CINNAMON SWIRL BREAD FOR THE BREAD MACHINE
This bread is probably the best thing I make. Just finished making it and half a loaf is gone already while it was cooling. Using the bread machine to make the dough makes it so easy!

- Place milk, eggs, 1/4 cup butter, bread flour, sugar, salt, and yeast into a bread machine in the order recommended by the manufacturer, select the dough setting, and start the machine. When dough cycle is complete, transfer dough to a floured work surface and punch down. Let dough rest for 10 minutes.
- Mix walnuts, brown sugar, and cinnamon in a bowl.
- Divide dough in half and roll each half into a rectangle about 9x14 inches. Spread 1 tablespoon softened butter over the top of each dough rectangle and evenly sprinkle dough with half the walnut mixture. Roll dough rectangles, starting from the short ends, and pinch seams closed.
- Grease 2 9x5-inch loaf pans. Fit the rolled loaves into the loaf pans with seam sides down. Cover and let rise until nearly doubled in size, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake loaves in the preheated oven until lightly golden brown and bread sounds hollow when tapped, about 30 minutes. If loaves brown too quickly, lightly cover with aluminum foil for the last 10 minutes of baking. Let bread cool for 10 minutes before removing to finish cooling on wire racks. Sprinkle tops of each loaf with 1 teaspoon confectioners' sugar.

- Put yeast in bread machine first on bottom, then flour, sugar and salt.
- Then melt butter in microwave. Add beaten egg, milk and water.
- Pour onto dry ingredients in bread machine on the dough setting.
- When dough is done, put it onto a lightly floured surface.
- Knead in enough flour to make it easy to handle.
- If it is too elastic, cover and leave 10 minutes.
- Use floured rolling pin to roll out dough on floured surface.
- Roll out into rectangular shape to approx 1/4-inch thick.
- Use filling and spread over entire surface of dough with spoon.
- Roll up dough.
- Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
- Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
- Bake in a 350° oven for about 25 minutes, light brown on top.
- When done, make glaze and swirl over buns.

- Whisk the flour, salt, cinnamon and yeast in a medium bowl. While stirring with a wooded spoon, gradually add the water, stir until incorporated. Toss in the raisins and pecans, mix the dough gently and form into a rough ball.
- Transfer to a large clean (ungreased) bowl. Cover with plastic wrap and let dough rise in a draft-free area at room temperature until surface of dough is covered with tiny bubbles and the dough has more than doubled in size (This usually takes about 18 hours or so, however, it still turns out great with just 12 hours of rise time).
- When the dough is ready, place a Dutch oven into the oven and turn it on to 450 degrees. Allow it to heat in the oven for 30 minutes.
- Meanwhile, transfer the dough to a large square of parchment paper (big enough to cover the bottom of your Dutch oven). Lightly dust dough with flour, cover it with plastic wrap and allow it to rest for 30 minutes. Using a sharp knife, at a 90 degree angle, score an X in the top of the loaf. Each score mark should be about 3 1/2 inches long and about ¼" deep. Using a mister, spray bottle, clean toothbrush or pastry brush, lightly mist (or brush) the top of the bread with water.
- Carefully remove Dutch oven from the oven. Place the shaped dough into it, cover and return to the oven to bake for 30 minutes. Remove the lid and bake for an additional 8-12 minutes or until the top is nice and dark (but not burnt). Remove from the oven and transfer the loaf bread to a cooling rack. Allow it to cool for at least 30 minutes before slicing to prevent a gummy crumb.

- Place the flour, white sugar, salt, yeast, milk, vanilla, and 3 tablespoons of butter into your bread machine as directed in your user's manual. Program it for the "Dough" cycle.
- While the dough is mixing, prepare the filling by mixing the 3/4 cup brown sugar and cinnamon together. Let the 6 tablespoons of butter come to room temperature.
- Grease the bottom and sides of a 13"x9" baking pan.
- When the dough cycle is nearly finished, make the caramel topping by combining the 1/3 cup butter, 1 cup brown sugar, and corn syrup in a small pan over moderate heat. Heat and stir just until the syrup is dissolved, then pour it into the baking pan and spread it out. Sprinkle the chopped pecans over the caramel.
- When the dough cycle ends, remove the dough and place on a lightly floured surface. Roll it out to make a 12" by 15" rectangle.
- Spread the softened butter across the dough, leaving a 1-inch border on all sides. Sprinkle the cinnamon mixture over the butter.
- Roll up the dough like a jelly roll, lengthwise. Pinch the seam closed.
- Cut the dough into 1 1/2" sections and place them in the baking pan, close together, with the spiral cut down.
- Cover the buns tightly with plastic wrap and refrigerate overnight.
- In the morning, take the pan out of the refrigreator while you preheat the oven to 350 degrees.
- After the dough has been out of the refrigerator about 20-30 minutes, bake at 350 degrees for about 30-35 minutes, or until buns are nicely browned on top.
- Remove from the oven, then place a wire rack on top the pan. Place another baking sheet or pan over that. While firmly holding these three together, flip the buns over, being careful not to let the hot caramel drip on you.
- Let the buns cool 20-30 minutes before serving.

