GRILLED BRATS WITH QUICK-COOKED CABBAGE

Grilled Brats with Quick-Cooked Cabbage image

In German cuisine, bratwursts typically come with sauerkraut or red cabbage. We say, why choose? This recipe combines those ideas, with a tangy-tart braised cabbage that cooks in just a few moments. Cooking the brats with a combination of water and beer, if desired, infuses the sausages with even more flavor. Serve with German mustard and German potato salad on the side.

6 bottles dark beer
2 cups water
1 teaspoon coriander seeds
1 teaspoon caraway seeds
1 teaspoon mustard seeds
1 (1-inch) piece of fresh ginger, peeled and chopped
Hot dog buns, brown bread, or hoagie buns
Sweet and hot German mustard, optional, for garnish
Spicy brown mustard, optional, for garnish
Red Cabbage Sauerkraut, recipe follows
Pickles, optional, for garnish

BEER GLAZED GRILLED BRATWURST WITH WILTED RED CABBAGE SLAW

Beer Glazed Grilled Bratwurst with Wilted Red Cabbage Slaw image

Provided by Bobby Flay

Categories     main-dish

Time 1h5m

Yield 8 servings

Number Of Ingredients 14

2 pounds precooked bratwurst, pricked with a fork
6 cups German beer
2 tablespoons caraway seeds
2 tablespoons coriander seeds
2 tablespoons yellow mustard seeds
2 large onions, sliced
One 6-inch hand ginger, sliced into rough coins
2 tablespoons canola oil
1/2 head red cabbage, thinly sliced
4 tablespoons honey
1/4 cup cider vinegar
Salt and freshly ground black pepper
1/4 cup Dijon mustard
8 soft hoagie rolls

Steps:

  • Put the bratwurst, beer, 1 cup water, the caraway, coriander, mustard seeds, onions and ginger in a medium stockpot. Bring to a simmer over medium heat and cook for 5 minutes. Cover, remove from the heat, and let stand 15 minutes.
  • Transfer the brats to a bowl. Strain the cooking liquid into another bowl, and discard the solids.
  • Heat the oil in a large saute pan over medium heat, add the cabbage and toss to coat. Add 1 cup of the strained bratwurst liquid, and cook until softened, stirring frequently, about 15 minutes. Add 2 tablespoons of the honey, the vinegar and some salt and pepper. Toss to coat, and cook another 5 minutes. Transfer to a bowl.
  • Preheat the grill to high, with direct and indirect heat. Grill the sausages over direct heat until the casings are crisp and golden brown on all sides, about 2 minutes per side. Move the brats to indirect heat, cover the grill, and cook another 5 minutes.
  • While the brats cook, whisk the mustard, the remaining 2 tablespoons honey, some salt and pepper and a few tablespoons of the bratwurst liquid in a small bowl; the mixture should be syrupy. When the sausage are done, remove them to a platter and brush with the glaze.
  • Split the hoagie rolls and grill cut-side down until toasted, about 30 seconds. Put a brat in each roll and top with some cabbage, then serve.

  • While you wait for the pasta water to boil you can make the cheese sauce. To a medium size pot over medium heat, add butter and flour. Stir with a wooden spoon until butter is melted and flour has combined to make a paste. Slowly whisk in milk and continue to whisk until sauce has thickened, about four to five minutes. Once thickened, add half of the gruyere, all the parmesan, salt and pepper and continue to whisk until fully melted and sauce is smooth and thick. Set aside.
  • To a large skillet over medium high heat, add oil. Heat the oil for a few minutes and then add the sausages. Allow the sausages to begin to brown and then add the onions and garlic. Cook sausages, onions and garlic for an additional seven to eight minutes or until sausages are fully cooked. Remove the sausage mixture to a paper towel lined plate.

Reduce the heat to medium; cook the potatoes for 5 minutes. Drain (the potatoes will not be fully cooked), transfer to a rimmed baking sheet and toss with the melted butter. Roast until crispy on the outside and tender on the inside, 12 to 15 minutes; season with salt and white pepper.
