Steps:
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
- Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

- Preheat oven to 350 degrees F. Grease a large casserole dish.
- Distribute the sliced potatoes around the casserole dish. Set aside.
- Heat the oil in a frying pan. Add the cut bacon and cook for about 2 minutes.
- Add the chopped onions and cook for 5-6 minutes until onions are beginning to turn golden.
- Add garlic and cook for 1 additional minute.
- Spread the bacon and onion mixture over the potatoes. Season with salt, pepper, and sage.
- Meanwhile, in the same pan, cook the bratwurst for 5-6 minutes, flipping halfway through, until browned on each side.
- Add sausage to the casserole dish. Add the vegetable stock to the casserole dish and cover with foil. Bake for 50-60 minutes until potatoes are cooked through. Top with fresh sage if desired.

Steps:
- Boil your carrots and potatoes until they are almost tender; drain well.
- Put your brats in a skillet lightly prick them, pour in the beer, cover and simmer turning them once until the beer has evaporated.
- Finish browning the brats, remove and place them in an oven proof baking dish 8x8x2-inch or something similar.
- Return the skillet to medium heat add 1 tbs veggie oil and saute the onions until golden, add kraut, chili flakes, brown sugar, paprika, salt and pepper. Mix well scrapping all the bits of brown from the bottom of the pan.
- Your kraut mixture should now be a golden color. Add carrots and potatoes to the Brats; cover with the sauerkraut mixture, seal with foil.
- Bake in a 350°F over for 30- 45 minutes.
- Serve with Sweet Bavarian Mustard on the side.

- Spray 1 1/2 quart casserole with nonstick cooking spray, set aside.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.

- Simmer the sauerkraut for 10 minutes in boiling salted water. Drain.
- Meanwhile, in a large skillet, soften the onions in the butter, browning lightly. Add the sauerkraut, wine, stock, sugar, vinegar, salt and pepper. Bring to boil, turn down, cover and simmer, stirring occasionally, for 30 minutes.
- Meanwhile, simmer the bratwurst in water to cover for 20 minutes.
- Add the potatoes to the sauerkraut in the skillet and cook, covered, for 15 to 20 minutes or until tender.
- While the potatoes are cooking, drain the bratwurst and brown lightly on all sides under a hot broiler.
- To serve, put the sauerkraut and potatoes on a heated platter and arrange the bratwurst over the top.

- 1. Preheat oven 350 degrees
- 2. Brown Brats in skillet, discard excess grease
- 3. Slice potatoes & onions thin
- 4. Grease 9" x 9" glass casserole dish; line bottom with 1 each sliced potato, then 1/2 of the onions, then brat pieces, then 1/2 the can of mushrooms reserving the liquid in the can. Repeat layers.
- 5. In a mixing bowl; mix cream of celery soup, mushroom juice, and milk with a whisk. Pour over top of casserole covering as much as possible.
- 6. Bake 1 1/2hrs and remove from oven.

- Preheat oven to 350°. I put mine in the crockpot.
- Drain and rinse sauerkraut in a colander.
- Mix with all the ingredients in a bowl and pour into large casserole dish (or put in crockpot) Cover and bake for 1 1/4 to 1 1/2 hours.
- Or let cook in crockpot on low for several hours until potatoes are tender. I usually add 1 can of water and mix well. Add more water accordingly throughout the day.
- I let mine cook all day on low.
- You can also try substituting the brown sugar with applesauce and apple chunks (1/2 cup each) for color and texture.
- I also use the Bavarian kraut--this gives this dish a sweeter flavor--even my kids like it.

- Add potatoes to a sealable food bag and add the oil, seasoning, pepper and red pepper flakes - shake the bag to coat completely

Steps:
- Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
- Add diced potatoes to large saucepan, cover with water, and boil for 15-20 minutes. Drain and return potatoes to pan.
- In a large frying pan, add ⅓ cup of water, smoked sausage and onions. Cook until sausage has browned on both sides. Add more water, if needed.
- Stir minced garlic into sausage and onions and continue cooking for an additional minute. Remove from heat and place on a plate lined with paper towels, set aside.
- Mix soups, broth, all three cheeses and seasonings into potatoes. Stir.
- Add in sausage and onion mixture. Stir until combined.
- Pour into prepared baking dish and bake for 40 minutes uncovered. Carefully remove from oven, let sit for 10 minutes before serving.
- Optional: top with sour cream, green onions, cilantro

- Preheat the oven to 375 degrees F (190 degrees C). Grease an 11x13-inch baking dish with cooking spray.
- Place cubed potatoes in a large microwave-safe bowl and partially cover with a lid. Microwave on high for 4 minutes. Remove from the microwave and spread on the bottom of the prepared baking dish.
- Heat a large skillet over medium-high heat. Cook and stir breakfast and chorizo sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