- Dissolve yeast in warm water in a large mixing bowl. Add buttermilk, eggs, 2 1/2 cups flour, 1/2 cup of the butter or margarine, 1/2 cup of the sugar, baking powder and salt. Blend 30 seconds with mixer on low speed, scraping sides and bottom of bowl. Beat 2 minutes on medium speed. Stir in remaining 3 cups flour. - Bake in a preheated 375 degrees F (190 degrees C) oven for 30 minutes. Invert pans onto serving plates immediately.

- In a small saucepan, scald the milk.
- Pour hot milk over the granulated sugar, salt and 1/2 cup of butter.
- Cool to lukewarm.
- In the bowl of an electric mixer, dissolve yeast in warm water.
- Let sit for 5 minutes until yeast is bubbly.
- Add milk mixture to yeast and stir to mix.
- With a whisk, beat in eggs.
- Fit your mixer with a dough hook, add flour 1 cup at a time, mixing until smooth.
- Add enough flour to make a soft dough.
- Knead, adding small amounts of flour as necessary until the dough is smooth and elastic but not sticky.
- Place dough in a greased bowl, cover and let rise until doubled, about 45 minutes.
- Punch down.
- Preheat your oven to 350 degrees and line 2 baking sheets with parchment.
- Roll dough into a rectangle about 15x22 inches.
- In a small bowl mix together the melted butter and brown sugar, Using a spatula, spread this over the dough up to 1/2 inch from the edges.
- Sprinkle cinnamon evenly over the sugar and butter.
- Top with a layer of nuts.

- Place ingredients in machine following the specifications of that particular machine. Set for dough cycle. If bread machine seems to be working too hard to mix dough, sometimes I add 1 - 2 Tbls vegetable oil to get it moving better.
- After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle. The larger you roll the rectangle, the more layers you have, which is really nice.
- Caramel Pecan Topping:.
- Mix butter, brown sugar and water together in a small saucepan, heat on low until butter is melted.
- Increase heat to medium and boil, stirring constantly, for 3 minutes.
- Stir in vanilla and remove from heat.
- Pour into cake pan, then place pecan halves over the caramel.
- Filling:
- Mix together brown sugar, pecans and cinnamon.
- Moisten the dough by brushing with milk.
- Sprinkle brown sugar, pecan and cinnamon mixture over top.
- Roll tightly from long end, pinching edges closed when completely rolled (sometimes putting a little milk on the edge helps seal it).
- Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
- Place into pan on top of caramel.
- Let rise until doubled (about an hour, or quicker if you put the pan on a heating pad).
- Bake at 350° for 20 minutes, until golden. Do not overbake.
- Invert onto a cookie sheet immediately, before caramel hardens.

- Set the machine to run the dough cycle.

- For dough, add all ingredients in a bread machine pan in the order listed.
- Select the Dough/Pasta setting. Press Start.
- When beeps to "Add ingredients", don't do anything. Let it go all the way.
- When dough is finish, remove from machine.
- Knead dough for about 10 minutes using flour if sticky.
- Roll out into a rectangle (about 14 by 16 inches). Cut dough into 4 rectangles.
- For each smaller rectangle, spoon 1/4 of the mixture on the dough.

- 6. Mix together the dry ingredients for the filling (pecan nuts, brown sugar and cinnamon) and put to one side.
- 7. Roll the dough out to form a rectangle about 18 x 12 inch's.
- 8. Spread the 120ml of butter from the filling evenly on the one side of the rolled out dough.
- 9. Evenly spread the filling ingredients (pecan nuts, brown sugar and cinnamon) over the buttered dough rectangle and roll up from the shortest side to make a cylinder of rolled up dough.
- 10. Divide the rolled up dough by cutting it into 12 equal pieces and place these in the baking sheet 3 rows of 4. .
- 11. Now cover and let rise in a warm place until doubled (about 40mins to 1 hour).
- 12. Bake at 160°C or 350°F for 18 to 20 minutes or until lightly browned.
- 13. Remove from the oven and let cool for 5 mins before topping with the icing.
- Method for Icing:.
- 1. In a bowl mix together the icing sugar, finely chopped pecan nuts and ground cinnamon and pour in a few teaspoons of warm boiled water to get a stiff liquid consistency.
- 2. Pour a tablespoon of the icing liquid on top of each bun and allow it to cool and the icing to set.
- 3.Enjoy with a cuppa.
