PERFECT GRILLED ZUCCHINI

Steps:
- Preheat grill on medium-high. In a large bowl, toss zucchini with oil, red wine vinegar, parsley, basil, and garlic powder. Season with 1/4 teaspoon salt and black pepper, to taste.
- Once grill is hot, carefully use tongs to rub an oiled paper towel over grates to clean.
- Using tongs, place zucchini on grill. Cover and cook, 2 to 3 minutes. Flip and continue cooking on high, covered, 2 to 3 minutes more
- When zucchini is tender, remove from heat, taste for salt and adjust as needed and eat right away.

Steps:
- 1. Mix last 4 ingredients in a medium sized microwaveable dish.Microwave on high for about 30-40 seconds or til boiling.
- 2. Remove from microwave and dip both sides of each ring into garlic oil mixture.
- 3. Place in a deep dish and pour any remaining garlic oil over top.
- 4. Cover and refridgerate for 4 hours or over night.Grill on medium heat til well browned and tender.
- 5. Serve warm.
GRILLED ZUCCHINI WITH HERB SALT AND FETA
Steps:
- For the herb salt: Combine the salt, oregano and thyme in a small bowl and mix to blend.
- For the grilled zucchini: Brush the zucchini planks on both sides with olive oil and sprinkle on both sides with some of the herb salt. Transfer the zucchini to a grill pan set over medium heat and cook until tender, about 5 minutes, flipping halfway through. Remove the zucchini to a serving plate and sprinkle with the feta.

GRILLED ZUCCHINI
This simple grilled zucchini will be a regular on your summer menu! Perfectly crisp-tender (not soggy!), it's a healthy and fast side dish!

- Preheat a gas or charcoal grill to high heat (400 to 450 degrees F). Trim off the ends of each zucchini and cut it lengthwise into quarters so that you have four batons per zucchini. Place on a rimmed baking sheet or on a large baking pan.
- Drizzle the zucchini with olive oil and sprinkle with Italian seasoning (if using), salt, and pepper.
- Place the zucchini on the grill so that one of the cut sides is touching the grates. Grill for 4 minutes, until clear grill marks appear.
- Flip the zucchini over onto the back (peel) side. Grill for 5 additional minutes. At this point, you can flip it to the remaining ungrilled cut side for 1 to 2 minutes if you'd like grill marks on all surfaces (we usually just serve it as is!). Transfer back to the baking sheet or to a serving platter.
- Squeeze the lemon over the top and sprinkle with Parmesan. Enjoy!

- Preheat grill for medium heat and lightly oil the grate.
- Whisk olive oil, sea salt, garlic, rosemary, and black pepper together in a bowl; brush evenly onto zucchini strips.

FRIED ZUCCHINI RINGS
My neighbor gave me a very large zucchini. So I made this, I think the sauce complements the zucchini very well. I hope people like this.

- Zucchini:.
- Slice the zucchini about a 1/4 inch thick, using a mandolin, or a knife.
- In a plate place the flour, in another put the breadcrumbs and in a bowl whisk the eggs and the milk together.
- Then dip a slice of zucchini in the flour, then in the egg mixture, then in the breadcrumbs.
- While you are breading the zucchini, heat enough oil to coat the skillet.
- Fry the zucchini on medium low until a deep brown on each side. Place on a plate and keep warm.
- Sauce:.
- Combine the shortening and the flour on medium heat till shortening is melted.
- Simmer 1 minute.
- Then in the food processor or blender add the zucchini till pureed.
- Then add the broth, and pulse.
- Pour the mixture through a cheesecloth, then slowly whisk the broth mixture into the shortening/flour mixture.
- Heat till thickened.
- Serve over the zucchini.

Steps:
- Cut the Zucchini in half lengthwise (you can also use yellow summer squash).
- Spread butter or margarine on one half of the squash.
- Sprinkle the garlic, cheese's and spices on the other half.
- (Use as much or as little as you like) Place the buttered half on top of the half with the cheese and spices.
- Slice in half or if squash is real big, cut in thirds or fourths.
- Wrap each portion in aluminum foil and place on grill.
- Grill for about 10 to 15 minutes turning often.
