I come from a town with a big German heritage, and each year we have a huge celebration for Oktoberfest. This recipe packs in all the traditional German flavors my whole family loves. -Deborah Pennington, Decatur, Alabama

1/3 cup half-and-half cream
2 tablespoons stone-ground mustard
1/2 teaspoon dried minced onion
1/4 teaspoon pepper
Dash paprika
4 fully cooked bratwurst links (about 12 ounces)
1 can (14 ounces) sauerkraut, rinsed and drained, warmed

Steps:

  • For sauce, mix first five ingredients. Cut each bratwurst into thirds; thread onto four metal or soaked wooden skewers., Grill brats, covered, over medium heat until golden brown and heated through, 7-10 minutes, turning occasionally. Serve with sauerkraut and sauce.

BEER-BRAISED BRATWURST & ONIONS



Beer-Braised Bratwurst & Onions image

Juicy bratwurst and caramelized onions piled into rolls with grainy mustard, "beer brats" make a delicious weeknight supper or game-day dish.

2 tablespoons vegetable oil
6 bratwurst (see note)
2 medium yellow onions, thinly sliced
½ teaspoon salt
1 (12 oz) bottle lager beer (see note)
6 hoagie rolls or hot dog buns
Coarse grain mustard
Warm sauerkraut

Steps:

  • In a large (12-inch) cast iron skillet or nonstick pan with a tight-fitting lid, heat the oil over medium-high heat. Add the bratwurst and sear until nicely browned, 2 to 3 minutes per side. Using tongs, transfer the sausage to a plate; set aside. Add the onions and salt to the skillet and cook, stirring frequently, until the onions are softened and golden brown, about 5 minutes (do not burn; reduce the heat if necessary).
  • Place the bratwurst back in the pan on top of the onions, add the beer, and bring to a boil. Reduce the heat to low, cover with the lid, and simmer for 10 minutes (at this point the sausages will be partially cooked through). Remove the cover, increase the heat to medium, and continue cooking until the bratwurst are cooked through and the beer is reduced by about three quarters, 10 to 12 minutes more. Serve the bratwurst and onions on rolls with mustard and sauerkraut, if desired.
  • Note: I use Johnsonville Original Brats; avoid any brats already flavored with beer, as the finished dish will taste too bitter. Also be sure to purchase fresh (not cooked) sausages.
  • Note: Lager is a family of beers that includes bright lagers, amber lagers, dark lagers, Oktoberfests, and pilsners. I use Sam Adams Oktoberfest, but Budweiser, Bud Light, Coors Light, and Miller Lite are all good options. No need to use anything fancy!

1/4 cup butter, divided
1 package uncooked bratwurst links (20 ounces)
1 medium onion, thinly sliced
1 bottle (12 ounces) beer or nonalcoholic beer
2 tablespoons all-purpose flour
1/8 teaspoon dill weed
1/8 teaspoon pepper
5 slices thick bread

Steps:

  • In a Dutch oven, heat 2 tablespoons butter over medium-high heat. Add bratwurst and onion; cook and stir until bratwurst starts to brown and onion softens. Stir in beer. Bring to a boil. Reduce heat; simmer, covered, turning occasionally, until a thermometer inserted in bratwurst reads 165° and brats are no longer pink, 12-14 minutes., Remove brats and onions; keep warm. Add remaining butter to pan; whisk in flour, dill weed and pepper. Bring to a boil, stirring constantly until thickened, 3-5 minutes. To serve, place 1 brat on each slice of bread; top evenly with onions and gravy.

1 (19 ounce) package bratwursts, Bob Evans Original
5 hoagie rolls
6 -8 slices swiss cheese
favorite mustard
favorite relish
1 (14 1/2 ounce) can sauerkraut, drained
3/4 cup large red onion, sliced
1/2 cup sliced scallion, green part only
1 tablespoon vegetable oil (1 to 2)
1/2 teaspoon sugar, to taste (1/2 to 3/4)
1/2 teaspoon garlic powder, to taste (1/2 to 3/4)
2 dashes favorite hot sauce (2 to 3)

Steps:

  • Carefully cut lengthwise each bratwurst (only 2/3 the way through).
  • Gently flatten for quick and easy cooking.
  • Prepare bratwurst according to package directions in skillet.
  • Note: Cook time will be shortened. Cook until no longer visibly pink.
  • Place bratwurst to side keeping warm on low oven setting.
  • Carefully drain excess liquid.
  • Add vegetable oil and return skillet to medium-high heat setting.
  • Add sliced red onion and green pepper, saute for 2-5 minutes until slightly tender.
  • Add sauerkraut and gently heat together.
  • Add seasonings and scallions and keep warm.
  • Add cooked bratwurst, sauerkraut and cheese on a roll.
  • Refrigerate leftovers.

4 kaiser rolls
4 bratwursts
1 red onion
4 pieces of applewood smoked bacon
1 onion
1 lb sauerkraut
mustard
1 cup lager beer
1/3 cup apple cider vinegar
1 tablespoon sugar

Steps:

  • Pickled red onion slice red onions. Place in a bowl add vinegar, and sugar salt and pepper mix well and refrigerate for three hours. Next dice up bacon and onion. In a sauté pan render the bacon until crispy add the onion and sautéed next add the sauerkraut cook on medium heat for two to three min add some beer cook down until most of the liquid has evaporated.grill the bratwurst until cooked all the way. To assemble the sandwich slice the bratwurst in half long way, place on the bottom of kaiser roll next spread mustard on top of roll then top the bratwurst with the sauerkraut mix and top off with pickled red onions.
