THAI BEEF NOODLE SOUP - GWAYTIO NUEA NAM



Thai Beef Noodle Soup - Gwaytio Nuea Nam image

This is an excellent, quick, beef noodle soup that never fails to please. It is adapted from Jennifer Brennan's Original Thai Cookbook. For the noodles, try to find packets of wet noodle sheets. These can usually be found in Asian groceries, refrigerated, in clear plastic bags. If you can't find these, you can substitute dried rice noodles, but soak them first. The fish sauce is the Thai Nam Pla sauce, or Tiparos, found in the Asian section of supermarkets, or in Asian groceries.

2 tablespoons peanut oil
1/2 lb round steak, fat removed, sliced into thin strips
5 garlic cloves, chopped
1/2 lb ground beef
2 stalks celery, sliced diagonally into inch-long pieces
2 scallions, thinly sliced
3 pints beef stock
1 teaspoon ground black pepper
1/2 teaspoon ground cinnamon
4 tablespoons fish sauce
12 ounces wet noodle sheets, cut into strips
1 cup bean sprouts
2 tablespoons fresh cilantro leaves, chopped
2 tablespoons white vinegar (optional)
1 tablespoon dried red pepper flakes (optional)

Steps:

  • Fry beef strips in the oil until browned, using a large soup pot.
  • Remove the browned strips, leaving the oil and juice in the pot.
  • Fry the garlic until golden, stirring to keep from burning.
  • Quickly add the ground beef, celery, and scallions--cook while stirring until the beef just browns.
  • Add beef stock, black pepper, cinnamon, and fish sauce.
  • Bring to a boil.
  • Add noodles and return to a boil.
  • Remove from heat and add bean sprouts.
  • Top with beef strips and cilantro (this can also be done after putting the soup into the individual bowls).
  • If desired, soak the red pepper flakes in the vinegar, and allow to be added to individual bowls.

The grilled aroma of the steak and the smokiness of the piquant dipping sauce contribute to the appeal of this classic dish.

4 rib eye or New York strip steaks, about 1 1/2-inches thick (about 12 ounces; 342g each)
2 tablespoons (30ml) dark soy sauce
1 tablespoon (15ml) oyster sauce
1 tablespoon (14g) light or dark brown sugar
1 tablespoon (15ml) plain vegetable oil

Steps:

  • Mix together the soy sauce, oyster sauce, brown sugar, and vegetable oil in a medium mixing bowl. Coat the steaks with the soy sauce mixture and let them marinate while you work on the dipping sauce.
  • Combine all ingredients for the dipping sauce in a small bowl and mix. If using, peel and deseed the tomatoes. Chop the pulp finely, and add it to prepared dried chile dipping sauce; set aside.
  • Light one chimney full of charcoal . When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Alternatively, set all the burners on a gas grill to high heat. Clean and oil the grilling grate .
  • Grill the steaks, turning frequently, until desired doneness is reached (medium-rare is recommended-steaks should register 125°F on an instant read thermometer when removed from grill). Remove from grill and let rest for 5 minutes. (See the importance of resting meat ).
  • Cut the steaks into 1/4-inch slices and serve with the dipping sauce. Warm sticky rice on the side is highly recommended.

1 1/2 pounds flank steak
5 tablespoons vegetable oil, plus more for the grill
4 tablespoons Thai red curry paste
6 ounces rice vermicelli
2 red bell peppers, sliced into thick strips
12 ounces green beans, trimmed
Kosher salt and freshly ground pepper
1/4 cup fresh lime juice (from 2 to 3 limes)
2 tablespoons packed light brown sugar
2 teaspoons fish sauce
1 teaspoon Asian chili-garlic sauce
1 cup fresh basil

Steps:

  • Bring a large pot of water to a boil. Meanwhile, preheat a grill to medium high and line one side with foil. Pound the steak between 2 pieces of plastic wrap until 3/4 inch thick; cut in half lengthwise. Stir 1 tablespoon vegetable oil and the curry paste in a small bowl and spread all over the steak.
  • Add the rice noodles to the boiling water and cook as the label directs. Drain and rinse under cold water; shake off the excess water. Snip the noodles into pieces with kitchen shears.
  • Brush the uncovered side of the grill with vegetable oil. Toss the bell peppers and green beans with 1 tablespoon vegetable oil, 1/2 teaspoon salt and a few grinds of pepper and place on the foil. Grill the vegetables, stirring, until charred, about 10 minutes. Meanwhile, season the steak with salt and pepper and cook on the other side of the grill until marked, 4 to 5 minutes per side for medium rare; transfer to a cutting board. Chop the vegetables.
  • Whisk the remaining 3 tablespoons vegetable oil with the lime juice, brown sugar, fish sauce, chili-garlic sauce and 2 tablespoons water in a large bowl. Add the rice noodles, vegetables and basil; season with salt and pepper and toss. Divide among plates. Thinly slice the steak and add to the plates.

1 tablespoon soy sauce
1 tablespoon mild honey
2 tablespoons Asian fish sauce, divided
1 pound flank steak
3 tablespoons vegetable oil, divided
2 large shallots, thinly sliced (1 cup)
1 tablespoon finely chopped peeled ginger
1 1/2 teaspoons Thai green-curry paste
1 3/4 cups reduced-sodium beef broth
1 tablespoon fresh lime juice
1 red bell pepper, cut into 1/4-inch strips
1 bunch scallions, trimmed and cut into 3-inch pieces
3/4 pound dried Asian egg noodles
Equipment: a large (2-burner) ridged grill pan (preferably cast-iron)
Garnish: lime wedges; Asian fish sauce

Steps:

  • Mix together soy, honey, 1 tablespoon fish sauce, and 1/4 teaspoon salt in a shallow baking dish, then add steak and turn to coat. Marinate at room temperature 20 minutes.
  • While steak marinates, heat 2 tablespoons oil in a small heavy saucepan over medium-high heat until it shimmers, then cook shallots, stirring occasionally, until browned well, about 8 minutes. Add ginger and curry paste and cook, stirring occasionally, 1 minute, then add broth and simmer 5 minutes. Stir in lime juice, remaining tablespoon fish sauce, and salt to taste and keep warm, covered.
  • Heat grill pan over medium-high heat until hot, then lightly oil. Grill steak, turning once, about 8 minutes total (for rare). Transfer to a cutting board and let stand 5 minutes.
  • Meanwhile, toss bell pepper and scallions with remaining tablespoon oil, then grill, turning frequently, until softened, about 5 minutes. Transfer to a large bowl.
  • While steak stands, cook noodles in a pasta pot of boiling unsalted water until al dente, 4 to 7 minutes. Drain well, then add to vegetables and toss well. Divide noodles among 4 deep bowls and top with broth. Cut steak in half lengthwise, then thinly slice across the grain and serve on top of noodles.
