WINE SAUCE FOR SEAFOOD
This is a delicious sauce made with white wine, butter, lemon, tarragon, garlic and shallots. It is wonderful served over any white fish that has been baked or grilled.

Steps:
- Melt the butter in a small saucepan over medium-low heat. Add garlic and shallots; cook and stir until transparent, about 3 minutes. Season with tarragon, salt and white pepper. Increase the heat to medium, and stir in the white wine and lemon juice. Bring to a simmer, then whisk for 1 minute. Remove from the heat and sprinkle in parsley. Pour over your favorite white fish before serving.

From "A Taste of Old Cuba." this recipe originally came from a 1950's Cuban TV cooking show--Cocina al Minuto--and can be made in 30 minutes and it couldn't be easier. You can use any white fleshed fish (snapper, flounder, grouper, etc.) and it's a great meal with rice, salad, and good bread to sop up the sauce. I like to add one little hot red pepper, chopped, but that's up to you--as is the amount of garlic.

Steps:
- Blot the fillets dry--really dry--to avoid a watery sauce.
- In a blender, combine olive oil, wine, vinegar, parsley, onion, garlic, salt and pepper and blend on high until smooth.
- In a large skillet, arrange the fish snugly in a single layer and pour the sauce over the fish.
- If the fish won't fit in one layer, arrange the fish in two layers, pouring half the sauce over the first layer and the rest over the top.
- Bring the sauce to a boil over high heat.
- Immediately reduce the heat to low, partially cover the pan and gently simmer the fish for 15 to 20 minutes or until the fish flakes when pierced with a fork.
- Cooking time depends on the thickness of your fillets; if they are thin, they will be done in less time.

CATFISH FILLETS IN WHITE WINE SAUCE

- Preheat the oven to 400 degrees.
- Pat the catfish pieces dry. Rub a baking dish (a dish measuring about 2 by 13 by 8 inches is ideal) with one tablespoon of the butter. Arrange the fillets over the buttered dish in one layer.
- Add the wine. Scatter the mushrooms over all and sprinkle with salt and pepper to taste. Place in the oven and bake 10 minutes.
- Meanwhile, melt the remaining butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring with the whisk. When blended and smooth, remove from the heat.
- Pour the liquid from the baked fish into the sauce, stirring. Bring to the boil and cook, stirring often, about five minutes. Stir in the lemon juice. Pour the sauce over the fish and bake 10 minutes longer. Sprinkle with Parmesan cheese and parsley. Serve hot.

- Preheat the oven to 375°F.
- For the Wine Sauce:.
- Heat the oil in a large saute pan over medium heat, add the garlic and pepper flakes and saute for 1 minute or until the garlic is fragrant. Add the tomatoes and stir, every few minutes until they are blistering, but keep their shape (9-12 minutes).
- Add the wine, stir and allow the sauce to come to a mild simmer. Stir in the basil, lemon juice, lemon zest, salt & pepper, and cook for 2 minutes. Transfer the sauce to bowl, cover and set aside.
- For the Cod:.
- Heat the oil in the same pan on medium heat. Season the cod on both sides with salt and pepper. Add the seasoned fish to the hot pan and cook until golden brown, approximately 5 minutes. Carefully flip the fish over and place the pan in the oven for an additional 5 minutes, or until the fish is cooked.
- Pour the reserved sauce over the cod fish and serve.

- In a small pot, whisk together white wine, shallots and garlic.
- Cook over high heat until reduced to half. Remove from heat, cool slightly. When mixture is warm, cut in butter and whisk together. Add parsley and season with salt and pepper.
- Cover with plastic wrap and refrigerate for at least 30 minutes. Bring to room temperature before grill them. Heat grill over high heat.
- Brush fillets with olive oil and season with salt and pepper. Grill fish for 4 minutes per side, or until golden brown and fish flakes easily with a fork.
- Place fish in plates and top with the butter sauce. Serve immediately over warm pasta or with shrimp instead of fish, if you prefer.

WHITE FISH FILLETS IN SAUCE MADE WITH WHITE VINEGAR
This recipe has been made in my family since my grandmothers days- I am not sure of the origins but it could be some fusion recipe - maybe it was my grandmothers own creation but its a favorite with our family. Any firm fleshed white fish can be used. This goes well with rice or pasta or just with some good hearty home made bread

- WASH AND PAT DRY THE FILLETS.
- In a medium deep skillet heat the oil on medium heat , add the garlic, the cumin seeds, green chillies and then add the flour and blend well , lower the heat and add the water and blend well so no lumps remain.
- Mix the vinegar with 1 cup of water add it to the mixture. Keep the heat gentle , now add the sugar or splenda and salt. and the remaining water the cumin powder-taste it to see if it has a tangy sweet taste, add more salt if required if it's too sour add a bit more of the sugar or splenda, the sauce should be of a thick consistency. If satisfied with the taste, slip in the fish fillets gently and let it simmer.Do not cover the skillet.
- Beat the egg in a bowl and keep ready.
- Once the fish is done, (should take 10 to 15 minutes only), slowly drizzle the beaten egg and kill the heat. Do not stir just let the egg mixture swirl on the fish mixing it into the sauce-- shaking the skillet or dish will allow the egg to incorporate into the sauce.
- If this dish is made and to be served later then DO NOT add the egg at this time , You can reheat the fish in the sauce and just before serving add the egg.
- Garnish with the fresh chopped cilantro.
