completely before cutting, at least 1 hour.

OVERNIGHT SLOW COOKER BREAD
I developed this recipe for those days when you want homemade bread but you don't want to turn on the oven and heat the house. It's simple to make with ingredients that you probably have on hand. I get this started in the evening to enjoy for lunch. The longer the dough is allowed to ferment, the more complex the flavor of the loaf.

Steps:
- Place 3 1/2 cups flour, water, salt, and yeast in a large glass or ceramic bowl; mix by hand until just incorporated. Cover the bowl with plastic wrap and place it on a thick kitchen towel on the counter. Let sit on the counter for 12 to 18 hours.
- Sprinkle a clean work surface with 2 tablespoons flour. Scrape the dough (it will be sticky) from the bowl onto the work surface. Stretch and fold the dough over several times, working in some of the flour. Shape into a round loaf.
- Place parchment paper inside a slow cooker, making sure to drape it up the sides. Place the dough in the center of the slow cooker, and trim off any parchment paper that hangs over the rim. Place a double layer of paper towels over the slow cooker and secure the lid.
- Cook on High without peeking for 2 hours. Remove bread to a cooling rack and allow to cool completely before slicing.

Although this dough has no color, it is light and airy, like the soft inside of a loaf of French bread. The other surprising part is there's no need to let it rise. You can go directly from making the dough to baking with no waiting around. Magic.

- Butter a 6-by-3-inch round pan and set aside.
- Combine the butter, yeast, sugar, salt and 1 cup warm water in a stand mixer fitted with the dough hook attachment. With the mixer on low speed, add 1/2 cup of the flour at a time, waiting for each addition to be fully incorporated before adding more. Once all of the flour is added, knead on medium speed for 8 minutes.
- Transfer the dough to the prepared pan, transfer the pan to a 6- to 8-quart slow cooker and cover with the lid. Cook on high until the internal temperature of the bread registers 200 degrees F, about 2 hours. Let cool in the pan for 5 minutes, then turn out onto a rack and let cool completely.
SLOW COOKER BREAD

Steps:
- Mix the flour, yeast and salt in a large bowl and make a well in the middle. Measure 350ml warm water and pour most of it into the well. Mix the flour and water together with your fingers or a wooden spoon until combined into a slightly wet, pillowy, workable dough - add a splash more water if necessary.
- Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic. This can also be done in a tabletop mixer with a dough hook.
- Shape the dough into a large, tight ball and sit the ball on a square of baking parchment. Use the parchment to lift the dough into your slow cooker, cover and set the slow cooker to high. Leave for 2 hrs.
- Lift the bread out using the parchment. The bottom should be crusty and the top should be springy, not soft. (If you have a digital cooking thermometer, the middle of the loaf should be 90C.) If it isn't ready, return to the slow cooker for 15 mins and test again - it could take up to 2 hrs 30 mins.
- The bread won't get a significant crust or golden colour in the slow cooker. Once cooked, you can leave it to cool, or put in the oven at 240C/220C fan/gas 9 for 5-10 mins to get some colour.

- Mix paprika, oregano, garlic powder, onion powder, salt, and black pepper together in a bowl; rub evenly over roast.
- Arrange potatoes, carrots, celery, and onions in the bottom of a slow cooker. Place roast atop vegetables.
- Whisk beef broth, Marsala wine, and gravy mix together in a bowl; pour over roast and vegetables.
- Cook on Low until meat is fully cooked and vegetables are tender, about 8 hours (or on High for 5 hours).

BREAD ROUNDS IN THE SLOW COOKER
Very little effort, NO kneading, flexible timing, a soft crust & I can use the back porch to bake bread in the summer. - - - I use a pair of 2 quart slow cookers, mine are the 3 heat setting Rival. It does take a bit of planning but I can have enough fresh baked bread for 2 sandwich rounds every day, twice a day if I stagger the baking. (Or buy more slow cookers. Can you have too many slow cookers?) - - - Because of the low cooking temperature, the bread slowly toasts instead of burning if you forget about it. (Hubby turned the timer off & I forgot about the bread. An hour later, the bottom half was pale toast but quite edible.)

- Measure & mix all of the dry ingredients.
- If you do not have whole whear bread flour, substitute 4 teaspoons (12 g) vital wheat gluten for an equal amount of whole wheat flour.
- Divide into 2 containers.
- Add 1 container, less 1 tablespoon, of the dry mixture to 1/3 cup water. Stir until moistened.
- (You must reserve the tablespoon of the flour mixture. The wet dough self kneads overnight. If the dough is too dry it will not self knead. Reserving the tablespoon maximizes the amount of flour that is "kneaded".).
- Let sit, covered, 8-30 hours. (I usually start a batch when I take the last one out of the crock pots, about 20 hours.).
- Stir down, adding the reserved flour mixture.
- Spoon into 2 greased ramekins. (Anchor Hocking makes a 2 cup one that fits nicely into my slow cooker.).
- Place on a rack in the COLD slow cooker. (I use a canning ring, but anything that lifts it off the bottom of the slow cooker will work.).
- Let rest 1 - 3 hours. (I generally do 1.5).
- Turn slow cooker on HIGH & bake for 75 minutes.
- Cool. Slice. Enjoy.
- This can also be "baked" in an egg cooker. 1 sandwich round in the time it takes to steam 7 eggs.

- Prepare the bread dough: In the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl, combine the flour and yeast. Add the milk, water, olive oil, honey, apple cider vinegar, and salt. Mix on low speed or by hand until the dough begins to leave the side of the bowl. If time allows, let the dough rest for 25 minutes to allow the liquid to absorb (this makes for the easiest kneading, as it gives the flour time to absorb the moisture from the liquid ingredients).
- If using a standing mixer, switch to the dough hook. If kneading by hand, transfer the dough to a lightly greased work surface. By hand (lightly oil your hands to prevent sticking) or on medium speed with the mixer, knead the dough for 6 to 8 minutes, or until it is smooth and supple. This dough should be soft, yet still firm enough to knead. If the dough is too sticky at any point, add flour 1 tablespoon at a time. If it is too dry, add water 1 tablespoon at a time. The amount of liquid or flour you need can vary based on the weather, humidity, and the flour’s mood that day.
- Place the dough in the center of your work surface (if you’ve been using a mixer, lightly oil the surface first) and shape it into a tight, round ball. Place the dough in the center of a large piece of parchment paper. Using the parchment like handles, transfer the dough to a slow cooker (you can use any size of slow cooker that comfortably holds the dough). Flatten the parchment paper as much as you can against the slow cooker’s bottom and sides.
- Cover the slow cooker and turn it to HIGH. Bake for 1 to 2 1/2 hours, until the loaf reaches an internal temperature of 190 to 200 degrees F when tested with an instant read thermometer. The top will feel soft but not spongy or squishy, the bottom will be hard and slightly golden, and the loaf will sound hollow when the bottom is tapped. The cook time will vary depending upon your slow cooker. If it is your first loaf, consider it a bit of a test. Once you know how long your slow cooker needs, every subsequent loaf will be similar.
