1 pound sage flavored breakfast sausage
3 cups shredded potatoes, drained and pressed
¼ cup butter, melted
12 ounces mild Cheddar cheese, shredded
½ cup onion, shredded
1 (16 ounce) container small curd cottage cheese
6 jumbo eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
  • Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

1 Tbsp canola oil
4 bacon strips (cut into small pieces)
2 onions (chopped)
4 garlic cloves (minced)
8 bratwurst links
6 yellow potatoes (thinly sliced)
1 tsp salt
1/2 tsp pepper
1/2 tsp ground dried sage
1 1/4 cups chicken stock
1 tsp fresh sage (chopped (optional))

Steps:

  • Preheat oven to 350 degrees F. Grease a large casserole dish.
  • Distribute the sliced potatoes around the casserole dish. Set aside.
  • Heat the oil in a frying pan. Add the cut bacon and cook for about 2 minutes.
  • Add the chopped onions and cook for 5-6 minutes until onions are beginning to turn golden.
  • Add garlic and cook for 1 additional minute.
  • Spread the bacon and onion mixture over the potatoes. Season with salt, pepper, and sage.
  • Meanwhile, in the same pan, cook the bratwurst for 5-6 minutes, flipping halfway through, until browned on each side.
  • Add sausage to the casserole dish. Add the vegetable stock to the casserole dish and cover with foil. Bake for 50-60 minutes until potatoes are cooked through. Top with fresh sage if desired.

I Challenge those of you that do not like Sauerkraut to try this recipe - I'll bet you'll say" Hey that ole Kraut isn't half bad!". This is easy to make, very little preparation and the bake time is 45 minutes where you can be doing other things. A small green salad will go well along side

1 (5 count) package bratwursts (usually I prefer Johnsonville, but any other brand will do)
1 cup lager beer, don't waste the rest of the can drink it while you are preparing the recipe
12 baby carrots, almost completely cooked, approx 8 minutes in boiling water depending on the size
12 baby potatoes, almost completely cooked approx 12 minutes in boiling water, depending on size
1 tablespoon vegetable oil
1 medium cooking onion, cut into 8 wedges
2 cups wine-cured sauerkraut, squeezed to get as much moisture out as possible
4 tablespoons brown sugar or 4 tablespoons brown sugar substitute
1 teaspoon chili flakes (I recommend using) (optional)
1 teaspoon paprika
salt & pepper
sweet bavarian mustard

Steps:

  • Boil your carrots and potatoes until they are almost tender; drain well.
  • Put your brats in a skillet lightly prick them, pour in the beer, cover and simmer turning them once until the beer has evaporated.
  • Finish browning the brats, remove and place them in an oven proof baking dish 8x8x2-inch or something similar.
  • Return the skillet to medium heat add 1 tbs veggie oil and saute the onions until golden, add kraut, chili flakes, brown sugar, paprika, salt and pepper. Mix well scrapping all the bits of brown from the bottom of the pan.
  • Your kraut mixture should now be a golden color. Add carrots and potatoes to the Brats; cover with the sauerkraut mixture, seal with foil.
  • Bake in a 350°F over for 30- 45 minutes.
  • Serve with Sweet Bavarian Mustard on the side.

1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Spray 1 1/2 quart casserole with nonstick cooking spray, set aside.
  • Cook sausage, stirring to separate, in large skillet over medium heat until no longer pink, drain fat and discard.
  • Stir together soup, milk, onion, salt and pepper in medium bowl.

1 pound sauerkraut (1 can), drained
1 onion, sliced thin
1 tablespoon butter
1/2 cup dry white wine
1 cup chicken stock
1 tablespoon brown sugar
1 tablespoon white wine vinegar
Coarse salt and freshly ground pepper to taste
8 bratwurst sausages
12 small red-skinned potatoes

Steps:

  • Simmer the sauerkraut for 10 minutes in boiling salted water. Drain.
  • Meanwhile, in a large skillet, soften the onions in the butter, browning lightly. Add the sauerkraut, wine, stock, sugar, vinegar, salt and pepper. Bring to boil, turn down, cover and simmer, stirring occasionally, for 30 minutes.
  • Meanwhile, simmer the bratwurst in water to cover for 20 minutes.
  • Add the potatoes to the sauerkraut in the skillet and cook, covered, for 15 to 20 minutes or until tender.

1 pkg 14 oz. johnsonville stadium brats, cut into bite-size pieces
1 can(s) 10 oz. cream of celery soup
1 can(s) 4 oz. mushroom stems & pieces
2 large idaho bakers
1 large white onion
fresh ground pepper
1/2 soup can of milk

Steps:

  • 1. Preheat oven 350 degrees
  • 2. Brown Brats in skillet, discard excess grease
  • 3. Slice potatoes & onions thin
  • 4. Grease 9" x 9" glass casserole dish; line bottom with 1 each sliced potato, then 1/2 of the onions, then brat pieces, then 1/2 the can of mushrooms reserving the liquid in the can. Repeat layers.
  • 5. In a mixing bowl; mix cream of celery soup, mushroom juice, and milk with a whisk. Pour over top of casserole covering as much as possible.
  • 6. Bake 1 1/2hrs and remove from oven.

ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.

This is good used with Bavarian sauerkraut for a sweeter taste. Put in crock pot and forget about it. My mother made this first then passed the recipe to me. It originated from American Profile Magazine.

