4 piquillo peppers or 1 roasted red bell pepper from jar
1 clove garlic
1/3 cup pitted Kalamata olives, rinsed
2 tablespoons capers, drained and rinsed
1 tablespoon tomato paste
1/2 teaspoon anchovy paste
1/8 teaspoon salt
1/4 cup extra-virgin olive oil
8 branzino fillets, skin on
1 teaspoon salt
1/4 cup olive oil

Steps:

  • For the puttanesca: To the bowl of a food processor, add the peppers, garlic, olives, capers, tomato paste, anchovy paste and salt. Process until smooth, scraping down the sides of the bowl with a rubber spatula as needed. With the motor running, add 1 tablespoon water and the olive oil in a steady stream until emulsified and smooth. Pour the sauce into an airtight container and store in the refrigerator until ready to serve.
  • For the branzino: Dry the branzino fillets well with paper towels. Score the skin of each fillet three times with a sharp knife. Sprinkle with the salt.
  • Heat 2 tablespoons of the olive oil in a large nonstick skillet over medium-high heat. Lay 4 fillets, skin-side down, in the pan; press gently to ensure full contact with the pan. Cook until the skin is golden brown and the flesh is opaque at the edges, 2 minutes. Flip the fillets and cook for an additional 10 seconds; remove to a plate. Wipe out the pan and repeat with the remaining oil and fish.
  • To serve, spread some sauce on each serving plate and shingle 2 fillets on top. Drizzle with a little more sauce if desired.

1 tablespoon cooking oil
1 tablespoon oyster sauce
1 tablespoon Japanese cooking sake

Steps:

  • How to Clean Branzino? Rinse the fish with cold running water. Pat dry with paper towels. Lay the fish on a cutting board. Using a pair of Chef's knife, scrape off the scales using an upward motion Make sure both sides of the Branzino fish is properly scaled and cleaned off. Do not miss the sides of the fish. How to Cut Whole Branzino to Branzino Filet? Position the Chef's knife horizontal. Start at the tail and slice into the flesh. Make sure you get as close to the bone as possible, to get the most filet out of the whole fish. Slice in an upward motion and cut off the filet off the body. Heat up a skillet on medium heat with 1 tablespoon cooking oil. Transfer the fish filet with skin side down. Pan grill and cook the fish until the skin turns crispy, about 1 minute. Turn over gently and cook the other side until the fish filet is cooked through and slightly browned and charred. Transfer the fish out gently and let cool on the plate. To smoke the fish, heat up a stovetop smoker with 1 tablespoon of wood chips, Place the fish let on on a sheet of aluminum foil and cover the lid. Turn on medium-low heat and smoke for 5 minutes. Remove the smoker from heat and let the fish smoke for another 5 minutes. Transfer the Branzino fish out and serve immediately with some micro greens and Japanese salmon roes (ikura).

1 large egg
1/3 cup plus 1 tablespoon extra-virgin olive oil
2 branzino or other white-fleshed fish fillets, with skin, about 12 ounces each
1/2 teaspoon fleur de sel
1/2 teaspoon pink peppercorns, crushed
1/2 teaspoon fresh thyme leaves
Zest of 1/2 lemon
2 cups arugula, plus a few sprigs for garnish
1/3 cup chervil
1/3 cup flat-leaf parsley leaves
1 1/2 tablespoons lemon juice
Salt and ground black pepper

Steps:

  • Heat oven to 400 degrees. Bring a small saucepan of water to a boil, add egg, cook 6 minutes, drain and set aside. Place a Silpat or sheet of parchment paper in a baking dish large enough to hold the fish. Brush Silpat or paper with 1/2 tablespoon oil. Brush fish on both sides with another 1/2 tablespoon of oil and place in dish, skin side down. Combine fleur de sel, pink peppercorns, thyme and lemon zest and scatter on fish.
  • Peel egg and coarsely chop. Into a blender, add egg, arugula, chervil, parsley, 3 tablespoons water, the lemon juice and the 1/3 cup olive oil. Process to a fine purée. Season to taste with salt and pepper. Set aside.
  • Put fish in the oven and bake 12 to 15 minutes, until just cooked through. Spread sauce on each of 4 warm dinner plates. Cut each fillet in four pieces and place two pieces on each plate, on the arugula sauce. Season fish with salt and pepper. Garnish with arugula and serve.

2 wedges fresh lemon

¼ cup chopped Italian flat-leaf parsley
2 lemon wedges

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Drizzle 1 tablespoon olive oil into a large baking pan; add onion and season with salt and pepper.

Tender roasted branzino (or Mediterranean sea bass) is ready in just over 20 minutes. For the perfect char, finish your fish under the broiler for a couple minutes or so. The garlicy, lemony ladolemono sauce is where all the flavor comes from. You will have plenty of sauce for more than one fish, so you can easily double the recipe if you are trying to serve more people.

Extra virgin olive oil,
1 pound whole branzino fish, (cleaned, head and tail attached (or whole striped bass, black sea bass, flounder, red snapper))
Kosher salt and black pepper
½ lemon, (sliced into rounds)
½ red onion, (sliced)
1 cup cherry tomatoes, (halved)
½ cup chopped fresh dill
1 Ladolemono recipe

Steps:

  • Adjust a rack in the center of your oven. Heat the oven to 400 degrees F.
  • Pat the fish. With a sharp knife, make two slits on both sides of the fish. Rub the fish with kosher salt and black pepper on both sides, inserting the seasoning through the slits and in the fish cavity.
  • Stuff the fish cavity with the sliced onion and lemon.
  • Roast in the center rack of your heated oven for 5 minutes on one side, then turn over and cook for another 5 to 7 minutes or until the fish is cooked and flakes easily. Turn the broiler on and place the fish about 6 inches from the heat source for 3 to 4 minutes or until the skin chars.
  • While the fish is cooking, prepare the Greek ladolemono sauce.
  • As soon as the fish is finished, remove it from the oven. Transfer the fish to a serving platter and drizzle immediately with as much of the ladolemono sauce as you like, making sure to add some of the sauce all over the cavity part as well. Toss the cherry tomatoes with a little salt and spoon them over the fish (you can drizzle a bit of the sauce again all the tomatoes). Finish with fresh dill. Serve immediately.
