BRAN CHOCOLATE CHIP COOKIES
Thin, Chewy, Chocolate Chip Cookies with Bran

Steps:
- Preheat oven to 350 degrees F.
- Weigh the flour and mix it with baking soda, salt and cinnamon. Set aside.
- Beat the softened butter and both sugars until creamy, then beat in the eggs, one at a time, beating just until blended. Beat in vanilla.
- Add flour mixture and stir until smooth, then stir in the bran. Once bran is fully incorporated, stir in the chocolate chips and nuts.
- Using a medium size cookie scoop, scoop out balls of dough and arrange them on a plate lined with plastic wrap. Cover and chill until ready to bake or bake immediately.
- Arrange dough balls on a parchment lined or ungreased baking sheet and bake for about 12 minutes or until cookies appear done. They will be big, flat, and brown. Let them cool on the baking sheet for about 5 minutes, then loosen from sheet and transfer to a wire rack to finish cooling.
RAISIN BRAN CHOCOLATE CHIP COOKIES
This recipe is from Post but I added mini chocolate chips and some white whole wheat flour. Tasty treats!

- Preheat oven to 350°F
- Mix sugar, oil, egg whites, water, cinnamon, salt, baking soda in a large bowl. Set aside.
- Add cereal and flour.; stir well until blended.
- Add chocolate chips and nuts, if using, mix well.
- Spray baking sheet with nonstick spray or use parchment paper or silicon mat.
- Drop by small cookie scoop onto baking sheet. 2" apart. Bake for 14 minutes or until lightly browned. NOTE: if using a different measure, adjust timing accordingly. I used a small cookie scoop.
- Remove from baking sheet and place on wire rack. Cool.

While dabbing in the kitchen one day, my husband, Dale, came up with these hearty cookies. I begged him to make them again, but he hadn't written down the recipe. Ten batches later, he finally recaptured the wonderful flavor.

- In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the remaining ingredients. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

BEST CHEWY CHOCOLATE CHIP BRAN COOKIES
This is my families favorite chocolate chip cookie ever! When they are cooled onto a brown paper bag, it makes them nice and chewy. The flavor is excellent. I like to use a good high quality chocolate, you could use chunked chocolate if you want too, or 1/3 cup fresh coconut.

- Preheat oven to 325°F and grease cookie pan.
- Sift together flour,oat flour, soda and salt; set aside.
- In a medium bowl, cream together butter and sugars until well blended.
- Beat in vanilla, egg and yolk until light and creamy.
- Mix in dry ingredients by hand until blended.
- Stir in chocolate.
- Drop dough onto prepared cookie sheets.
- Bake about 12 to 15 minutes until edges are lightly brown.
- Cool on baking sheets for 1 minute.
- Cool completely onto brown paper bag.
- About 36 to 40 cookies.

OATMEAL BRAN COCONUT CHOCOLATE CHIP COOKIES
This is a cookie our entire family of 7 loves. Every time I send these in my kid's lunches I have to send extra for their friends. I also feel that for a cookie it is almost good enough to eat for breakfast!!!! It was adapted from The Mason Jar Cookie cookbook. For a mason jar gift - mix the flour and baking soda and powder together really well and then layer dry ingredients into jars.

- Preheat the oven to 350°F.
- Place all of the dry ingredients in a medium-sized bowl, and stir until well combined. Set aside.
- Place the butter, egg and vanilla extract in a large bowl and cream with an electric mixer set on low speed or with a fork.
- Add the dry ingredients to the butter mixture and mix with a spoon or hands (for best results) until well combined. At this point add water if dough is dry.
- Drop the dough by heaping teaspoonfuls, or larger to suit your taste, onto an ungreased baking sheet, spacing the cookies about 2 inches apart to allow for spreading.
- Bake for 9 to 11 minutes, or until light brown in color. Allow to cool for 5 minutes on the baking sheet. Then transfer to wire racks and cool completely.
- Serve immediately, or store in airtight container for up to 2 weeks.

- Mix oat bran and water, let stand at room temperature for 30-45 minutes .
- (This timing is very important.) Cream margarine, sugar and sugar substitute together until light and fluffy.
- Add egg whites and vanilla and mix at medium speed for 30 seconds Scrape down the bowl Stir flour, cocoa, soda, dry buttermilk and salt together to blend well.
- Add to the creamed mixture along with the oat bran mixture and mix at medium speed to blend.
- Add chocolate chips to dough Drop by tablespoonful onto cookie sheets that have been sprayed with pan spray or lined with aluminum foil.
- Bake at 375° for 12 minutes.
- (The cookies will not be crisp if they are not baked the full length of time.) Remove from hot cookie sheets to wire racks to cool.
- Use 1 cookie per serving.
- This recipe is a good source of fiber.

HEARTY OATMEAL & BRAN CHOCOLATE CHIP COOKIES

- Cream butter, peanut butter and sugars until light and fluffy.
- Beat in eggs and vanilla.
- Combine flour, baking powder, baking soda and salt; blend into creamed mixture.
- Stir in chocolate chips, cereal, bran, rolled oats and peanuts.
- Preheat oven at 375 degrees.
- Form small balls unto greased baking sheets (for chewy cookies leave in a ball, for crispier cookies flatten a bit).
- Bake in oven for 8 to 10 minutes or until lightly browned.
- Cool on racks.

Steps:
- Preheat oven to 375 (325 for a convection oven).
- 1. Cream the butter, shortening and sugars.
- 2. Add eggs and vanilla and beat until well combined.
- 3. In a separate bowl, stir together flour, salt, baking soda,and baking powder, then add to the butter mixture and combine well.
- 4. Stir in raisin bran and chocolate chips.
- 5. Place spoonfuls on an ungreased cookie sheet, approximately 3" apart and bake until edges of cookies turn golden brown, approximately 10 minutes. Let cool a few minutes on the cookie sheet before removing.
