Dumplings with the flavor of fresh cooked bacon. A tasty change from ordinary dumplings.

2 slices bacon
2 cups all-purpose flour
1 pinch salt
1 ½ tablespoons baking powder
1 teaspoon dried parsley
ground black pepper to taste
2 eggs
¼ cup milk
1 quart vegetable broth

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving drippings, crumble and set aside.
  • In a large bowl sift together flour, salt and baking powder. Gently stir in parsley and pepper. In a 1 cup measuring cup, beat eggs and add enough milk to reach the 1/2 cup level. Stir the egg mixture and the bacon drippings into the flour; stir with a fork until well blended. Add more milk if dough is too dry. Stir in the crumbled bacon; mix well.
  • In a 2 quart saucepan heat broth over medium heat. Drop dough by spoonfuls into simmering broth. Cover and cook about 12 minutes, or until done.

SEMMELKNöDEL (GERMAN BREAD DUMPLINGS)

A specialty of the Bavaria region of southern Germany, drenched in gravy these SemmelKnödel are simply heaven! Serve them with beef or pork roast, any kind of sauce/gravy, goulash and more!

11 ounces of white crusty bread (traditionally Brötchen/crispy bread rolls are used)
Note: It's more convenient to use bags of unseasoned bread stuffing - it's already cubed, simply let it dry out a little longer. (I do not advise using croutons though as they're too hard.)
1 cup hot milk
1 tablespoon butter
3/4 cup very finely diced yellow onion
4 strips bacon, diced and fried until crisp (, optional for a variation called Speckknödel (Bacon Bread Dumplings))
2 large eggs (, lightly beaten with a fork)
3 tablespoons finely chopped fresh parsley
1 teaspoon salt (you can use less if using bacon)
1/4 teaspoon freshly ground black pepper
1/8 teaspoon freshly ground nutmeg
breadcrumbs, as needed

Steps:

  • Chop the hardened bread into small cubes and place them in a large bowl. Pour the hot milk over the bread, cover and let sit for 20-30 minutes or until softened.
  • Heat the butter in a frying pan and cook the onions just until transparent, do not brown them. Add the cooked onions to the bread mixture along with the eggs, cooked bacon (if using), parsley, salt, pepper and nutmeg. Knead the mixture together with your hands until very thoroughly combined, breaking up as many of the bread cubes as you can until it's a soft and chunky-smooth consistency. If the dough is too wet, add breadcrumbs (not flour).
  • Wet your hands to prevent the dough from sticking and form Knödel about the size of a tennis ball (they will expand slightly when cooked). Press the Knoedel between your palms to make sure they're nice and compact. Bring a large, wide pot of lightly salted water to a very light simmer - not boiling but just on the verge of boiling with tiny fizzy bubbles floating up. Carefully drop the Semmel Knoedel in the water and let them "steep" 15-20 minutes. Do not at any point let the water boil or you risk your Knödel losing shape or falling apart. Carefully lift them out with a slotted spoon. Serve with Rouladen, Sauerbraten, Senfbraten, Geschnetzeltes, Jaegerschnitzel, etc.
  • To Freeze The Knödel: Let them cool completely, place them spread apart on a cookie sheet and freeze them, then transfer them to a freezer bag or container. To reheat, let them thaw and reheat them covered (to create some steam) in the microwave.
  • Makes 6-7 Semmelknödel, depending on the size.

12 bacon strips, diced
1 (1 pound) frozen bread dough, thawed
2 Tbsp olive oil, divided
1 c (4 ounces) shredded part-skim mozzarella cheese
1 (1 ounce) ranch salad dressing mix

Steps:

  • 1. In a large skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out dough to 1/2-in. thickness; brush with 1 tablespoon of oil. Cut into 1-in. pieces; place in a large bowl. Add the bacon, cheese, dressing mix and remaining oil; toss to coat.
  • 2. Arrange pieces in a 9-in. x 5-in. oval on a greased baking sheet, layering as needed... I actually just find it easier to use a bundt pan Cover and let rise in a warm place for 30 minutes or until doubled. Bake at 350° for 15 minutes. Cover with foil; bake 5-10 minutes longer or until golden brown. Yield: 1 loaf--16 servings.

