HAVARTI TUNA MELT
Break out the broiler to give this open-face Havarti Tuna Melt its top layer of gooey, melty cheese. Dried cranberries and dill weed add extra flavor.

Steps:
- Heat broiler.
- Combine first 5 ingredients.
- Cover each bread slice with 1 tomato slice, half the tuna mixture and 1 cheese slice. Place on rack of broiler pan.
- Broil 2 min. or until tuna mixture is heated through and cheese is melted.

TUNA MELTS WITH HORSERADISH MAYONNAISE

Steps:
- Position a rack in the upper third of the oven and preheat to 475 degrees F. Combine 4 tablespoons mayonnaise, the tuna, celery, scallions, parsley and vinegar in a large bowl and mix well. Season with salt and pepper.
- Combine the remaining 2 tablespoons mayonnaise with the mustard and horseradish in a small bowl; spread on the bread slices and arrange on a baking sheet. Mound the tuna mixture on top and pat it into an even layer. Top each with 1 cheese slice, tearing it as needed to cover the tuna mixture.
- Season the tomato slices with salt; place 2 slices on top of each sandwich, then top each with another cheese slice. Bake until the cheese melts, 5 to 7 minutes. Serve with dill pickles if using.
ULTIMATE TUNA MELTS
Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.
HAVARTI TUNA MELTS
This was an experiment for lunch that worked. I love Havarti Cheese, it's so buttery and creamy and melts well.

- mix together your drained tuna, mayo, relish and seasoning
- toast your bread, this should make 2-3 slices or 2 generous ones. After the toast is toasted, lightly butter it, then spread your tuna mixture on the toast, spread all the way to the edges.
- place one slice of Havarti Dill Cheese on top, it should fit perfectly, put your toast on a cookie sheet and BROIL in the oven for only a couple of minutes, until the cheese is melting down the side of the toast. This is an open faced tuna melt, I forgot to mention that. You can serve this with fruit or potato chips or both....yummy!!!!

- Add the avocado, yogurt, mayo, garlic, arugula, herbs, chives, lemon juice, salt and pepper to a food processor and blend until combined. You want the mixture to be creamy and spreadable!

Heat the broiler in the oven to high and place the tuna toasts under for just 1 to 2 minutes, until the cheese is melty. Serve immediately with potato chips or whatever side you'd like!
