SALMON CASSEROLE

Salmon Casserole image

We LOVE this recipe, even DH, who hates fish. It's from "Favorite Recipes from Quilters." Prep time approximate.

Provided by Debbie R.

Categories     Cheese

Time 45m

Yield 4 serving(s)

Number Of Ingredients 9

2 cups uncooked macaroni (wholewheat rotini is fantastic)
14 1/2 ounces canned salmon
2 cups shredded monterey jack cheese
2 tablespoons butter
1/4 cup minced onion
1 tablespoon flour
1 cup low-fat milk
1 tablespoon lemon juice
1 tablespoon finely chopped fresh parsley

Steps:

  • Cook macaroni.
  • Drain salmon; break it into bite-size pieces.
  • Make Sauce: Melt butter. Saute onion until transparent. Blend in flour, stirring constantly. Slowly stir milk into saucepan mixture. Cook until smooth and thick, stirring constantly. Add lemon juice and parsley. Mix well.
  • Spoon pasta into sprayed casserole dish. Put salmon on top. Sprinkle with 3/4 cup cheese. Pour sauce over it, and sprinkle with the rest of the cheese.
  • Bake at 375 for 25 min or until hot and lightly browned.
  • NOTE: This doesn't make for a lot of sauce. To keep original proportions, double the butter, onion, flour, milk, lemon juice and parsley.

J-LYN'S AWESOME SALMON CASSEROLE

J-Lyn's Awesome Salmon Casserole image

I improvised this salmon casserole with items I had on hand in my pantry. I've never been big on casseroles (if you've had my mom's cooking, you'd understand why), but they are definitely an easy way to use up items that would otherwise be sitting in the pantry forever. This recipe is simple enough; feel free to add or supplement as you see fit!

This is an easy, no-mess, no-cleanup recipe that tastes delicious! If I don't feel like scrubbing a lot of pans after dinner, I just throw this in the oven next to some rice and vegetables, or just throw it over some lettuce and tomatoes for a nice salad, and my husband thinks I was cooking for hours! People will think you put a ton of effort into this fancy entree.

This is a great recipe to use for a carry-in dinner or fix ahead family meal. Serve with a tossed salad. From the kitchen of Tona Thornburg Court, Bridgeton MO.

Provided by Tona C.

Categories     One Dish Meal

Time 1h30m

Yield 1 large casserole, 12 serving(s)

Number Of Ingredients 12

2 (14 ounce) cans salmon, not drained but remove any bones
3 cups grated cheddar cheese
12 -16 slices bread, broken into pieces
4 beaten eggs
2 cups mayonnaise
1 (10 1/2 ounce) can cream of mushroom soup

2 tablespoons onion flakes
1 teaspoon dry mustard
1 teaspoon garlic salt
1/4 teaspoon pepper
1 (4 ounce) can sliced mushrooms

QUICK CURED SALMON

Quick Cured Salmon image

You're going to love this quick-cured salmon technique. While the process is incredibly simple, the potential variations are endless. Whether you're talking about the brine or post-cure seasonings, this is something that begs for adaptation. Smoked salt, chipotle, or smoked paprika could be used before or after the cure to make things a little loxier, and don't even get me started on the herbs. After the 3-minute cure, you can sprinkle your slices with dill, tarragon, chervil, and/or thyme.

Time 2h15m

Yield 4

Number Of Ingredients 4

2 ½ cups cold water
½ cup kosher salt (such as Diamond Crystal®)
⅓ cup white sugar
1 pound center-cut salmon fillet, pin bones removed

Steps:

  • Whisk water, salt, and sugar together in a large bowl until sugar and salt are completely dissolved.
  • Cut salmon along one side of the center connective tissue to the skin but not through. Turn the knife parallel to the cutting board and cut salmon meat from skin. Repeat for remaining side and discard skin and connective tissue. Cut each fillet into 1/4-inch slices.
  • Working in batches of 5, place slices in brine for 3 minutes. Remove cured slices using a slotted spoon to a wire rack and blot gently with paper towels. Arrange salmon in a single layer on a platter, cover with plastic wrap, and refrigerate until chilled, 2 hours to overnight.
