I'm not quite sure where this recipe came from. But, it's been a longtime favorite in my family. This is an unusual recipe.

2 tablespoons oil
1 medium yellow onion, sliced
2 garlic cloves
black pepper, to taste
crushed red pepper flakes, to taste
2 (16 ounce) packages bratwursts, white colored ones work best
2 tablespoons flour
2 (12 ounce) cans light beer
16 ounces light sour cream
1 lb flat noodles

Steps:

  • Heat oil and garlic in a large saucepan. Add onion, black pepper, and red pepper to pan. Saute until soft and golden.
  • Add bratwurst to pan and brown. Remove bratwurst from pan.
  • Add flour to pan & stir to absorb oil.
  • Slowly add beer to pan & stir well. Return bratwurst to pan. Cover and simmer 30 min, stirring occasionally.
  • Slowy stir in sour cream. Make sure to gradually add sour cream so that it does not curdle.
  • Heat through.
  • Serve over hot buttered noodles.

Due largely to residents' German ancestry, brats are a common site at butcher shops, restaurants and even baseball stadiums. (Madison, Wisconsin is home to an annual "Brat Fest") Michael Symon's simple recipe calls for the links to be cooked with onions, garlic and tangy sauerkraut and then served on a baguette.

2 pounds fresh bratwurst links
2 onions, chopped
2 garlic cloves, minced
3 cups chicken stock
1 tablespoon paprika
1 tablespoon caraway seed
4 cups sauerkraut, drained
2 tablespoons chopped fresh dill
1 baguette

Steps:

  • In a large pan, heat oil over high heat. Brown bratwurst in oil and reduce heat to medium. Add onions and garlic and cook until lightly caramelized. Add stock, paprika, caraway seeds, and sauerkraut and simmer for 45 minutes. Remove from heat and stir in fresh dill. Serve on baguette.

Canola oil, for frying
3 tablespoons butter
1 small onion, minced
1/2 head red cabbage, thinly sliced
Salt and freshly cracked black pepper
Pinch crushed red pepper flakes
1/4 cup sugar
1/4 cup apple cider
1/4 cup chicken stock
1 cup sour cream
1 shallot, minced
1 lemon, zested and juiced
1 teaspoon cayenne pepper
2 tablespoons chopped chives
Salt and freshly ground black pepper
Peels from 4 potatoes
4 bratwurst sausages
4 steak rolls, split on 1 side

Steps:

  • In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
  • Preheat a grill on medium-high.
  • In a large skillet over medium-high heat, add the butter. Stir in the onions and cook until translucent, about 1 minute. Add the cabbage and cook until softened, about 3 to 4 minutes. Season the cabbage with salt, pepper, and crushed red pepper, to taste. Add the sugar, cider and stock. Cook until the cabbage is al dente, about 6 to 8 minutes
  • In a small bowl, mix together the sour cream, shallot, lemon zest, lemon juice, cayenne and chives. Season the cremolata with salt and pepper, to taste.
  • Add potato peels to the fryer and fry until crisp, about 3 minutes Remove to a paper towel lined platter and season with salt and pepper, to taste.
  • Grill the bratwurst, turning frequently until cooked through, about 8 to 10 minutes
  • To assemble:
  • Open the rolls and spread with some of the sour cream cremolata. Add the sausage and some warm braised cabbage. Top each with some crispy potatoes and finish with a little more cremolata before serving.

2 tablespoons butter
1/4 cup cold water
1 tablespoon flour
1/2 teaspoon salt
1 cup sour cream

Steps:

  • Put the sausage into boiling water, remove from the heat and let soak for 5 minutes.
  • Drain and pat dry with paper towels.
  • Melt the butter over moderate heat in a large frying pan, add the bratwurst and cooking, turning often until they are brown on all sides.
  • Add the water, lower the heat and simmer uncovered for 15-20 minutes.
  • Add more water if needed.
  • Put the sausages on a plate and cover.
  • Beat the flour and salt into the sour cream.
  • Add into the liquid remaining in the skillet.
  • Cook over a low heat, stirring, for 5-8 minutes until the sauce is slightly thickened and smooth.
  • Do not boil.
  • Serve over the bratwurst, either whole or sliced.