2 (14 ounce) cans sauerkraut
1 large onion (chopped)
2 garlic cloves (crushed)
3/4 cup brown sugar
1 bay leaf
1 (1 lb) package kielbasa, cut into 1 to 2 inch pieces
4 -6 potatoes, peeled and cut into 1 inch squares

Steps:

  • Preheat oven to 350°. I put mine in the crockpot.
  • Drain and rinse sauerkraut in a colander.
  • Mix with all the ingredients in a bowl and pour into large casserole dish (or put in crockpot) Cover and bake for 1 1/4 to 1 1/2 hours.
  • Or let cook in crockpot on low for several hours until potatoes are tender. I usually add 1 can of water and mix well. Add more water accordingly throughout the day.
  • I let mine cook all day on low.
  • You can also try substituting the brown sugar with applesauce and apple chunks (1/2 cup each) for color and texture.
  • I also use the Bavarian kraut--this gives this dish a sweeter flavor--even my kids like it.

  • Preheat oven to 200C/400F
  • Add potatoes to a sealable food bag and add the oil, seasoning, pepper and red pepper flakes - shake the bag to coat completely
  • In a pan, fry the sliced sausage along with the water until most of it has evaporated, Remove the sausage and let cool
  • Now add the sausage to the food bag. Melt butter in a pan and cook the onions and garli. Allow this to cool also and then add to the food bag
  • Finally, add the green beans to the food bab also and give it a shake so all ingredients are well combined. Empty the bag into a 9x13 baking dish
  • Cover with foil then cook in the oven for 40 minutes

1 lb smoked sausage, (sliced into ¼ inch thick slices)
⅓ cup water
3 lbs red potatoes, (peeled, dice into bite-size chunks)
1 large onion, (chopped)
3 cloves garlic, (minced)
1 cups sharp cheddar cheese, (shredded)
1 cup monterey Jack cheese, (shredded)
1 cup mozzarella cheese, (shredded)
1 tsp Slap Ya Mama seasoning
1 tsp salt
1 tsp black pepper
¼ tsp cayenne pepper
¼ tsp red pepper flakes
10.5 oz can cheddar cheese soup
10.5 oz can cream of celery soup
14.5 oz can beef broth

Steps:

  • Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
  • Add diced potatoes to large saucepan, cover with water, and boil for 15-20 minutes. Drain and return potatoes to pan.
  • In a large frying pan, add ⅓ cup of water, smoked sausage and onions. Cook until sausage has browned on both sides. Add more water, if needed.
  • Stir minced garlic into sausage and onions and continue cooking for an additional minute. Remove from heat and place on a plate lined with paper towels, set aside.
  • Mix soups, broth, all three cheeses and seasonings into potatoes. Stir.
  • Add in sausage and onion mixture. Stir until combined.
  • Pour into prepared baking dish and bake for 40 minutes uncovered. Carefully remove from oven, let sit for 10 minutes before serving.
  • Optional: top with sour cream, green onions, cilantro

This cheap, easy sausage and potato casserole recipe is comfort food at its best. It's filling, it's simple, and uses just six ingredients.

1 tbsp oil
500g new potatoes, halved
454g pack sausages
1 onion, sliced (200g)
1 green pepper, diced (170g)
340g jar tomato pasta sauce

Steps:

  • Heat the oil in a large frying pan and fry the potatoes and sausages for 5 mins.
  • Add the onion and pepper and cook for a further 5 mins, turning the sausages occasionally until browned.
  • Add the pasta sauce, rinse the jar out with a splash of water and add to the pan. Cook, covered for 15 mins. Serve.

This recipe is very conducive to additions or modifications of ingredients for variety. I make this large quantity because leftovers freeze well for future meals.

cooking spray
5 medium potatoes, peeled and cubed
1 ½ pounds breakfast sausage
6 ounces chorizo sausage
1 ½ large green bell peppers, chopped
1 large onion, chopped
2 (4 ounce) cans sliced mushrooms, drained
20 large eggs
½ cup milk
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 11x13-inch baking dish with cooking spray.
  • Place cubed potatoes in a large microwave-safe bowl and partially cover with a lid. Microwave on high for 4 minutes. Remove from the microwave and spread on the bottom of the prepared baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir breakfast and chorizo sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add bell peppers, onion, and mushrooms. Saute until bell peppers and onion are softened, about 5 minutes. Spread mixture over the potatoes.
  • Beat eggs in a bowl and add milk. Pour beaten eggs over everything in the baking dish and move around a bit with a spoon to evenly disperse. Sprinkle Cheddar cheese over top until well covered. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake until egg is set, about 1 more hour. If cheese starts to brown too much, cover again with foil for the rest of the baking time.

1/2 onion, thinly slice
1 lb bratwurst, sliced
1 (10 3/4 ounce) can can mushroom soup

Steps:

  • In greased 9x13 casserole, layer half of potatoes, onions, and bratwurst.
  • Spread half the can of soup of this.
  • Repeat.
  • Cover with foil.
  • Bake at 350F for 30-45 minutes.
  • Remove foil and bake another 15 minutes or more until top is brown and vegetable are done.

  • Heat 1 tablespoon vegetable oil in a large dutch oven or stock pot on medium heat. Brown the brats on each side for 3 minutes. Set aside and add diced onions to sweat for 3 minutes. Stir in the red potatoes, salt, pepper, and 1/2 cup of water. Cover and simmer on medium-low for 7 minutes.
  • Gently stir the potatoes and onions then add the cabbage, brats, and any juices released by the brats on top. Cover and cook for 20 minutes. After 20 minutes, gently stir the entire stew with a long wooden spoon or tongs to prevent any sticking on the bottom. Cover and allow to cook for another 10 - 15 minutes.
  • Check on the brats and cut in to serving size portions. Allow the stew to continue to cook uncovered with the brats submerged until cooked through.
