THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
APPLE-ORANGE CRANBERRY SAUCE
Fragrant with warm spices, this cranberry sauce goes the extra mile with tart apples and blanched orange peels for a pleasant, citrusy burst of flavor.

- Slice away the bottom of the orange so it sits steady on the cutting board. Working from top to bottom, slice off the peel, leaving behind most of the white pith. Finely dice half of the peel strips; discard the rest or save for another use. In a small saucepan over high heat, combine the diced peel and the water. When the water comes to a boil, lower the heat and simmer for 10 minutes. Meanwhile, squeeze all the juice from the orange and set aside.Strain and set aside the blanched orange peel.
- In a medium saucepan, add diced apple, cranberries, orange juice, blanched orange peel, sugar, cinnamon, and cloves. Bring to a boil over high heat; then reduce the heat to low and partially cover the pan. Simmer gently, stirring occasionally, until the sauce thickens, the apple is tender, and the cranberries have burst, 10-15 minutes.
- Transfer the cranberry sauce to a heatproof bowl and let cool for 1 hour before serving.
APPLESAUCE BRANDIED RAISIN BREAD

- Preheat oven to 350 degrees F, then grease & flour one 9 inch loaf pan.
- Soak raisins in brandy 15 minutes.
- In large bowl, stir together flour, baking powder, salt, cinnamon & cloves, then set aside.
- In medium bowl, combine applesauce, eggs, brown sugar & oil, mixing well.
- Add raisins & nuts to applesauce mixture & mix well.
- Add fruit mixture to flour mixture & stir only until flour is moistened.
- Pour into greased pan & bake 50-55 minutes.
- Cool in pan 15 minutes before removing loaf of bread to cool completely on wire rack.
BRANDIED APPLESAUCE
This applesauce is made in the pressure cooker and jazzed up with brandy and spices. The spices will mellow out a bit as it cools. Keeps up to 10 days in the refrigerator.

- In a pressure cooker, combine all the ingredients and cook at high pressure for 2 minutes.

- Heat oven to 375 degrees. In a 12-by-14-inch roasting pan, or an 11-by-17-inch baking pan, combine the brandy, cinnamon, cloves, lemon juice and zest, brown sugar, and butter. Add all the apples, and toss.
- Roast until the apples are very soft and golden brown, about 30 minutes. Transfer apples to the bowl of a food processor; pulse until smooth. Stir in the salt, and serve warm.

- Combine sugar and water in a large saucepan. Bring to a boil; cook and stir until sugar is dissolved. Remove from the heat., Place apples in a large glass or plastic container; add the sugar mixture, brandy, cloves and cinnamon stick. Cover and let stand at room temperature for at least two weeks, stirring once a week., Strain brandy mixture; discard apples and spices. Pour into glass bottles. - Set the applesauce aside to cool, then cover and refrigerate until chilled. Taste the applesauce once more (the flavorings will mute a little as the sauce chills) and adjust if desired. This makes about 5 cups applesauce. The applesauce will keep up to 10 days, covered and refrigerated.