3 medium Yukon gold potatoes (about 3/4 pound total)
1 pound sauerkraut, drained, rinsed and squeezed dry
1/4 cup chopped fresh parsley and/or dill
2 large eggs, lightly beaten
1 bunch scallions, thinly sliced
Kosher salt and freshly ground pepper
2 tablespoons all-purpose flour
1 teaspoon extra-virgin olive oil, plus more for frying
4 links bratwurst (about 1 pound total)
6 tablespoons whole-grain mustard
2 tablespoons sour cream

Steps:

  • Pierce the potatoes in a few places with a fork; microwave until slightly softened, about 4 minutes, then halve lengthwise. When cool enough to handle, grate the cut sides on the large holes of a box grater into a large bowl.
  • Add the sauerkraut to the grated potatoes along with the herbs, eggs, three-quarters of the scallions, 1 teaspoon salt, and pepper to taste. Stir in 1 tablespoon flour, then form into four 1/2-inch-thick patties. Sprinkle the patties with the remaining 1 tablespoon flour.
  • Heat the olive oil in a medium skillet over medium heat. Pierce the bratwurst all over with a fork, add to the pan and cook, turning, until golden brown, 5 minutes per side. Meanwhile, heat 1/3 inch olive oil in a large skillet over medium heat. Add the potato patties and cook until golden, 6 minutes per side. Drain on paper towels.
  • Remove the bratwurst from the skillet and reduce the heat to medium low. Add 1/2 cup water and bring to a simmer, then add the mustard and sour cream and stir until hot. Cut the bratwurst into pieces and serve with the potato cakes, sauce and the remaining scallions.

1 pound fresh bratwurst sausages
1 (32 ounce) package sauerkraut
1 pinch celery salt
1 tablespoon brown sugar
1 (15 ounce) can baked beans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cook bratwurst in a skillet over medium-high heat just until nicely browned on the outside.
  • Spread sauerkraut in the bottom of a 9x11 casserole dish, leaving a 2 inch margin at the edges. Sprinkle celery salt and brown sugar over the sauerkraut. Place the sausages on top. Pour the beans around the outer edge of the sauerkraut. Cover the dish with a lid or aluminum foil.
  • Bake for about 45 minutes in the preheated oven, until bratwurst links are cooked through.

1 pound uncooked bratwurst links, casings removed
1/2 cup chopped onion
1 medium carrot, chopped
2 cans (15-1/2 ounces each) navy beans, rinsed and drained
1/4 cup pickled jalapeno slices, chopped

2 cups reduced-sodium chicken broth
1/4 cup all-purpose flour
1-1/2 cups 2% milk, divided

  • In a Dutch oven, cook and crumble bratwurst with onion and carrot over medium heat until meat is no longer pink, 5-7 minutes; drain. , Stir in beans, jalapeno, pepper and broth; bring to a boil. SARASOTA'S SO-CALLED CROCKPOT BEER BRATWURST & VEGGIES

This is nothing fancy and just true comfort food. A family style platter of slow cooked carrots, onions, potatoes, bratwurst and sauerkraut, all braised in a beer broth. The crock pot works great for this or you can use any oven proof pot as well. Just a little chopping, a bottle of beer, some seasoning and you are set. Before serving, I do like to take a little of the cooking liquid, cool for a few minutes and add some sour cream, horseradish, and stone ground mustard to make a great warm sauce for the brats and vegetables.

10 bratwursts, cut in 1/3 's on a angle (brats I buy are fresh, but come in a package of 5, so I happen to use 2 pkgs but I don't mind having)
2 large sweet onions, rough chopped
24 small red potatoes, skin on
2 cups carrots, cut on an angle about 2-inch pieces
2 cups sauerkraut, rinsed and drained (you can use 1 can, 15 oz, but I prefer a fresh bagged sauerkraut from the Deli or meat aisle of your)
12 ounces a honey lager works beat but any beer will work, stay away from a heavy Guinness stout or 12 ounces stout beer
1 teaspoon stone ground mustard (you can use dijon is you don't have stone ground)
1 teaspoon minced garlic
1 bay leaf
3 sprigs fresh thyme
2 tablespoons butter
salt
pepper
1 cup cooking liquid
1/2 cup sour cream
1 teaspoon horseradish (to taste, more or less)
1 tablespoon stone ground mustard (more or less to taste)
salt
pepper

Steps:

