HOMEMADE RYE BREAD



Homemade Rye Bread image

Number Of Ingredients 11

1 envelope (1/4-ounce) dry yeast
1 tablespoon sugar
3 tablespoons melted butter
1 egg
1 cup warm milk (about 110 degrees F)
1 1/2 teaspoons salt
1 cup rye flour
2 1/2 cups bleached all-purpose flour
1 tablespoon caraway seeds
1 teaspoon vegetable oil
1 large egg, beaten

Steps:

  • Combine the yeast, sugar, melted butter, egg, and milk in the bowl of an electric mixer fitted with a dough hook. Beat on low speed for 1 minute. Add the salt, rye flour, all-purpose flour, and caraway seeds. Beat at low speed until all of the flour is incorporated, about 1 minute. Then, beat at medium speed until the mixture forms a ball, leaves the sides of the bowl and climbs up the dough hook. Remove the dough from the bowl. Using your hands, form the dough into a smooth ball. Lightly oil a bowl. Place the dough in the bowl and turn it to oil all sides. Cover with plastic wrap and set aside in a warm, draft-free place until it doubles in size, about 1 hour.
  • Preheat the oven to 350 degrees F and lightly grease a 5 1/2 by 9-inch baking pan.
  • Remove the dough from the bowl and invert onto a lightly floured surface. Gently knead the dough several times. Tuck and roll so that any seams disappear into the dough and place in the prepared baking pan. Cover with plastic wrap and set aside in a warm, draft-free place until it doubles in size, about 1 hour. Use a pastry brush to brush the egg lightly over the top of the dough. Bake until lightly brown, about 45 minutes. Remove from the oven and cool on a rack.

1/3 cup brown sugar (I use the gruanulated type)
2 teaspoons caraway seeds
1 1/2 teaspoons salt (I use kosher salt)

1 1/2 teaspoons dry yeast

Steps:

  • Bring all ingredients to room temperature and add to bread machine baking pan, in order suggested by manufacturer.
  • Select basic setting (I use basic setting, medium size, light crust) and push Start.

1 cup cold water, plus
2 tablespoons cold water
1 tablespoon olive oil
1 1/2 tablespoons honey
3/4 teaspoon salt
2 teaspoons caraway seeds
1 cup rye flour
1 1/2 cups bread flour
1/4 cup white wheat flour
3 tablespoons wheat gluten
3 tablespoons dry milk
1 1/2 teaspoons bread machine yeast

Steps:

  • Add ingredients to your bread machine according to manufacturer's directions.
  • Use whole wheat cycle for baking. OR use the dough cycle, and bake it in the oven. If doing this let bread rise again in greased bread pan in a warm place and cover with a damp cotten towel till the dough almost doubles.
  • Bake for 35 minutes at 350 till golden. I usually remove it from the pan after 25 minutes and continue baking it on a baking stone for a crusty crust!
  • Rub cold butter on the warm loaf to make it extra yummy.

  • When the cycle is finished, removed the bread from the pan and let it cool on a rack. This is wonderful while still slightly warm with sweet unsalted butter, or refrigerate it and slice into thin even slices for sandwiches.

  • Place all ingredients in pan of bread machine in the order listed. Start the dough cycle. Once the dough has come together into a rough, shaggy ball, stop the bread machine, and let the dough rest in the covered bread machine. Depending on the bread machine, start the mixing/kneading process in the bread machine after 30 minutes (I plugged my bread machine back in after 10 minutes since it takes 20 minutes from the start to the beginning of the mixing of the dough). Allow the bread machine to complete the dough cycle.
  • Turn the dough onto a lightly floured surface and shape it into a log or rectangle to fit into a 9x5-inch loaf pan. Place the dough into a greased 9x5-inch loaf pan. Cover with a clean kitchen towel and let rise until the top of the dough has risen slightly over the top of the pan, 60 to 90 minutes.

  • Your bread machine should be unplugged. Remove the bread pan from the bread machine (so when you add the ingredients, they can not accidently spill into the machine).
  • Pour the water into the bread pan and then add the other ingredients. Place the bread machine yeast in last and the yeast should not touch the liquid (until the bread machine is turned on and the ingredients start to be mixed together by the bread machine). Put bread pan with ingredients back into unplugged bread machine.