BEEF & GUINNESS STEW WITH BACON DUMPLINGS



Beef & Guinness stew with bacon dumplings image

Cosy-up this winter with a hearty stew. This beef and Guinness casserole really packs in the flavour, and comes served with delicious bacon dumplings, cabbage and mash

2 tbsp vegetable oil
1kg boneless beef shin, cut into 3cm chunks
200g pearl onions or small shallots
4 medium carrots, chopped to the same size as the shallots
3 celery sticks, cut into bite-sized chunks
3 tbsp plain flour
500ml beef or chicken stock
500ml Guinness
1 large thyme sprig
4 star anise
buttered cabbage and mash, to serve
100g smoked bacon, finely minced
½ tbsp oil
1 tsp thyme leaves
125g self-raising flour
60g beef suet
1 egg yolk
small pack parsley, leaves picked and finely chopped

Steps:

  • First, make the dumplings. Gently fry the bacon until crisp in a large lidded casserole dish. Stir in the thyme leaves, then tip into a bowl and leave to cool slightly. Add the flour and suet to the bacon, and stir everything together. Make a well in the middle, then add the egg yolk, parsley, ½ tsp pepper and 2 tbsp very cold water, and start to mix into a dough. Keep adding water until you a have a firm but pliable dough. Divide the mixture into eight balls and chill until needed.
  • Heat oven to 160C/140C fan/gas 3. Quickly clean the casserole dish with some kitchen paper, then heat the oil. Brown the meat really well in batches, then set aside. Tip in the onions or shallots, carrots and celery, brown well, then stir in the flour. Add the meat and any juices back into the dish, give everything a good stir, then pour in the stock and Guinness. Season, then tuck in the thyme and star anise and bring everything to a simmer. Cover with a lid, then cook in the oven for about 2 hrs until the meat is tender.
  • Remove the stew from the oven and arrange the dumplings evenly on top. Put the lid back on and return to the oven for 20 mins, then cook for a final 10 mins with the lid off to brown the dumplings. Bring the dish to the table in all its glory. Spoon into bowls with cabbage and mash, to serve.

1 egg, lightly beaten
3/4 cup lukewarm water
3 slices bread, cubed

Steps:

  • Sift flour, baking powder, and salt together in a large bowl.
  • Add beaten egg.
  • Add the lukewarm water and mix well with wooden spoon.
  • Add bread.
  • Mix well and roll into oblong dumplings.
  • Place into boiling water, cover and cook about 20 minutes, stirring once.
  • (We just used two teaspoons to drop pieces of dough into the water without shaping them first, and it worked fine).

1 pinch salt
1 1/2 tablespoons baking powder
1 teaspoon dried parsley
pepper, to taste
2 large eggs
milk
1 tablespoon bacon grease
3 -4 tablespoons browned & crumbled bacon

Steps:

  • Sift flour, salt and baking powder into large bowl.
  • Gently stir in parsley and pepper.
  • Beat eggs in measuring cup; add enough milk to make 1/2-cup liquid.
  • Add egg mixture and bacon grease to dry ingredients. Stir with fork just until blended (if dough seems too dry, add a little more milk).
  • Add crumbled bacon and stir until combined.
  • To cook, drop spoonfuls onto simmering broth, soup or stew.
  • Cover and cook until done, about 12 minutes.
  • Enjoy!

  • Cube bread and brown in 4 tablespoons of butter. Sautee onions in 1 tablespoon butter. Place onion in large bowl. Add flour, bacon, parsley, salt, pepper, and nutmeg. Add milk and knead lightly. Add bread cubes and gently fold into dough. Let stand for 30 minutes. Simmer in salted water for about 20 minutes. Slice and serve with gravy.