  • Chop -- Simply cut the brats in 3 pieces each on a angle. Carrots, peel, again chop on a angle (I just like how it looks) in about 2" pieces. Onion, I use 2 large onions, rough chopped. Potatoes, small ones I leave whole, if they are large I will cut in half. Not too small or they get mushy.
  • Crockpot -- Brats on the bottom with the carrots, then onions and topped with potatoes. Top all that with the sauerkraut.
  • Sauce -- In a small bowl or measuring cup, add the butter and melt in the microwave for 10 seconds, remove and then add in the beer, mustard, bay leaf, 1 teaspoon black pepper and garlic. Pour over the brats and vegetables. Lay 3 springs of thyme right on top of the sauerkraut.
  • Cook -- Crockpot - low 6-8 hours. My crock pot takes 7 hours, but every crockpot is different. You just want the potatoes and carrots to be tender. The brats will easily be done. Right at the end of cooking, check for seasoning. No salt was added, but the sauerkraut even though it was rinsed can be salty, so go easy. Besides you are serving a sauce with this dish which also has seasoning.
  • Sauce -- This is a great compliment to this dish. You can always just serve it with some mustard, but I love this sauce served on each persons plate in a small side bowl for dipping or for pouring over the vegetables. It is similar to the consistency of gravy.
  • Remove the cooking liquid to let it cool slightly before you add it to the sour cream so it does not break the sour cream. It will cool in just a few minutes. In a small bowl add the sour cream, horseradish, mustard, salt and pepper. It is a nice creamy spicy sauce to serve with the brats and vegetables. My Mom always adds more mustard to her portion, so just go by taste. I happen to love my horseradish sauce, so -- each person is unique in their own taste.

1 cup chopped onion
1 teaspoon dry mustard
2 tablespoons margarine or 2 tablespoons butter
1 lb fully cooked bratwurst, sliced into 3/4 inch pieces
1 cup beer
1 (4 ounce) can sliced mushrooms, drained
1/4 cup beef broth
2 teaspoons sugar
2 tablespoons all-purpose flour
1/2 cup sour cream
2 cups hot cooked noodles
2 tablespoons snipped parsley

Steps:

  • Cook onion and mustard in margarine till tender.
  • Stir in bratwurst, beer, mushrooms, beef broth, sugar and 1/4 teaspoons pepper.
  • Simmer 5 minutes.
  • Stir flour into sour cream.
  • Stir some pan juices into sour cream mixture to thin.
  • Stir into bratwurst mixture.
  • Cook and stir till thickened and bubbly.
  • Cook and stir 1 minute more.
  • Serve over noodles.
  • Sprinkle with parsley.

This is a tasty recipe I got out of a cookbook from Iowa favorite recipes. Use plain sauerkraut. It is a great recipe as it does not involve the oven in the hot summertime. I snarf this one.

4 -8 slices of uncooked bacon
3 lbs sauerkraut (3-4 small cans, drained)
2 tablespoons caraway seeds (optional)
4 pork chops
2 tablespoons butter
4 bratwursts
1 (12 ounce) can beer
1 medium onion, sliced
seasoning salt

Steps:

  • Season chops w/ seasoning salt and brown chops in butter-get them golden brown. Do not worry about them being undercooked.
  • Brown brats-you can brown them with chops if you are a multi-task person.
  • Using a large skillet with a lid, place bacon slices in bottom, top with 1/2 of sauerkraut and 1 Tbs. caraway seed.
  • Put the brats around the outside edge of pan and chops in the middle. Top with sliced onion.
  • Top with remaining kraut and caraway seed.
  • Pour beer over all and cover.
  • Simmer for one hour.
  • Eat.

4 to 6 fresh bratwurst links
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon canola oil
2 cups sliced fresh mushrooms

2 tablespoons cider vinegar

1/2 teaspoon salt

  • In a large skillet, brown bratwurst; remove and set aside. In the same skillet, saute onion and garlic in oil until tender. Add mushrooms, tomatoes, vinegar, bay leaf, caraway, salt and pepper. Cook and stir for 2-3 minutes. , Return bratwurst to skillet. Add apple juice; bring to a boil. Reduce heat; cover and simmer for 18-22 minutes or until a thermometer reads 160°., Discard bay leaf. Remove bratwurst; keep warm. Combine cornstarch and water until smooth. Gradually add to sauce mixture; bring to a boil. Boil and stir for 2 minutes. Serve with the bratwurst.
