BUTTERMILK BRAN LOAF

Fibre, anyone? This is very easy and good, too. Sometimes I lose track of the point and replace the raisins with chocolate chips.

2 cups wheat bran
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup dark brown sugar
1 cup raisins
2 cups buttermilk

Steps:

  • Mix together all the dry ingredients.
  • Stir in the buttermilk and let stand in a warm place for 1/2 hour before scraping into an oiled loaf pan.
  • Preheat the oven to 350°F.
  • Bake for 30 to 40 minutes, until a toothpick comes out clean when inserted in the middle.

Number Of Ingredients 9

2 cups Raisin Bran cereal, Divided
1 1/4 cups nonfat milk
1/4 cup margarine, melted, divided
1 egg
3/4 cup sugar
2 cups flour
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1 tablespoon sugar

Steps:

  • Pre-heat oven to 350 deg F.
  • Mix 1 ½ cups of Raisin Brand, Milk, 2 tablespoons of the Margarine in bowl.
  • Add Egg and ¾ cup Sugar, mix well.
  • Stir in Flour, Baking Powder and Cinnamon.
  • Mix till well blended.
  • Put in sprayed 9X5 loaf pan.
  • Mix remaining ½ cup of cereal, 2 tablespoons Margarine and 1 Tablespoon Sugar.
  • When well blended sprinkle over batter and press into the batter.
  • Bake 50 minutes. Cool 10 minutes before removing from pan.

You won't even realize you're getting bran cereal in your diet when you sample this bread from Jean Daviau of San Jacinto, California. It is moist and slightly sweet from raisins.

Yield 1 loaf (1-1/2 pounds, 16 slices).

Number Of Ingredients 9

1 cup plus 1 tablespoon water (70° to 80°)
1/4 cup packed brown sugar
2 tablespoons butter, softened
1-1/2 cups raisin bran
1/2 teaspoon salt
1/4 teaspoon baking soda
2-1/4 cups bread flour
2-1/4 teaspoons active dry yeast
1/2 cup raisins

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add the raisins.

1 cup whole bran cereal
2 teaspoons active dry yeast

  • Place ingredients in order indicated by your manufacturer. Select the whole wheat or whole grain setting.

3/4 cup wheat bran
1 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1 cup buttermilk
3/4 cup brown sugar
1/3 cup melted butter
2 eggs
3 ripe bananas
2 tablespoons orange juice
1 tablespoon grated orange rind
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

Steps:

  • To make buttermilk if fresh is not available, combine 1 tbsp (15 ml) of white vinegar with milk.
  • Preheat oven to 350 °F (180 °C).
  • In a large bowl, stir together bran, both flours, baking powder, baking soda, salt and cinnamon; set aside.
  • In a medium bowl, beat together buttermilk, brown sugar, butter, eggs, bananas, orange juice and peel.
  • Fold into dry ingredients just until moistened.
  • Stir in raisins and walnuts and spoon batter into a buttered 9"x 5" (23 x 13 cm) loaf pan.
  • Bake for 55 to 60 minutes or until a toothpick inserted in the centre comes out clean.
  • For the adventurous:Add dried cranberries instead of raisins.

Number Of Ingredients 10

3/4 cup All-Bran
1/2 cup boiling water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup butter, softened
1/2 cup sugar
1-1/2 teaspoons salt
1 egg, beaten
3-1/2 to 3-3/4 cups all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a small bowl, combine bran and boiling water; set aside. In another bowl, dissolve yeast in warm water. In a large bowl, cream the butter, sugar and salt. Add egg and yeast mixture; mix well. Add bran mixture and 2 cups flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface. Divide dough in half; divide each half into 12 pieces. Shape each into a ball; place balls into a greased 13-in. x 9-in. baking pan. Brush with melted butter. Cover and let rise until doubled, about 1 hour. , Bake at 375° for 20-25 minutes or until golden brown. Remove from pan to wire racks.

BRAN CASSEROLE BREAD

Number Of Ingredients 11

1 cup water
3/4 cup milk
1/3 cup molasses
1/2 cup butter or margarine
3 tablespoons sugar
2 teaspoons salt
2 cups All-Bran® Original
2 packages dry yeast
1/2 cup warm water (105° to 115°F)
2 eggs
6 to 61/2 cups all-purpose flour

Steps:

  • 1. In medium saucepan, mix water, milk, molasses, margarine, sugar and salt. Heat until margarine melts, stirring frequently. Remove from heat and stir in KELLOGG'S ALL-BRAN cereal. Let stand until lukewarm. 2. In large bowl, sprinkle yeast over warm water. Let stand 5 minutes. Stir until yeast dissolves. Add cereal mixture and eggs. Beat well. Gradually add enough flour to make soft dough. Turn out onto floured surface and knead 10 minutes, until smooth. Place in clean, large mixing bowl coated with cooking spray. Coat surface with cooking spray. Cover and let rise in warm place 1 1/2 to 2 hours or until doubled in size. 3. Punch down dough. Shape into 2 round loaves and place in 2 round 1 1/2-quart casseroles dishes coated with cooking spray. With a sharp knife, cut an "x" into top of each loaf, cutting 1/2 inch deep. Cover and let rise in warm place 1 hour or until loaf is slightly higher than top of casseroles. 4. Bake in 375°F oven 45 minutes or until done. Remove and cool completely on wire rack.
